I’m the first to admit I might be a little biased, but when my only-eating-preservative-packed-food kid asks if he can eat the beans I just made for this post, because he loves them so, I know this baked beans recipe must be good. Or at least teen approved. These are my go-to side dish baked beans. Any time we are invited to a pot luck BBQ, this is what I bring. They are yummy and easy to make and left overs are gone in a day. This is yummy inside of a flour tortilla and has all my favorites–beans, sausage, rice, and corn. The only ingredient I didn’t have on hand that I won’t leave out next time is the toasted pumpkin seeds . I used chicken stock and threw my lime juice in at the beginning because I love the lime flavor. I also threw in the fresh cilantro toward the end of cooking time instead of to garnish. I added some cayenne pepper because I prefer more heat. Nice and hearty…and super simple.

16 ounces Jimmy Dean sausage |
1/2 cup chopped onion |
1 cup uncooked long grain rice |
10 ounces frozen whole kernel corn, thawed |
1/2 teaspoon ground cumin |
10 ounces diced tomatoes and green chilies, with liquid |
1 1/2 cups water or 1 1/2 cups chicken stock |
1/4 teaspoon salt |
15 ounces cooked black beans, drained and rinsed |

- In a 3 or 4 quart saucepan, cook sausage and onion over medium-high heat, stirring frequently until meat is thoroughly cooked and no longer pink.
- Add rice, corn, cumin, chili powder, tomatoes and green chilies, water or stock, and salt. Stir once to mix.
- Bring to a boil.
- Cover and reduce heat to low and simmer 25 minutes without stirring.
- Gently stir in black beans.
- Add green onions and garnish with pumpkin seeds, sour cream, shredded cheddar cheese, cilantro, and lime.

- 1. Cook sausage, onions, and bell pepper together in a large skillet.

How To Make The Best Baked Beans & Sausage
Prep the Sausage. Brown 1/2 lb of sausage, breaking it up into crumbles to mix into the beans. Then slice 1 lb sausage into at least 10 patties for your topping. Using the same skillet as before, very lightly brown the sausage patties without cooking them all the way through. This will make sure they brown with a bit of crisp edges when baking later but also leave them room to continue baking with the beans, releasing all their good juices and flavor into the beans and sauce.
Make the Sauce. In a large measuring cup, whisk together brown sugar, ketchup, spicy brown mustard, Worcestershire sauce and minced garlic to make the rich homemade sauce for the beans.
Put it together. In a large bowl, mix together pork and beans , sausage crumbles, diced yellow onion and diced green bell pepper. Stir in your sauce making sure everything is well mixed.
Pour bean and sauce mixture into a 3 qt. casserole dish. Top with sausage patties and gently press the patties down into the beans.
Bake. Bake uncovered in preheated oven for 35-45 minutes.

How To Make Portuguese Baked Beans With Linguica
Preheat oven to 350 degrees.Cut the linguica into bite-sized pieces. Brown linguica in a large skillet. Drain linguica on paper towels.
Wipeout linguica fat. In the same skillet, add sausage and brown.
Add chopped onions and bell pepper. Saute until the onions are translucent or about five minutes.
Add minced garlic and spices. Saute for 2-3 minutes.
Add tomatoes, canned beans with juices, mustard, Worcestershire sauce, and BBQ sauce.
Bring to a simmer and cook for five minutestaste for seasonings. Sometimes I add a little garlic powder and a little more BBQ sauce.
Spray a deep baking dish with non-stick spray. Pour bean mixture into the baking dish, be careful because the mixture will be HOT!Cover baking dish with foil and bake covered in the hot oven for ONE HOUR.
For thicker beans remove cover the last 15 minutes of cooking.
