Loaded baked potato soup recipe is one of my very favorites! Slow cooker soups are just what is needed to stay warm inside when it is cold outside. It is my favorite all-time soup that is so simple to make, and the slow cooker does all the work. Soup is one of my favorite go-to recipes in the winter, and this loaded baked potato soup recipe is at the top of that list. Soup is comfort in a bowl!

The recipe really is a home run. Its simple and easy AND loaded with tender, diced potatoes in a creamy soup broth with so much flavor from the bacon and onions. This soup is perfect for dipping, which is why you need some dinner rolls or french bread to go with it. If you like a really smooth texture, then you can also just blend this up in your food processor! It comes out so delicious and creamy.

I love a thick soup. I created a roux made with butter, flour, and milk to serve as a thickening agent. If you like a thicker soup, just whisk in a little less milk. To give the soup a rich bacon flavor, I sauteed the bacon right in the pot I drained the grease drippings but the bacon flavor still remains.

This Instant Pot Loaded Potato Soup is creamy, delicious, and tastes like you slaved over it all day! Its easy to prepare and is ready in a flash thanks to the Instant Pot. Theres also a slow cooker version if youd rather prepare it that way!

Cooler weather is just around the corner, or maybe its already made its appearance in your neck of the woods!

When the temperatures take a dip, all I want to do is put on some warm fuzzy socks and curl up with a bowl of this Instant Pot Loaded Potato Soup.

Ive been busy creating recipes for my Instant Pot and am super excited about this one.

This recipe is an adaptation of the Slow Cooker version shared by Carrie of Kenarry: Ideas for the Home on my site, and it came out so good and was ready in a flash!

Add The Baked Potato Mix

1 Add in the drained potatoes. Using an immersion blender, blender or potato masher, puree until desired consistency .

2 Stir in 3/4 cup sour cream, 1 cup shredded cheddar, and 1/2 cup cooked bacon. Season to taste with salt and pepper. Bring to a low boil then remove from heat.

3 Serve topped with shredded cheese, bacon, sour cream and green onions and any other favorite toppings. Enjoy!

Whole30 Compliant Chicken Broth: I love making my own homemade compliant chicken broth and keeping a container in the freezer to use whenever I want to make a batch of soup. If you are all out of homemade broth and dont have time to make a batch, there are a few great Whole30 compliant shelf-stable options available. Just make sure to check the ingredients label before purchasing. You want to make sure that the broth does not have any sugar, yeast extract, or non-compliant oils.

Full-Fat Coconut Milk or Cream: Coconut milk and coconut cream are common ingredients used frequently when making dairy-free versions of traditional recipes. Full-fat coconut milk is rich, creamy, and entirely plant-based which makes it a great alternative in recipes that usually call for half and half or heavy cream. When you are purchasing coconut milk for this recipe, make sure it is full-fat and that it comes in a shelf-stable can. The ingredients should be coconut and water.

  • Potatoes any variety of potato works great in this soup. You can use russet, Idaho or Yukon gold potatoes. I recommend peeling the potatoes for the best texture but you can also leave the peels on.
  • Roux a roux is simply a combination of flour and butter that is cooked until golden in color and a paste like consistency. It is a great way to make a rich creamy soup or sauce without having to add in heavy cream.
  • Toppings get creative with the toppings for this soup! I like the classic combo of cheddar cheese, sour cream, bacon and green onion but you can add any of your favorite toppings:

How To Make Easy Potato Soup

To begin, cook your bacon and peel and cut the potatoes. Russet potatoes are best because they are starchy and create the great creaminess. Once you cook the bacon transfer it to a paper towel-lined plate to absorb the grease and reserve the fat. Then crumble the bacon into little pieces and set aside.

Add bacon grease or butter and the onion to a Dutch oven or soup pot. Cook until the onions are tender, stirring often. I am not sure if there is a better smell than the aroma youre getting right now!

Add garlic and continue cooking for a couple of minutes.

Add in the chicken broth, milk, and flour and whisk until its well combined. Stir in the potatoes, salt, and pepper and bring to a slight boil.

Reduce the heat, cover slightly and simmer until the potatoes are tender.

Stir in shredded cheese, sour cream, and ½ of the bacon. Youll know your desired consistency, so if you think it is too thick add more milk as needed.

Garnish with all the things! This soup is best served immediately. Enjoy!

This soup is a warm and comforting meal that is quickly made in 30 minutes with staple ingredients found in your kitchen! Perfect for a quick weeknight dinner the whole family will love. When I need to use up the last of a bag of potatoes I love throwing this soup together.

I like to serve my soup with a leafy green salad, like my Kale Apple Salad with a homemade honey Dijon vinaigrette and Crazy Breadsticks to dip! Or serve with sliders, like my easy Roast Beef Sliders!

My family loves this soup as it has all of the comforting goodness of a fully loaded baked potato turned into a belly warming soup! This rich and creamy soup is loaded with cheddar cheese and topped with all the traditional baked potato toppings. Dont be fooled by the soups creaminess you dont even need to add cream! Whats not to love about that!

The soup gets its rich and creamy texture from the potatoes, along with a roux. Cubed potatoes are boiled and then added into the soup. Depending on how thick and creamy you want your soup you can mash half or 3/4s of the potatoes. For texture, I like to leave my soup a bit chunkier and only mash about half of the potatoes so that its creamy but still has pieces of potato in it. I like having pieces of potato in my soup to mix with the toppings!

Thanks to a few key ingredients, and a special trick, this potato soup is still nice and creamy without any flour or cream. One of those key ingredients is arrowroot starch. Arrowroot starch works like cornstarch to thicken soups and stews. It is gluten and grain free and can be used one to one in recipes that traditionally call for corn starch.

Another trick to making this soup creamy is blending a ladle full or so of the soup until it is mostly smooth and then adding it back to the pot. The blended potatoes and broth, plus the arrowroot starch, help to thicken this soup and gives it the creamy texture we all love.

This soup reheats beautifully for a comforting warm bowl whenever youd like. Dont add toppings to the soup if you plan to have leftovers.

To reheat, place it on the stove over medium heat until warm. Alternatively, place it in a microwave safe bowl in the microwave for 2-3 minutes. Then, add the toppings!

The secret to the best Loaded Baked Potato Soup is making a simple gluten-free roux with cornstarch for a thick, creamy base. Well, that and including lots of crispy bacon and shredded cheese!

Heres how to make this baked potato soup recipe on the stovetop in less than an hour:

First, cook chopped bacon in a large sauce pot over medium-high heat until brown and crispy. Remove from the pot and set aside to use later.

Remove the bacon grease, leaving about 1 tablespoon left in the pot. To the hot grease add the chopped onions and garlic, and sauté for a couple of minutes to soften.

Next, add the chopped potatoes and chicken broth to the pot. Cover and simmer until the potatoes are fork-tender.

Meanwhile, mix the half & half with the cornstarch until all clumps have dissolved. This will create a thick, creamy soup once combined with the hot broth.

Easy Loaded Baked Potato Soup

I prefer to just make this on the stove top using my dutch oven. I have a green 6-quart Lodge cast iron dutch oven I just adore.

Its what I use for almost all my soup making and a lot of my general cooking. Its very versatile and lives on my stove top so its just easy.

You could make this in the crockpot. Just increase cook time to 1 hour on high or 2 hours on low and check for doneness of the potatoes. I usually do this by carefully pulling out a large chunk of potato and seeing if its soft all the way through.

If you have an Instant Pot, you could also use that to cook the potatoes quickly and then warm the soup.
