Baked mac and cheese. Its nearly the universal comfort food, and there are SO many variations! In fact, I almost didnt post this recipe, as there are SOOOO many mac and cheese recipes available, and most people already have their favorite way of making it.

Of course, theres no right way or wrong way, so Im here sharing the way I like to make my mac and cheese .

Perfect Mac And Cheese In 5 Steps:

  • Preheat the oven. Preheat to 325 degrees and lightly grease a square baking dish.
  • Cook the macaroni. Slightly undercook your noodles . Drain and set aside.
  • Make the roux. Melt the butter in a medium saucepan over medium heat. Blend in the flour, salt, and pepper. Cook for 2 minutes.
  • Add milk and cheese. Stir in milk and half and half, slowly, stirring constantly. Remove from heat. Add 1 cup shredded cheese to the sauce and stir just until melted. Add the cooked macaroni noodles and toss to coat them in the sauce.
  • Pourinto baking dish. Pour half or the pasta mixture into the prepared baking dish. Sprinkle ½ cup cheese over the top. Pour remaining pasta over it and sprinkle with remaining cheese.

    There are so many variations of this ultimate comfort food! This mac and cheese is oh so creamy and cheesy, made with a blend of buttery brie and sharp cheddar. It is topped with toasted brioche breadcrumbs and baked until bubbly and golden.

    Growing up, my mom alternated Kraft mac and cheese and Velveeta. That is when I discovered the oneperfect mac and cheese does not exist. There are so many different combinations of cheese that can be added, and it can even be cooked in various ways.

    That is why I decided to experiment with adding brie into mac and cheese. Brie is one of my all-time favorite cheeses. It is so luscious in texture and buttery in flavor. When melted, it becomes so runny and creamy, making it the perfect addition to mac and cheese!

    Sharp cheese is an obvious choice for mac and cheese. It holds a strong zingy cheese flavor that is just irresistible. The fresh brioche breadcrumbs on top are slightly sweet and have a toasted flavor. They add so much texture! I love a bite of mac and cheese with crisp breadcrumbs on top.

    Whether it’s a barbecue, dinner party, or a potluck, this brie cheddar baked mac and cheese is sure to be a hit!

    How To Make It

    Per usual, you can find the full list of ingredients and detailed instructions in the recipe card below, but to give you an idea of how its made

  • Get the oven ready! 375 degrees F.
  • Cook the pasta al dente: The pasta will finish cooking in the oven, so make sure its cooked al dente. Al dente means that theres still a slight firm bite.
  • Make the sauce: Make a roux with the flour and butter first, then add the milk and cook until thickened. After its thickened, add the cheese and stir until evenly melted.
  • Add the cooked pasta and season with salt, pepper, and garlic powder.
  • Make the herbed bread crumb topping: Youll need a food processor if using sandwich bread. If you dont have one, just use panko bread crumbs.
  • Assemble and bake! Pour the cheese and pasta over a 9 x 13 baking dish. Top with the bread crumbs. Bake for 25-30 minutes.

    Combine the following and sprinkle over your casserole before baking.

    • 3/4 cup bread crumbs
    • 3 tablespoons melted butter
    • 1 cup sharp cheddar cheese
    • 1 tablespoon parsley

    This recipe makes an extra saucy creamy macaroni. Do not over-bake this recipe. You want it creamy and rich, over-baking will cause it to dry out. I find that 20 minutes is perfect in my oven, the cheese sauce will thicken slightly while standing.

    Butter Substitutes For Mac And Cheese

    Traditional mac and cheese is made with butter, but if youve run out or prefer a vegan-friendly option, there are loads of substitutes that will do the job.

    • Ghee- it is still butter, only clarified by removing all the solids of butter, so youre left with rich ghee that has a subtle nutty flavor. Its not always 100% safe for lactose intolerant people, so beware.
    • Oil if youre using the oil in your cheese sauce, beware that you might have to practice to get it just right, but is an option as a butter substitute.
    • Cream cheese a great rich replacement for butter or roux, but you should add a bit of milk, cream, or oil to avoid a sticky sauce that might be difficult to mix into your pasta.

    Storing Crock Pot Mac And Cheese

    The leftovers from this mac and cheese recipe need to be refrigerated. Let the leftovers cool completely, cover, then refrigerate for up to 3 days.     Be sure not to overcook the pasta. It should cook to al dente . The pasta will finish cooking in the oven. Overdone pasta will turn mushy when it absorbs the cheese sauce, so don’t over-boil the noodles.

    In order to avoid gritty macaroni and cheese, you’ll want to make sure you are adding cold milk to your hot roux . Also equally as important, make sure you are continuously whisking the béchamel sauce throughout the whole cooking process.

    Keep a careful eye on the milk to ensure it doesn’t start to boil. Milk boils really quickly compared to other liquids. To avoid a burnt, overcooked flavor, keep an eye on the milk the whole time.

    Remember to remove the saucepan from the heat before adding cheese. We want the cheese to melt nice and slow.

    How To Avoid Grainy Cheese Sauce:

    • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
    • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
    • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
    • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
    • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

    Sometimes a reader or two has had an issue with how much pasta this recipe needs. This recipe is written by volume and sometimes people think that since a cup is 8 ounces that they can simply use 12-16 ounces of pasta or go by the weight of the dry pasta written on the box.

    Youll end up with problems if you do this. Please follow the volume instructions and measure your pasta dry in a measuring cup meant for dry items . Small pastas like ditalini or little wagon wheels can go up to about 2 cups and be fine in the recipe, and large ones like bow tie or cellentani can as well. If you will stick to elbow pasta until you get the hang of things youll be better off.
