Step 1: Boil noodles and grate cheese

To begin, preheat oven to 375F. Bring a large pot of salted water to a boil. Boil pasta until al dente.

While the pasta boils, grate the cheese. Mix the white cheddar and yellow cheddar together and then separate into 4 cups of cheese for the sauce and 2 cups of cheese for topping the casserole.

Then, drain cooked pasta and pour into a greased 9×13 casserole dish.

Next, heat a large pot over medium-low heat and place butter inside. Once butter is melted, mix in the flour, salt, mustard powder, black pepper and smoked paprika. Mix until a smooth paste remains.

Slowly whisk in the milk mixing constantly until a smooth even sauce remains. Stir in the hot sauce.

Next, reduce heat to low and pour 4 cups of shredded cheese into the pot. Continue mixing constantly until the cheese is completely and a smooth sauce remains.

Step 3: mix it together and Bake in the oven

Then, pour cheese sauce over the noodles in the casserole dish and toss to coat the noodles evenly. Top with 2 cups shredded cheese.

Finally, bake at 375F covered with foil for 30 minutes, remove the foil and cook for an additional 15 minutes.

I use elbow noodles whenever I make this homemade mac and cheese. However if you do not have elbow noodles on hand you can use any tubular noodles and it will work great.

The important thing about your noodles is that you cook them until just before they reach al dente. Which is about 1-2 minutes before the stage where they are completely cooked. They will continue cooking while in the oven, so you want to make sure that you are not getting soggy noddles while they bake in the amazing cheese sauce.

The best way to reheat this dish is to put it in a greased pan and cover it. Bake it in a 375 degree F oven for about 15 or 20 minutes, until it reaches the desired temperature.

  • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

  • To make ahead, prepare the recipe as directed without baking. Cover and chill until ready to reheat in the oven or assemble and bake later.
  • If making ahead, once the sauce is mixed with the pasta, I like to stir in an additional ½ cup of cheddar cheese to the cooled dish. Since the pasta will soak up a little of the sauce, I find this keeps it nice and creamy.
  • Remove the mac and cheese from the fridge at least 30 minutes before baking. You may need to add extra baking time if it is cold from the fridge. Do not overbake.

    This vegan mac and cheese is ultra cheesy yet we did not use one shred of actual vegan cheese in it. So if youre living somewhere where its hard to find vegan cheese in the supermarket, no worries, this recipe is for you.

    I did try a version with some vegan cheese added to the sauce, and quite honestly I just didnt think it worked as well as the version without, so this is it.

    I created a bechamel sauce with some vegan butter, all purpose flour, coconut milk and vegetable stock and once that was thick and creamy like a white sauce should be, I added some cheesy flavorings in the form of dijon mustard, nutritional yeast, onion powder, garlic powder, smoked paprika, salt and pepper.

    The spices in this sauce really make it, you wont have any doubt that this is a cheese sauce. We used our cheesy garlic vegan alfredo sauce as major inspiration for this.

    Add the cooked macaroni to your big pot of sauce and toss it all together and then transfer into a 9×13 baking dish, top with breadcrumbs and bake for 20 minutes until beautifully golden brown on top.

    Super easy and extremely satisfying.
