Leftover baked salmon can be stored in the refrigerator. Store salmon in an airtight container. Salmon will stay fresh for up to 3 days in the fridge.
I do not recommend freezing leftover salmon. Leftover baked salmon is not recommended to be frozen because it will be dry upon reheating. If you must freeze the salmon, use an airtight container with all air removed or very tightly wrap it in plastic wrap and place in a freezer bag.

I would just bake it, but thats just me. Its wonderful both ways, but for optimal tender, flaky moistness, brush filets with a little olive oil, salt and pepper, and bake until just slightly under-done and let rest under foil to finish cooking. But, do keep in mind the size and thickness of your fillet:

- For a thicker salmon fillet: cook for 13-15 minutes.
- For a whole side of salmon: cook for 15-20 minutes.
