How To Store + Reheat

Refrigerate this Mayo Parmesan Chicken for up to 4 days. Any longer just store them in the freezer. Individually wrap chicken breasts in waxed paper or parchment. Place into freezer bags. Remove as much air as possible from bags seal, label and freeze for up to 4 months.

To reheat: Allow the chicken to thaw in the fridge for at least 8 hours, The chicken doesnt need to be completely thawed, but must not be frozen solid.

Ingredients:

Cut the chicken breasts into strips and place in a greased 9×13 pan. Whisk together the mayonnaise, parmesan, salt, pepper, garlic, and pepper flakes in a small bowl. Spread over the chicken.

Stir together the Italian bread crumbs and the Panko bread crumbs. Sprinkle evenly over chicken.

Bake at 375° for 25-35 minutes till topping is browned and chicken is cooked through. I use a meat thermometer and cook to 165°.

While the panko did have a nice crunch, my family preferred good old Italian seasoned bread crumbs more. The coating mixes in better with the grated cheese, and covers the chicken uniformly for an extra crisp crunch.

Skip the canned cheese and use freshly grated Parmesan. Freshly grated Parm is the only way to go no matter what youre cooking. I use the grated Parmesan from the deli department. If grating your own, be sure its extra fine so it melds in with the bread crumbs, making the exterior crisp and not soggy.

Add paprika for color. Paprika doesnt add much flavor, but it does add a warm sheen to the crust as it bakes.

Unfortunately, this is not a recipe that works well as a freezer meal. The mayo in the sauce reacts in funny ways as it freezes. It creates an unpleasant grainy texture once it thaws and goes in the oven. Instead of freezing the chicken bake, assemble it a few days ahead of time, cover it tightly with foil, and keep it in the fridge until ready to serve. It can safely stay prepped in the refrigerator for 3-4 days before baking.

Mouthwatering Breaded Mayonnaise Chicken

Prep. Preheat your oven to 425F and line a baking sheet with parchment paper.

Pound the chicken. To help the chicken cook more evenly, cover the raw chicken with plastic wrap and use a meat mallet or even the bottom of a small saucepan to pound the thicker part of the chicken breast until its close to the size of the thinner part.

Season the breadcrumbs. In a wide, shallow bowl, mix the breadcrumbs, garlic powder, salt and pepper. Use a fork or a whisk to stir until everything is evenly distributed.

Bread the chicken. Using a spoon, or even clean hands, spread the mayonnaise all over the chicken breast. Then dip the chicken into the breadcrumb mixture, turning until its completely coated. Then, transfer the chicken to your prepared baking sheet and repeat with the remaining chicken breasts.

Bake the chicken. When all the chicken is coated, put the baking sheet into the oven for about 20 minutes. About halfway through cooking, turn the chicken to allow the breadcrumbs to crisp up evenly.

Continue to bake until the chicken has reached an internal temperature of 165F. Then, remove the chicken and allow it to rest for about 5 10 minutes before serving.
