Freezing Guidelines: Fresh pies can be fr0zen and heated later according to the above directions. Wrap and seal box in plastic wrap before freezing for best results.

The Elegant Farmer

Use a plain kraft paper bag thats free of inks or dyes. As we researched this method, we learned that paper bags printed with ink run the risk of releasing unpleasant odours and/or toxins when exposed to high heat.

You can also create your own bag out of several large pieces of parchment paper. Just be sure to secure your pieces together with plenty of folds and staples. The purpose of the bag is to lock in all that precious steam!

This was my first time coming for Apple Picking with my family and really enjoyed our time here at the Elegant Farmer. I looked at several apple picking farms but this place came recommended from a friend who has been here before and told me how much she loved it.We bought tickets for the hayrides which us took to the apple orchards and then the corn maze after. They were $6 per person for each. If you come with a big group then this adds up – just something to keep in mind. I also liked that they had the option of half peck, full peck etc. and we could take one per family instead of some other places where it looked like each person had to buy one bag which could be a lot for one family if you are not planning to use up all the apples soon. After we did our apple picking we went to the corn maze which was so interesting. It was not easy but so fun. They do give you a map but i dont think the map helped me at all.. we had to kind of use our intuition and follow some other folks who were also busy trying to discover their path.After our experience there we went across the street to pick up some goodies from their store. It was super crowded but they had an excellent collection of everything and anything. I picked up their famous applepiebakedin a bag and it was super yummy. What a treat for the entire family!

    This is a pie made in Southern, Wis., by a company called the Elegant Farmer. Its owned by Dan and Karen, and she found the recipe in Texas. Theyve been making them for about 20 years, selling them at their general store and bakery near their farm where they have pick-your-own-apples and pumpkins. They also sell all over the country, including Texas, so the pie has gone full circle. The apples they use in their pies come from Michigan and the crust is not your typical pie dough its sort of cookie-like but has lard in it . The brown paper bag helps cook the apples long enough without over baking and over browning the crust, plus they stay juicy. Once the apples are cooked, a circle is cut out of the bag on top to let the crust brown for a few minutes and get crisp. Its then sold right in the grease stained brown paper bag!

    Using this brown bag method really does make this the best apple pie youve ever tried. Below are a few reasons why:

    • It helps seal in all the yummy juices and flavors.
    • The filling gets caramelized and tender, while the crumble toppings gets golden.
    • The pie crust doesnt over bake and has the perfect crispy and flaky texture.

    Deep Dish Or Standard Shallow Pie Plate

    When I first published this recipe on the blog in 2014, I baked it in a traditional shallow pie plate. In the video and newer photos, I used a deep dish pie plate.

    In either a deep dish or standard pie plate, the baking time stays the same. The paper bag technique is designed to cook the apples perfectly by steaming them in the bag.

    The crust is shielded from any direct heat of the oven until the inside is nearly completely cooked. The final 10 minutes of baking time is just to fully brown the crust.

    If you decide to bake this apple pie in the sort of standard shallow pie pan you see above, you wont use all of the sliced apples. Just cook the remaining apples down on the stovetop in a small heavy-bottom saucepan until tender.

    As the filling mixture has sat in the bowl, some of the moisture has been drawn out of the apples. They shouldnt need any additional liquid to be cooked separately. If youre concerned about the apples burning, just add a splash of water to the pan.

    How To Make Apple Pie In A Bag

  • CRUST. Make the dough for the pie crust , then press the dough into the bottom and sides of a 9 pie pan. Do not roll it out.
  • FILLING. To make the apple pie filling, mix together the sugar, flour, nutmeg and cinnamon. You can use regular sugar or brown sugar. I like to do 1/2 and 1/2. Gently toss the mixture with the sliced apples, then let them sit for about 10 minutes. Then pour the filling into the unbaked pie shell.
  • CRUMBLE. Add flour, butter and sugar to a bowl and use your fingers to mix together until crumbly. Then sprinkle the mixture on top of the apple filling.
  • BAKE. Place the pie in a brown paper bag and staple it shut. Then bake the pie in the oven at 350°F for about 1 1/2 hours. Remove from oven and slit the bag open with a knife. Then transfer to a cooling rack.

One of the most memorable uses of this visual metaphor was during the 1980 football season when fans of the New Orleans Saints showed their displeasure with their teams performance by showing up at games with paper bags over their heads and rechristening the team the Aints.

    When I first got wind of the tradition of baking an apple pie in a brown paper bag, I thought it must be a joke. Its not. Apparently, the Amish have been baking fruit pies in brown paper bags long enough for the technique to appear in a cookbook titled The ABCs of Paper Bag Cookery.

    According to Taste of Home, the recipe was made famous by The Elegant Farmer, a farm kitchen in Mukwonago, Wisconsin, which has been serving up holiday gift baskets since 1946.

    From a culinary standpoint, baking a pie in a paper bag uses the same principle as the centuries-old technique the French call en papillote and the Italians call al cartoccio. The food inside the paper is steamed to perfection. But wouldnt baking a pie this way lead to a mushy crust?     Apples are ready for picking, which means it is time to start making my favorite pie ⦠Paper Bag Apple Pie!

    I love to cook, but baking is not one of my fortes. So, when I discovered this paper bag apple pie recipe years ago, it became one of my few baking specialties.

    I hope your family will love my paper bag apple pie recipe as much as mine does! Turn it into a fun family tradition by visiting an orchard to pick apples and then coming home to bake this incredibly easy and delicious pie.

    I have been making this recipe for paper bag apple pie for more than 30 years now and it turns out perfect every time no baking skills required!

    Why a paper bag? It keeps the apple pie filling soft and juicy and the top crunchy. It truly is no fail!

    I Tried The Brown Bag Trick For Better Apple Pie

    Maybe its happened to you, too: You pull your pie from the oven and its perfectly golden, but the fruit juices are still vigorously bubbling, indicating you need to bake it longer. So you pop it back in. When you return, the juices are still not reduced enough but the sugars on the crust are getting too dark. You scramble to cover the spots with foil, hoping it will buy you more time. But no matter how much you try, you still cant get that fruit juice reduced enough, and now your crust is borderline burnt.

    As a self-taught pie maker, its been quite a journey learning all the techniques for making perfect fruit pies. Nailing the two most important qualities a perfectly golden crust and a filling that doesnt spill out when you slice it is truly a balancing act, because you have to bake the pie long enough to give the fruit and its juices time to reduce, but not so long that the crust burns. Its especially tricky for anyone who likes to sprinkle raw sugar on the crust, because those sugars can caramelize quickly and unevenly, creating dark spots.
