As classic cookies go, there’s not much better than buttery, tender, not-too-sweet shortbread. With just a very few common ingredients and the fortitude to quit mixing while you’re ahead, it’s easy to make these simple cookies great.

When it comes to holiday baking, I’m all about the ratios and I don’t mean ingredient ratios. I mean I’m looking for a very high ratio of cookie fabulousness to time, effort and skill level required. Once upon a time, this used to mean I would shy away from cookie recipes that require rolling pins and icing technique.

But then, while we were living in London, I accompanied our older kid to a friend’s birthday party at Biscuiteers, where seven-year-olds made beautiful, genuinely delicious cookies using the line and flood technique.

Making exquisite decorations is very hard, and I definitely don’t have the skills or the patience for it. But making pleasing decorations is 100% achievable and really fun, especially when you do it with family and friends.

Besides the options mentioned above, I recommend utilizing your freezer. Freezing your cookies is the best way to make them last as long as possible.

Just be warned that not every cookie freezes well. Iced sugar cookies and softer cookies will all freeze perfectly. However, anything made with a jelly filling or topping might not freeze as well.

During the holiday season, I love giving out a big tray of cookies for gifts. Ill make them in big batches and create a beautiful platter to pass out. My trick is to keep everything super simple though, so its less stress on me. These no bake Bourbon Ball Cookies are a great Christmas cookie option thats easy. They look so impressive, but all you have to do is mix everything together and roll them in sugar.

As much as I love how the oven warms the house, my favorite go-to is a no-bake cookie. It just keeps things really easy because I dont have to worry about anything burning. I used Jim Bean bourbon, but you can substitute any brand of bourbon that you prefer. The chocolate flavor really compliments the bourbon and it isnt overpowering. Theyre a soft chewy cookie, thats sweet with a crunch texture.

Just refrigerate the Bourbon Ball Cookies until youre ready to serve. Then, I just keep them out at room temperature for a bit. Theyre delicious with a cup of coffee or cold milk. Everyone always asks me for the recipe and loves how easy they come together. You really cant go wrong with a delicious no-bake Christmas cookie.

How To Make Easy Bourbon Ball Cookies For Christmas

Add wafer crumbs, pecans, cocoa, and 1 cup of confectioners sugar together in a medium bowl.

Add the corn syrup and bourbon together in a small bowl. Using a spoon blend the two together.

Slowly add the crumb mixture and mix well.

Christmas Cookie Recipes Tips

Most all of these recipes include tips and tricks in the post, but I wanted to include some general cookies tips here:

  • Many cookies keep for about a week when stored in an airtight container. Including a piece of white bread helps keep the cookies soft.
  • Most cookie dough can be frozen and stored for up to 3 months. This is especially helpful as December is particularly busy with shopping and other Christmas events. Keeping dough on hand will give you a quick freshly baked treat for any event.
  • Line your pans with parchment paper, not only does it keep the cookies from sticking, but it makes for easy clean up.

Chocolate Blossom Cookie Ingredients

If you enjoy baking at all, you probably have all of these ingredients at home! Simply choose your favorite kind of Hershey’s kisses and you are all set!

  • Butter – ¾ cup of butter that has been softened at room temperature. This allows the butter to cream together with the other ingredients really well.
  • Sugar – ½ cup of sugar. You’ll need more for rolling the cookies as well.
  • Brown Sugar – ½ cup of packed light brown sugar.
  • Egg – 1 large egg that is at room temperature.
  • Vanilla – 1 tablespoon of vanilla extract. Use pure vanilla for the best flavor.
  • Baking Soda – 1 teaspoon of baking soda.
  • Salt – ¼ teaspoon of salt.
  • Flour – 1¾ cups of all-purpose flour. Measure it out by fluffing it up and using a spoon to scoop it into your measuring cup before leveling it off.
  • Cocoa Powder – ½ cup of dark chocolate cocoa powder that has been sifted. You can use regular unsweetened cocoa powder, but I find that the dark chocolate version really adds a rich chocolate flavor!
  • Hershey’s Kisses – 24 Hershey’s kisses. I used milk chocolate, but you can use whichever variety you like the best!

Bake & Top With Hershey’s Kisses

  • Bake. Bake the dough in the oven at 350°F for 7-9 minutes, or until your cookies are puffy. While they are baking in the oven, go ahead and unwrap your Hershey’s kisses so they are ready to go!
  • Add the kisses. Remove the cookies from the oven and immediately add the unwrapped Hershey’s kisses by gently pressing one into the center of each cookie.
  • Cool. Allow the cookies to cool completely.
  • Add these tasty cookies to your next holiday gift basket! They are sure to be a hit with everyone who tries them! Enjoy!

    How Long Before Christmas Should You Make Cookies

    This all depends on your schedule and how busy you are. In general, fresher is better with baked goods.

    However, that doesnt mean you have to be up baking the day of the holiday party. Instead, you can pre-make the dough and leave it in the fridge to chill for a day or so .

    Alternatively, you can also bake cookies 1-2 days in advance, and store them in an airtight container until you are ready to use them.

    Our Favorite Basic Cookie Recipe

    Baked Cookies

    The recipe below is based off of our popular M& M Cookies. This version uses red and green sprinkles and M& Ms to make them extra festive. Heres how to make them:

    • Cream butter, brown sugar, and granulated sugar.
    • Add egg and vanilla.
    • Add flour, baking soda, baking powder, and salt.
    • Beat until fully combined.
    • Stir in M& Ms and chocolate chips.
    • Scoop the dough into balls. Roll the dough balls in sprinkles and top with a few extra M& Ms.

    • You can use any of your favorite varieties of Hershey’s kisses for this recipe. I used milk chocolate, but dark chocolate would be a great option, too!

    Cookie Decorating With The Line And Flood Method

    Basic cookie decorating can be easy, I promise.

    I’m pretty impatient and miz at this sort of thing, but I made those cookies up there for the very first time for our school’s teacher cookie swap back in 2015, and I survived to photograph them. I even made them again the following week.

    I know they don’t look positively professional, but I like that they’re pretty and yet obviously homemade. It’s all about the attitude.

    The line and flood method is exactly what it sounds like. Using one batch of royal icing, part of which you’ll thin slightly more than the rest, you’ll draw a line around the outside of each cookie and then flood the thinner icing inside the line to create a smooth surface.

    In the cookies above, the ornaments used line and flood. The snowflakes simply used the thicker royal icing. You’ll find more detail in the post about Biscuiteers Royal Icing.

    But first, I insist you watch . It’s the Britishest thing ever, and it’s very sweet. Not just because it’s made of cookies.

    If stored at room temperature, theyll last for up to one month. Theyll keep for up to three months in the freezer. You can make Christmas cookies from up to 1-3 months ahead of time this way!

    I love to use star-shaped pretzels for these although Ive seen bell and tree-shaped pretzels, too. You can purchase these holiday pretzels online if you cant find them in stores, or you can use regular pretzels. The salty pretzels are so good with the chocolate!

    You can make a huge batch of these easy Christmas cookies so quickly yet theyre always the first ones to go on a cookie plate. Holiday M& Ms are also around if youd like to save yourself the hassle of separating out the green and red from a regular package .
