Yes. I am using skinless, boneless chicken thighs. I love the flavor and how moist and tender they stay and, while they are higher in fat, which means higher in points, it is worth it. However, you can use other cuts of chicken. I also love making this recipe using chicken breast. This recipe can also be made with skin-on, bone in, chicken thighs. If you want the best crispy chicken skin, be sure to brown the skin in a pan or cast iron skillet, but you will also want to bake the chicken in the oven.

You can even use chicken tenders for this recipe.

Remember, different cuts of meat will have a different cook time. No matter what cut you use, it needs to be cooked to 165 degrees.

My Tips For This Recipe:

  • Line your baking dish with aluminum foil for easier and faster clean up after dinner.
  • If the skin of the chicken isnt crisp enough turn on the broiler for a minute or two. Watch closely things can burn really fast under a broiler.
  • If you are using boneless skinless thighs reduce your cooking time by ten minutes or until a meat thermometer reads 165 degrees inserted into the thickest part of the chicken.
  • Want to give your chicken a little spice add a 1/4 teaspoon of cayenne pepper powder to the seasoning mix

How To Make Crispy Lemon Pepper Chicken Thighs

  • Trim any excess skin off of chicken thighs using kitchen shears. Discard the excess skin.
  • Pat chicken thighs completely dry with a paper towel.
  • Make your homemade lemon pepper seasoning by mixing 2 teaspoons each of salt, pepper, and lemon zest.
  • Generously coat both sides of the chicken thighs with the lemon pepper seasoning.
  • In a skillet, add olive oil to the bottom of the pan and heat over medium high until hot, but not smoking.
  • Place the skin side of the chicken thigh down first. If you hear it sizzling, its the correct temperature. Sear that side for 3 minutes. Youll know that side is ready to flip once you notice that its easy to pull off the heat of the pan. If its sticking, give it a little more time.
  • Once you flip the chicken to the side without the skin on it, cover your skillet.
  • Continue cooking chicken, covered, for about 10 minutes. Use a meat thermometer to check the internal temperature by sticking the probe of the thermometer into the meat, close to the bone. When the thermometer reads 165, your chicken is cooked. Remove from the skillet and serve hot with your favorite side dish.
  • Then, serve it with your favorite sides, like Homemade Broccoli Macaroni and Cheese.

    NOTE: With bone in chicken thighs, you can err on the side of overdone if youd like and cook it to 170-175 without drying out the meat. Bone in thighs regularly have some redness right by the bone, but the rest of the meat is perfectly cooked.

The reason for this that the flavor that comes from the bone will spread out into the meat during the cooking process. This leaves you with a deeper flavor.

    A skin on cut of chicken will help the chicken retain moisture preventing the chicken from becoming dry in the oven. No one wants dry chicken. If you dont want to eat the skin then simply remove it after cooking.

    I used 2.5 lbs of chicken which was eight thighs. It does depend on what is available at the store. The pack of six thighs will weigh a little less but it wont be a big difference so there is no reason to alter the recipe.
