    This is yummy inside of a flour tortilla and has all my favorites–beans, sausage, rice, and corn. The only ingredient I didn’t have on hand that I won’t leave out next time is the toasted pumpkin seeds . I used chicken stock and threw my lime juice in at the beginning because I love the lime flavor. I also threw in the fresh cilantro toward the end of cooking time instead of to garnish. I added some cayenne pepper because I prefer more heat. Nice and hearty…and super simple.

    16 ounces Jimmy Dean sausage
    1/2 cup chopped onion
    1 cup uncooked long grain rice
    10 ounces frozen whole kernel corn, thawed
    1/2 teaspoon ground cumin
    10 ounces diced tomatoes and green chilies, with liquid
    1 1/2 cups water or 1 1/2 cups chicken stock
    1/4 teaspoon salt
    15 ounces cooked black beans, drained and rinsed
    4 thinly sliced green onions
    1/2 cup pumpkin seeds, toasted
    sour cream

    1 lime, cut in eighths

    • Cover and reduce heat to low and simmer 25 minutes without stirring.
    • Gently stir in black beans.

    1 can canned chopped green chile peppers
    1 small Vidalia onion, peeled and chopped

  • In a large bowl, mix the ground pork with all the seasonings.
  • Cover the bowl with plastic and set aside for about 15 or more to let the flavors incorporate with meat.

  • In a skillet, heat about 2 tablespoons of vegetable oil.

    Prep the Sausage. Brown 1/2 lb of sausage, breaking it up into crumbles to mix into the beans. Then slice 1 lb sausage into at least 10 patties for your topping. Using the same skillet as before, very lightly brown the sausage patties without cooking them all the way through. This will make sure they brown with a bit of crisp edges when baking later but also leave them room to continue baking with the beans, releasing all their good juices and flavor into the beans and sauce.

    Make the Sauce. In a large measuring cup, whisk together brown sugar, ketchup, spicy brown mustard, Worcestershire sauce and minced garlic to make the rich homemade sauce for the beans.

    Put it together. In a large bowl, mix together pork and beans , sausage crumbles, diced yellow onion and diced green bell pepper. Stir in your sauce making sure everything is well mixed.

    Pour bean and sauce mixture into a 3 qt. casserole dish. Top with sausage patties and gently press the patties down into the beans.

    Preheat oven to 350 degrees.Cut the linguica into bite-sized pieces. Brown linguica in a large skillet. Drain linguica on paper towels.

    I love to make these Easy Sausage Baked Beans. They are so quick and easy. They are perfect for weeknight meals, and delicious enough to serve to guests. They are great on the stove, or make a larger batch and put in the oven for real baked beans. When the Jimmy Dean sausage goes on sale, you can do half it into 1/2 lb. Portions and freeze.
