The bagel was so delicious that I promptly returned the following weekend for more. It wasnt until my second visit that I noticed the gluten free signage.

And then it hit me, did I accidentally eat a gluten-free bagel last weekend?

Turns out I did, and I loved it as much as a traditional bagel which is why I consider this one of the best gluten free bakeries in New York City. Their baked goods span the gamut and youll find everything from challah to cupcakes, filling both your sweet and savory cravings.

I took my friend here during her visit and she raved about the bagels as much as I did. In fact, we returned to this gluten-free bakery a few times during her month-long stay.

Milk

In place of milk in baking, you can almost always use an unsweetened nondairy milk, particularly one with some fat. My favorite nondairy milk for baking is unsweetened almond milk. Canned coconut milk is only appropriate as a substitution for heavy whipped cream, not milk, as it’s very, very thick.

Butter

In place of butter, if you’re avoiding dairy, you can usually use vegan butter in my recipes. My favorite brands are Melt and Miyoko’s Kitchen.

If vegan butter isn’t available, you can often use virgin coconut oil . Spectrum brand nonhydrogenated vegetable shortening is also often a good butter replacement, but it has very little moisture, unlike butter, so cookies spread less.

How To Make Gluten

There are a couple of tips and tricks to getting the right texture with gluten-free cake. First, you have to follow the recipe.

So many people comment on recipe posts saying that they made a ton of substitutions and the recipe didnât turn out.

Other than the dairy substitute, I havenât tried other substitutes in this recipe. If you use substitutions, you are doing so at your own risk.

Second, you want to mix at the right time and not over-mix. When you are beating the oil, sugar, and eggs youâll want to beat it for the time listed.

This adds air which in turn helps the cake rise. Beating any longer will cause the batter to stiffen.
