Its time to fire up the grill! These grilled pork chops are one of our summer dinner staples. Theyre easy to make, so flavorful, and a hit with the whole family.

When the weather is nice, theres nothing better than throwing dinner on the grill and enjoying some time outdoors. You can even prepare your whole meal on the grill by cooking some Grilled Vegetables alongside the pork chops.

When I was testing this recipe, I tried these grilled pork chops two ways: with a Pork Chop Marinade and with a pork rub. We loved both versions so much, and honestly couldnt decide which we liked better. In this recipe youll find my simple yet incredibly flavorful marinade. If you prefer, you can skip the marinade and use this Pork Rub recipe instead. Either way, the method for grilling pork chops remains the same.

Tips For Making Baked Pork Chops

  • Use a 9×13 baking dish. This is the perfect size for the four pork chops were using in this recipe. The key is to have a baking dish that doesnt leave a lot of extra room around the edges so the juices dont burn on the bottom of the pan. If you notice they are burning, just add a small splash of water to the pan.
  • Check the temp. The internal temperature of pork should be 145ºF. Once it reaches that, take the pork chops out right away so as not to overcook them!
  • Let it rest. After the meat is done cooking, let the pork chops rest for 10 minutes before slicing and serving. This gives the flavor and moisture time to settle back into the meat.

Instant Pot Frozen Pork Chops

To cook frozen pork chops in the Instant Pot, skip the step of browning the meat. Sauté the garlic in olive oil and then add the remaining sauce ingredients and frozen pork chops to the pot. Add 2 minutes to the pressure cook time, and increase the natural release time to 10 minutes. Check that the pork chops have reached an internal temperature of 145° F.

What Are Pork Loin Chops

Pork loin chops are primarily white meat of the pig. Meaning less fat than the darker meat youd find in shoulder chops or country style ribs. This means you need to keep a close eye to make sure it doesnt dry out. The dark meat chops you can normally find less expensively at the store can handle a longer cooking time or braising. Start with an extra five minutes in the oven then check for doneness.

I tested and retested this recipe to find the best cook time to make pork chops that are tender and perfectly cooked. Most Instant Pot pork chop recipes call for pressure cooking boneless pork chops for 8, 10 or even 15 minutes plus a natural release. When I tested a cook time of 8 minutes my pork was way overcooked, dry and tough. Not at all what you want in a pork chop!

After many tries, I found that just one minute of pressure cooking time plus a 5 minute natural pressure release was perfect for thick-cut boneless pork chops. The pork chops were cooked through and tender, not tough or dry. Be sure to follow the tips below for the best pressure cooker pork chops.

How To Cook Pork Chops

Want to cook them to perfection. Of course you do! Yes you can skip the rub if you choose to use a marinade instead. Or, just season with salt and pepper and follow temp and timing.

All of these pertain to regular sizes which would likely be about 3/4-1 inch. If you only have thicker this is how to cook 2 inch thick Pork Chops.

Pork is such a versatile meat but the key is to not over cook, bake, or grill it. It easily dries out and s no good.

How To Grill Pork Chops

I tested this recipe on an outdoor gas grill. You can also use a charcoal grill or grill pan. Follow these tips for the best grilled pork chops:

  • Thick pork chops are best for grilling because they wont dry out easily. Choose pork chops that are at least 1-inch thick for best results.
  • Bone-in or Boneless Pork Chops? Bone-in pork chops are best for making juicy grilled pork chops, because the bone helps to prevent the pork chops from drying out. You can also use thick boneless pork chops.
  • You can season the pork chops with the pork chop marinade in this recipe or this simple Pork Chop Seasoning. Either way, I recommend marinating your pork chops for the best flavor. After putting the pork chops in the marinade or coating them with the seasoning rub, marinate them in the refrigerator for at least 1 hour and up to 8 hours.
  • How long to grill pork chops: First sear pork chops over medium-high heat for 2 to 3 minutes per side. This will create nice grill marks and also helps to seal in the juices. Then reduce the heat to medium and continue grilling for 4 to 7 minutes per side, until the internal temperature reaches 145° F. The exact cook time depends on the thickness of your chops. Boneless pork chops will take a few less minutes to cook through.
  • Let them rest for 5 minutes before serving. This resting time allows the juices to redistribute throughout the meat so that your pork chops turn out tender and juicy.

How To Make Baked Pork Chops:

As much as I would love to say that you can make perfectly baked pork chops by just popping them directly in the oven, Ive just never had good luck with that method. Instead, Ive learned over the years that the secret is taking an extra 15 minutes to brine the pork. Then giving it a quick sear on the stove before roasting it in the oven. And then, as I mentioned above, using the help of a cooking thermometer to measure the internal temperature of the pork and ensure that it has reached the magical 145°F . It may sound complicated, but I promise you its easy peasy. Simply:

  • Brine the pork. In a large mixing bowl, combine warm water and kosher salt and stir until the salt is dissolved. Submerge the pork chops in the saltwater and soak for at least 15-30 minutes, or up to 4 hours. Remove the pork chops and rinse them off with cold water. Then pat them dry with paper towels and place on a clean plate.
  • Season the pork. Brush the pork chops on both sides with olive oil. Then sprinkle with your desired dry seasonings.
  • Pre-heat your skillet. Meanwhile, as youre seasoning the pork, heat your skillet over high heat for about 5 minutes, until it is super-hot. Once your pork is seasoned and your skillet is ready
  • Rest the pork. Let the pork rest for 3-5 minutes, to lock those juices in. Once the pork is ready to go

    How To Get Breading To Stick Well

    To get the breading to stick well, we use a quick egg wash and a double dredging.

  • Dab the meat with a paper towel to remove any excess moisture.
  • Make egg wash by blending together milk and eggs. On a large, rimmed plate or shallow and wide bowl, mix the Parmesan cheese, breadcrumbs, salt and pepper.
  • Dredge meat into bread crumb mixture, then egg wash and again in bread crumb mixture.
  • Pre-heat oven to 350 F. Allow the meat to rest while the oven is heating. Breading sticks better when it has 15-30 minutes to rest before baking.
  • Readers Tip: Trim off any excess fat around the outside. While this fat is delicious and crispy when sautéed, it is unnecessary on oven fried pork chops. The fat wont become crispy or brown like in other recipes.

    How To Bake Boneless Pork Chops In The Oven

    1. Start by lightly pounding the chops between two pieces of plastic wrap.

    You do NOT want to flatten them, you just want to pound them to break up some of the fibers, in order to help tenderize the meat. 4-5 light smacks per chop will do.
