To get the breading to stick well, we use a quick egg wash and a double dredging.

  • Dab the meat with a paper towel to remove any excess moisture.
  • Make egg wash by blending together milk and eggs. On a large, rimmed plate or shallow and wide bowl, mix the Parmesan cheese, breadcrumbs, salt and pepper.
  • Dredge meat into bread crumb mixture, then egg wash and again in bread crumb mixture.
  • Pre-heat oven to 350 F. Allow the meat to rest while the oven is heating. Breading sticks better when it has 15-30 minutes to rest before baking.
  • Readers Tip: Trim off any excess fat around the outside. While this fat is delicious and crispy when sautéed, it is unnecessary on oven fried pork chops. The fat wont become crispy or brown like in other recipes.

    How To Reheat Pork Chops

    There are a few different ways to reheat leftover pork chops, but our favorite is in the oven. Preheat your oven to 350 degrees and lay the pork chops on a baking sheet. Cook for about 15-20 minutes or until theyre heated through. You could also use the microwave just place them on a microwave-safe plate and cook for a minute or two, depending on how thick they are.

    Preheat oven to 400° convection or 425° conventional.

    Trim pork chop of the fat rim. Pat dry with a paper towel.

    Prepare two trays. First, with one egg whipped with a teaspoon of water. Second, with ¼ cup of Italian Panko Bread Crumbs, ¼ cup flour, 1 ½ teaspoon seasoning salt , and ¼ teaspoon black pepper.

    Dredge a pork chop in the egg mixture. Be sure to cover all surfaces. Remove with a fork and allow to drain for a moment.

    Dip the egg-coated chop into the flour mixture. Coat all sides, remove with a fork and shake to remove extra flour.

    Set the chop on a plate or chopping board. Repeat for the next chop. We want to coat to set up for a few minutes.

    Over medium-high heat, add 2 tablespoons of oil to an oven-safe, non-stick skilletcast iron preferred. When hot and the oil is shimmering, move the chops to the pan with a fork.

    Brown each side of the chop for 2-3 minutes until almost the final color you want. Use a fork to flip by poking the meat edge and not anything to grab the meat and pull off the coating.

    Check the internal temperature, do one last flip of the pork, and place in the preheated oven until the internal temperature you want. About 10 minutes for 145°, but this will vary a lot in time, so you must use a meat thermometer and get the final temperature you want. You can always cook more but can not uncook meat.

    Allow to rest on a plate for 5 minutes before cutting.

    I recommend using boneless, center cut pork chops that are about ¾-inch thick and about 5 ounces each. While any size and type of pork chop will work for breading, I find that this particular cut cooks through in just the right amount of time. The breading has a chance to turn crisp and golden brown, but it doesn’t burn before the pork is done.

I use a similar marinade for my easy baked chicken parmesan.

    After the pork has marinated, remove it from the marinade and let the excess drip off. You dont have to wipe it off. The buttermilk that remains on the pork chops will help the breading stick.

    Mix the breading ingredients together: panko, Parmesan cheese, chopped parsley, mustard powder, salt and pepper. Use a shallow bowl so you have room to dredge the pork chops in it.     What Pork Chops To Choose

    I suggest a ¾ to 1-inch boneless center-cut chop. But any real pork chop will do, which are any of the center three in the diagram.

    With a breaded chop, you don’t want to hide a chunk of fat under the breading somebody might try to eat, so trim off that fat rim.

    The bone can lead to the breading falling off some since the meat contracts during cooking. Then the coating is more likely to come off a bit.

    Thickness is important. Thin will cook rapidly and may not even need the oven part of this recipe. Thick pork chops will be the same amount of time on the stovetop but may take up to 20-25 minutes in the oven.
