How To Make Mayonnaise Salmon

  • Toast the breadcrumbs in the oven for a few minutes until their golden brown.
  • While the breadcrumbs toast, mix together the mayonnaise topping.
  • Transfer the toasted breadcrumbs to a bowl and coat the baking sheet with nonstick spray.
  • Pat the salmon dry, then arrange skin side-down on the baking sheet. Season the salmon with kosher salt and black pepper.
  • Divide the mayo mixture between salmon filets and spread over top.
  • Bake until the salmon flakes easily with a fork and an instant-read thermometer inserted in the center registers 125ºF .
  • Fresh Dill Or Dried Dill

Although I prefer using fresh dill in this recipe, dried works as well. Because dried herbs have a much stronger concentration of flavour due to the water being removed during dehydration, you should always use less dried herbs than fresh in a recipe. As a general rule, use 3 times the amount of fresh herbs to dried, so for this recipe which calls for 1 1/2 tablespoons of fresh dill, only use 1/2 tablespoon of dried dill in its place.

Key Ingredients Baked Salmon Recipe With Mayonnaise

Below are some key ingredients for this recipe:

    • Salmon: Obviously you would want a good quality salmon always! For us, we really like Fresh Atlantic salmon from Trader Joes or the value pack from Costco. I remember my mom buying the salmon pack from Costco and it was enough to feed the whole family. Rarely do we get Alaskan Sockeye salmon. Its not a bad choice, but it seems to dry out faster. Does this happen to anyone else? Also, we cook the salmon with the skin on as it bakes. I personally love the salmon skin and eat it whole after baked!
    • Mayonnaise: You can use Light Mayo or the whole deal. For 1 pound of salmon is usually 3 tablespoons of mayonnaise. This is the base of what creates this creamy salmon recipe and is great in combination with the soy sauce and lemon juice. Honestly, I love this salmon recipe with the mayonnaise with white rice.
    • Soy sauce: Alright so usually Im not a stickler on what type of soy sauce to use, but for this recipe there is a brand we stick with! We love the Knorr Original Liquid Seasoning in combination with the salmon. This type of soy sauce seasons the fish perfectly and has the best flavor. You can use other brands of soy sauce you like, but for the best results this brand hits the spot!
    • Lemon juice:We all know lemon pairs well with fish and this dish is no exception! The juice of 1 lemon is needed. If you dont have fresh lemon on hand, usually 1 lemon can yield 3 tablespoons of store-bought lemon juice.

    Ingredients In Mayonnaise Salmon

    Baked Salmon with Mayonnaise
    • Whole wheat panko, an optional topping to add a bit of crunch.
    • Skin-on salmon filets are ideal here. The skin keeps the salmon moist while cooking! Look for filets that are 1 to 1-½ inches thick.
    • Mayonnaise, I prefer to use avocado oil or olive oil mayonnaise.
    • Lemon, use the zest in the mayonnaise topping then cut the zested lemon into wedges and serve with the finished meal.
    • Shallot, for a dose of onion/garlic flavor.
    • Fresh dill also pairs really well with salmon and adds a lovely herby flavor.

How To Make Oven Roasted Salmon

There are only a few simple steps to cook salmon in the oven. The timing may vary slightly depending on the thickness of your salmon pieces.

    • First, purchase good quality salmon. It can be frozen or fresh, but defrost your frozen salmon in the refrigerator before starting this recipe.
    • I buy 6-8 ounce salmon fillets.
    • Next, make the topping. It only entails whisking together the mustard and mayonnaise. This can easily be tweaked with more or less Dijon mustard depending on your preference.
    • Season the salmon with kosher salt and freshly ground pepper if desired. Note that this salmon recipe needs only a light sprinkling of salt or the results will be too salty.
    • Spread the topping over the top of each piece of salmon.
    • Preheat your oven to 400 or 425 degrees and roast the salmon for about 10 minutes. The rule of thumb is about 10 minutes per inch of thickness, but you may want it more or less well done, so adjust as needed.
    • Roast until the internal temperature is about 135 degrees to allow for 10 degrees of carryover cooking time. This will bring the salmons temperature up to 145 which is what the FDA recommends.
    • Pro-Tip: If your topping is not browned, you can broil the salmon. Watch very carefully as the topping can go from brown to burnt in a matter of seconds. This step is completely optional.

    Salmon Mayo Recipe Ingredients

This section explains how to choose the best ingredients for baking salmon with mayo, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.

    • Salmon fillets I used two pink salmon fillets that were one pound each, but you could also use one large fillet or several individual-sized fillets. Learn more about how to select salmon at the store in my pan seared salmon post. I also love wild-caught salmon from here .
    • Mayonnaise Use your favorite mayonnaise, or for the cleanest option, make homemade avocado oil mayo. For even more flavor, use garlic lemon aioli sauce instead of the mayo. Aioli is not the same as mayo, but often makes a good substitute in recipes like this one!
    • Grated parmesan cheese Be sure its grated, not shredded.
    • Fresh lemon Slice it thinly and top the salmon mayo recipe with it. It looks pretty and infuses lemon flavor into the topping!
    • Sea salt & black pepper

How Long To Bake Salmon At 450

Remember this rule of thumb: oven baked salmon at 450 degrees will take about 4-6 minutes per half-inch of thickness. Most fillets are about 1 inch thick, so it comes out to about 8-10 minutes.

Salmon is done when it flakes easily with a fork. If you have a larger fillet, you can also insert a fork or knife into the center and twist to see if it flakes there.

Preferences for salmon doneness can vary from medium rare to well done. If you want to be exact, use an instant read thermometer inserted into the thickest part of the fish.

The FDA recommends that baked salmon internal temp should reach 145 degrees F . But, many people also enjoy salmon a little rarer than that, so many baked salmon fillet recipes will cook it until it reaches 130-140 degrees F. I usually aim for 130 degrees.

A friend of mine introduced me to what inspired this baked salmon with mayo many years ago. Her process was super simple season salmon, slather with mayo, top with pieces of butter and lemon slices, and bake. While its not the traditional way to bake salmon, its a mayo lovers dream and is surprisingly delicious. Ive since experimented with her original version and settled on the perfect salmon mayo recipe: skip the butter, add parmesan on top, and IF you have time, swap the mayo with lemon garlic aioli for even more flavor. Just like my lemon baked cod fish and baked rainbow trout, this one comes together lightning fast!

Is Salmon Skin Good For You

We know that those omega 3 fatty acids that are soooo good for us swimming around in the salmon flesh but what about the skin of the salmon?

Well, the healthy omega 3 fats are actually in the skin too. The skin on salmon is generally safe to eat and provides the omega 3 fats, B vitamins and selenium – the same nutrition that the salmon flesh provides.

The only time you would consider skipping the skin is when the salmon is farmed. Farmed salmon typically has higher than safe levels of pollutants stored in the skin. Avoid buying farmed salmon if you can. If you can’t, don’t eat the skin.

Otherwise, the skin on wild salmon is not only fine to eat, it’s packed with nutrition so dig in!

Should Salmon Be Baked In Oven Covered Or Not Covered

Whether or not you need to cover the salmon or not when you bake it in the oven depends on a few things.

For example, in this recipe, you’re helping to lock in moisture by spreading the mayonnaise on top.

And you’re also broiling the salmon first before baking it in the oven which cuts the baking time significantly.

Broiling first helps to start the cooking process with the high, hot heat so you don’t have to bake as long in the oven.

If you’re working with smaller filets, I recommend covering salmon when you bake it if you don’t broil it first.

Wrapping salmon in foil or parchment paper known as salmon “cooked en papillote“, seals in moisture, acts as an easy clean up and you can even add veggies into the little package.

How To Keep The Salmon Moist

    • Score the salmon:This is another trick to keep the salmon moist! This process is very similar to our Stuffed Chicken Bake Recipe where we add the vent holes on top to release steam. Make sure you dont skip this step! The slits just need to be deep enough without cutting into the skin for the soy sauce and lemon juice to get in there!
    • Baste the salmon while the oven preheats: Youre probably thinking what the heck does that mean? Trust me, this is another trick for us to get an easy creamy salmon out of the oven. So, while the oven is preheating, in a small bowl have the salmon sit in the seasoning juice. Depending on how long it takes for your oven to reach 400 degrees, it may take at least 10 minutes? During that time, is where we baste the salmon every couple minutes. All you need to do is spoon the seasoning juice over the salmon while it rests in the bowl. So simple! At this step of the process, the salmon will already be scored so each time we baste the salmon in the seasoning juice it just further sits in the slits before the salmon bakes.
