  • Bring a large pot of salted water to a boil. Cook macaroni pasta in boiling water until al dente, 8 to 10 minutes. Drain and set aside.
  • Place butter and onions in a 2-quart microwave-safe covered casserole dish cook on high in the microwave for 3 to 4 minutes.
  • Add pasta, cubed cheese, and milk to the casserole dish stir. Cook on high in the microwave for 11 to 12 minutes, stirring well after 4, 8, and 11 minutes. Mixture will still be runny at this stage. Season with salt and pepper.

    • 75g macaroni or other pasta
    • 250ml cold chicken stock , milk or water
    • handful of spinach or 1/2 tsp Marmite

    Nutrition:

    How to cook:

  • Find a mug that holds twice the volume of your dry pasta the bigger, the better. Add the macaroni and your liquid of choice. Cover with cling film and pierce 3 times. Stand the mug in a microwave-proof bowl to catch any spillages, and cook in the microwave on High for 2 mins. The liquid will bubble up and over the sides, so tip any liquid from the bowl back into the mug and give it a good stir. Leave to stand for 1 min.
  • Repeat twice more or until the pasta is cooked , then remove from the microwave. Stir through the butter, cheese and spinach or Marmite, if using. The heat from the pasta should melt the cheese and wilt the spinach, but if not, pop back in the microwave for 30 secs.

    • Whisk in cold milk, not warm to prevent the flour from clumping.
    • Buy cheese in block form and take a few moments to grate it yourself. Pre-shredded cheese will not melt well and wont create a truly smooth and creamy sauce.

    We dont recommend reheating macaroni and cheese as it never tastes quite the same and theres a possibility that the macaroni will become mushy. However, if this is a deal breaker, you can reheat it simply add some milk to loosen the thickened sauce while reheating. We recommend making it and having it ready right before you leave. Turn off the slow cooker but leave the lid on. When you arrive stir it and loosen with milk if needed.

    • Different Toppings Im a huge fan of the cheese layer on top, since it gets nice and crispy, but we also love tossing 1 cup of panko with 2 Tbsp of melted butter and using that as a topping. 1 cup of crushed Ritz crackers with 2 Tbsp of butter work amazingly well too!
    • Different Baking Times the recipe calls for a lower baking temperature and time, but most of the time I find myself adjusting that based on my familys tastes. I like to bake this mac and cheese at 350 F degrees for 30 minutes, then broil for 2-3 minutes to get that glorious cheesy crust.

    Add butter to skillet, as soon as butter melts whisk in flour. Continue whisking until flour is fully mixed with butter. Then cook for about a minute to get rid of the flour taste.

    Slowly add evaporated milk a little at the time, followed by the half and half you do not want the mixture to form any lumps. Simmer for about 3-5 minutes until mixture thickens slightly.

    Add seasonings, onion and garlic powder, creole seasoning and cayenne pepper. Bring to a simmer and let it simmer gently for about 2 minutes. Stir in the cheeses , and continue stirring until everythings melted and evenly combined and, smooth. Salt & pepper, to taste.

    To Bake Or Not To Bake:

    You dont have to bake the mac and cheese in this recipe. Everything gets fully cooked and is essentially ready to eat after the cheese and noodles are added. However, I love the extra gooeyness that comes when the cheese is baked and I think baking it adds a level of sophistication you just dont get without.

    • Pasta Shapes to mimic the classic recipe, I normally use elbow pasta. But any short-cut pasta works just as well! Medium shells, penne, rotini, etc. Just note that different pastas will have slightly different cook times, so use the recipe times as an approximate.
    • Cooking Liquids like I mentioned above, I prefer the taste and consistency of chicken broth, evaporated milk and heavy cream. However, feel free to test out different proportions of those liquids, or try out different liquids. Just note that I can only vouch for this recipe as written.
    • Cheeses As with most mac and cheese recipes, the types of cheese called for are not the only ones you can use. Monterey Jack, Pepper Jack, Colby, Gruyere, sharp cheddar any and all!
