Rice Stuffed Zucchini Casserole

When the heat of summer hits, and gardeners have more zucchini than they know what to do with, we are often looking for zucchini recipes to use up a lot of zucchini. Zucchini casserole is a great option for that. Savory ground beef flavored with allspice, a jar of your favorite marinara, and zucchini halves cooked until tender, this rice stuffed zucchini casserole is gluten-free, filling, and a great easy dinner option.

Whether you are a gardener hauling in loads of zucchini around harvest time, or you are buying them from the store, in July-August zucchini are plentiful and low in price. This makes them a great vegetable to use in as many recipes as possible. Zucchini are also highly nutritious. They are low in fat, sugar, and calories and high in folate and fiber.

These baked zucchini boats were originally inspired by one of my all-time favorite dishes that my in-laws make– zucchini and rice. This is a casserole that’s made in a big pot with loads of sliced zucchini and onions, rice, canned tomatoes, and sometimes chicken. I hope to share that recipe soon. I made these zucchini boats stuffed full of ground beef and rice and flavorful spices like garlic powder and allspice. Allspice is often seen in baked goods but it pairs really well with ground beef!

How Do You Make Stuffed Zucchini In The Oven

Stuffed Zucchini boats are easy to make, especially in an oven.

One of things I love most about making stuffed zucchini in the oven is it is a pretty hands free dinner option. Sure, you have to cook up your meat and add your seasonings, sauces and cheese.

And yes you have to fill the boats, but after you spoon the filling into your zucchini boats, and place them on a cookie sheet, you just put them in the oven to bake.

First, pre-heat your oven to 375 degrees F. Next, place your boats, with all the ingredients fully prepared in the oven and bake for 15-20 minutes.

While they bake you can whip up a green salad. Or read a book. Or check Facebook. I mean really, you can do whatever.

Storing Stuffed Zucchini Boats

  • Refrigerator: Store leftover stuffed zucchini boats in an airtight container in the refrigerator. They will keep for up to 5 days.
  • Freezer: Not recommended. Zucchini holds a lot of moisture and doesnt thaw very well, resulting in soggy boats.

Reheating Tip: Reheat the zucchini by placing it in the oven or air fryer until the cheese bubbles and the beef mixture is warmed through. Microwaving is not recommended.

Make Italian Beef Filling:

Preheat a cooking pan with olive oil and then add diced onion, carrot, and bell pepper. Saute the vegetables until softened and move them to the sides. Add ground beef to the center and break it up as much as you can. Season the beef and cover the pan with the lid to let it cook. Stir and break down the beef as it cooks.

Once beef is cooked through, pour in marinara sauce. Mix beef and marinara together and then, mix in grated Parmesan cheese.

Baked stuffed zucchini is a healthy low-carb meal using low-carb vegetable zucchini shells as a taco shell.

They are also known as zucchini boats or zucchini tacos.

In a stuffed zucchini recipe, the zucchinis are cut lengthwise, cored, and filled with cooked meat like ground sausage, ground beef, ground turkey, or vegetarian filling.

    Stuffed Zucchini With Ground Beef And Rice

    Lets keep it short and sweet today, since youre really just here for the meaty, cheesy goodness that is this stuffed zucchini.

    Faced with only minuscule opportunities to cook over the past few weeks, my dinners consisted of Seamless, my moms frozen dinners,* and quick slices of pizza in between apartment viewings. The rare nights I got home before 9:30, I whipped up 20-minutes-or-less meals: fish tacos, corn salad, etc. I even had a bar for dinner you know thats rock bottom.

    But in between, I found a recipe for stuffed zucchini that approached must make this now territory. The best part: I could make the recipe ahead of time, cooking various components when I had time, and assembling and eating it all when I found a respite from the madness.

    So I cooked the rice one evening . I made the bolognese-style sauce another night, stirring in the cooked rice at the end. And then, in a fit of packing procrastination, I finally halved and scooped out the zucchini, filled and topped it with a pile of mozzarella and then baked it for 30 minutes until it was gooey perfection. And it reheats nicely, which means I can finally give my Seamless app a rest.

    *For years, my mom has cooked up double-batches of all of my favorite Indian dishes and frozen them in individual Tupperware so that I basically have frozen dinners that are 100% homemade, preservative-free, perfectly portion-sized and you know, delicious.     Finally, youll bake and wait. Broiling for the last 5 minutes also gives it a beautiful finish.
