With a dish as versatile as an easy chicken cordon bleu recipe, there are plenty of ways to serve it.

When this idea for low-carb Chicken Cordon Bleu popped into my head, I loved the concept of layers of barely-cooked chicken layered with ham, and cheese baked with a creamy sauce. Of course not coating the chicken with breadcrumbs removed a lot of the carbs. But Kara and I had to work on the recipe again and again to get a sauce that wouldnt cause you problems. For the keeper version, we whisked chicken stock into softened cream cheese and then mixed in mayo, sour cream, Dijon, and Parmesan for a slightly thick sauce. We barely cooked the thin pieces of chicken, layered the chicken, ham, and cheese, and spread the sauce over. And it was a winner!

To Make Your Chicken Cordon Bleu Casserole

To begin, preheat your oven to 350 degrees F and grease or spray a non-stick coating on your baking dish, either a 9 x x13 baking pan or 1.5 qt casserole dish will work.

The bottom layer will be the chicken breast strips, mine fit perfectly, filling the entire bottom of my casserole dish.

Add the ham slices layered over the chicken, and then a layer of the shredded Swiss cheese.

For the cracker topping, crush crackers in packaging and then place into a medium size mixing bowl.

Add Parmesan cheese, salt and pepper, and combine all of them together.

Melt half of the butter and pour into the bowl, then stir the cracker mixture to coat all of the ingredients.

Place on top of the shredded cheese in your casserole dish then bake at 350 degrees for 35 to 40 minutes. The cracker crust topping should be a nice golden brown and the internal temperature of the chicken should be 165 degrees F which is the safe eating temperature for both white and dark meat.

Begin this recipe by preheating the oven and preparing a baking pan. For easy cleanup, either lightly spray the bottom of the pan with nonstick cooking spray or line it with parchment paper.

In a small bowl, mix the panko, seasonings, and a couple teaspoons of olive oil. Set it aside for now.

Next, well butterfly the chicken breasts. Arent you glad you bought boneless breasts? This job would be pretty difficult with a bone in the way. A very sharp knife helps get the job done so look for the sharpest knife in the drawer.

Place the chicken breast on a flat surface. Carefully make a horizontal cut. Stop short before cutting all the way through. You should be able to open the chicken up while still keeping it in one piece. It will look like an open book or a butterfly with its wings spread.

Use a mallet to lightly pound the chicken so its about a quarter inch thick. The idea is to even out the thickness of the chicken pieces. Its easier to fill that way and it will cook more evenly. To minimize mess, place a layer of plastic wrap on top of the chicken before you pound it.

Sprinkle a little salt and pepper on both sides of the chicken . Arrange the ham evenly on the open sides, dividing it evenly between the 3 chicken breasts. Arrange the cheese on top of the ham.

Smear a half teaspoon or so of mustard on top of each breast. Top them with the panko mixture, patting it lightly so that it adheres.

I used a square baking dish however, a larger rectangle casserole dish like an 8 x 11 – inch or 9 x 13 – inch casserole dish can be used.

Can you freeze this casserole?

Yes, this can be a freezer meal. I recommend cooking the chicken, ham and sauce first. Then assembled, top with shredded Swiss cheese and freeze. To thaw, refrigerate overnight or cook from frozen at 350 degrees for 40-60 minutes or until bubbly.

How do I decrease the calories in this dish?

Substitutions are highlighted above, but you can swap out the heavy cream for skim milk or nut milk. Use chicken breast instead of chicken thighs. Omit the white wine and use lemon juice. Decrease the amount of cheese used in the sauce and the topping.
