    Preheat your oven to 350 degrees. Also, place a piece of foil on the lower rack of your oven to catch drips.

    Scrub each potato clean and place them on a towel to dry.

    Continue to pierce each potato several times with the prongs of a fork. I usually do 2 on each side, making 4 total pokes.

    Lets get into it this is going to look so fancy once we finish, but its really super easy. First up: the type of cheese.

    I definitely suggest using a cheddar block and shredding yourself if you can get your hands on one. However, Ive also made this a quicker way by using the finely-shredded bagged cheese you can find at the grocery store!

    We are going to simply heat some milk and our cheese over medium-low heat, stirring continuously. Then as it begins to become a smooth sauce, add in a dash of hot sauce and a couple of shakes of turmeric for a beautiful orange color.

    If your cheese sauce is too thin? Add some flour, starting out at one tbsp., and stir really well. If it is too thick for your taste? Add a touch more milk or veggie stock to thin it out. And thats it!

    Instructions For Broccoli And Cheese Stuffed Baked Potatoes:

    Preheat oven to 400ºF. Clean potatoes. Carefully with a fork poke little holes all over each of the potatoes, about 9-12 times, this lets stem escape from the potatoes.

    Using about 1 ½ tablespoons of the olive oil, rub oil all over the potatoes until covered. Arrange potatoes on a sheet pan, season with salt and pepper. Transfer to the oven and bake 45 minutes.

    Just before the 45 minutes are up toss the broccoli florets in the remaining olive oil. When the time is up carefully add the broccoli florets to the sheet pan around the potatoes. Transfer back to the oven. Bake an additional 15 minutes or until potatoes are tender and broccoli is cooked.

    While the sheet pan finishes cooking make the cheese sauce, you are basically making a roux and then adding the cheese.

    In a medium saucepan add the butter and bring over medium heat. Melt the butter, once the butter starts to bubble add the flour and whisk together, it okay if it is clumpy.

    Very slowly add about 1/4 of the milk to the saucepan, whisk together with the butter/flour mixture until smooth. It should start to thicken. Slowly whisk in the remaining milk, make sure there are no clumps of flour remaining. As the milk warms it should thicken, let it continue to heat up, stirring every so often until the milk is hot and starts to steam. Do NOT let the milk boil, it can take about 6 to 8 minutes for the milk to heat up and start to thicken.

    Once it has started to thicken stir in the paprika and salt.

    Keep These Tips In Mind When Cooking With Cheese:

    • Shred, crumble, or finely dice the cheese before heating to ensure quick, smooth melting. The colder the cheese is, the easier it will be to cut.
    • The less you heat cheese, the better. When making soup, sauce, or fondue, add the cheese last then heat it only as long as it takes to melt. If it gets too hot it will get tough. Often, you can remove the pan from the burner the residual heat will melt the cheese.
    • Allow the shredded cheese to come to room temperature before adding it to a hot mixture.
    • Starch will keep the cheese from curdling. If using all-purpose flour, add it to the mixture before the cheese it needs to be cooked for a few minutes to remove the starchy taste.
    • Adding an acidic ingredient such as wine or lemon juice will help prevent the cheese from becoming stringy. This is why most cheese fondue recipes have a base of white wine. Simply sprinkle some lemon juice over the shredded cheese before heating it.
    • Reduced-fat cheeses melt differently than regular full-fat cheeses. Reduced fat cheese will take longer to melt and will not have the same velvety consistency in the sauce. Be sure to shred reduced-fat cheese very finely, and allow it to melt over very low heat while stirring constantly.
