For some reason, even after all this time of cooking for a living I have a hard time remembering the difference between shredded and grated Parmesan cheese. Heres what you need for this recipe:

  • Grated Parmesan cheese: This is the powdery cheese that looks like snow! You can use either the shaker can or the or the containers. This is what youll need in this recipe, because it integrates into the texture of the bread crumbs.
  • Shredded Parmesan cheese: Shredded Parmesan cheese looks like little sticks of Parmesan. Its great for garnishing salads and soups. You could use it here in a pinch, but it has a different look. See Roasted Zucchini and Squash.

Do You Need Any Equipment For Your Baked Zucchini With Parmesan

That depends on the situation at hand. But you just need a baking tray, some baking paper to add the zucchini on when you prepare it, and thats about it. This will not be a very complex recipe if anything, it will bring some amazing health benefits. Its not that hard to prepare, and a lot of people love this recipe because its so convenient and straightforward. Its well worth testing out, especially if you want a great snack that doesnt involve any meat.

How To Make Baked Zucchini

Drizzle some olive oil on a sheet pan and preheat the oven to 400°F.

Mix the bread crumbs, cheese, parsley, salt, pepper, and garlic in a mixing bowl. Stir in olive oil until the bread crumbs are moistened.

Slice the zucchini into sticks. Rinse them and let them drain.

Place the zucchini sticks in the bowl with the bread crumb mixture and toss gently.

Place the coated zucchini slices on the prepared baking sheet and sprinkle the extra bread crumbs in the bowl over the top of them. Drizzle some olive oil over the top of the breaded zucchini.

This recipe uses Italian style Panko or breadcrumbs, not plain. Whats the difference? Italian breadcrumbs are made with seasonings and salt. Dont Skip The Broiler

However, this will make the cheese very toasty and delicious. If you dont have a broiler or just dislike broiling your zucchini, you can skip it. Zucchini and other summer squash naturally holds a lot of water, so you’ll probably notice that the vegetable releases a lot of water as it cooks. This can be a problem when adding squash to casseroles, bakes, and sauces, since the vegetables can water down the sauce or casserole, resulting in a bland flavor and undesirable texture.

If you sprinkle the shredded zucchini with salt and allow it to sit in a colander for about 10 minutes, the salt draws out a lot of moisture from the vegetable before you add it to the casserole.

TIP: In order to make sure that I get most of the water out of the zucchini , I like to wrap the zucchini in a dish towel. Squeeze it and wring it out multiple times while it’s in the towel — you will be shocked by how much liquid comes out!

Preheat the oven to 390°F or 200°C. Wash and dry the zucchini. Trim the ends.Cut the zucchini in half lengthwise, then cut them in half again. Now cut each zucchini stick in half horizontally. Note: you can also simply cut the zucchini in half like in the other recipe, or cut zucchini slices that are about â inch thick.

Transfer onto a baking tray, drizzle with olive oil,salt, and pepper, and toss well with your hands to distribute the seasoning evenly. Arrange on a single layer.Note: At this stage, you can add some dried herbs if you like. Try Italian herb mix, or thyme, dried basil, and oregano.

Bake at 390°F or 200°C in the center rack of the oven for about 15 minutes, until the zucchini spears are almost cooked.

Take out of the oven and sprinkle with finely grated parmesan cheese.

Put back in the oven, with the broiler or grill function on, and gratin until the parmesan is melted and slightly charred .

Arrange on a serving platter and serve as a starter or side dish. If you like, you can add some fresh thyme or oregano on top.
