Oatmeal Banana Bites | Easy no-bake snack for kids

Which kid doesnt want an after school snack? Now that schools out, your child has time to slow down and eatand you have a little more time to make them something slightly more complex and creative. Here, six healthy after school snacks thatll tide over even the hungriest kid until dinner time.

1. Honey roasted peaches with greek yogurt and granola

Preheat oven to 375 degrees. Place pitted peach halves skin-down on a parchment-lined baking sheet. Sprinkle with cinnamon and drizzle with honey. Bake for 20 minutes until peaches are charred along the edges and tender in the center. Top each half with a dollop of yogurt and sprinkle with granola.

2. Apple peanut butter sandwich

Slice one apple into rounds. Using a cookie cutter, remove the core and seeds of each apple ring. Spread each ring with peanut butter and scatter raisins on top. Place another ring over the top to create a sandwich.

3. Avocado toast strips

Toast multi-grain bread. Cut into stripsperfect for little hands to graband top with mashed avocado, cherry tomatoes and a generous squeeze of lime juice.

4. Mini broccoli cheddar frittatas

Preheat oven to 375 degrees. Finely chop 1 cup of broccoli florets and steam in the microwave for about 45 seconds, or until tender. Whisk together 3 eggs, 3 tablespoons milk, 1/4 cup shredded cheddar and a pinch of salt and pepper. Add the chopped broccoli. Pour mixture into greased mini muffin tray and bake for 20 minutes or until lightly golden and cooked through.

Aside of a few picky eater issues, my boys are pretty good eaters. Like, no matter how I cook tomatoes, Big Guy wont eat them, and Little Guy wont eat potatoes. Well, unless those potatoes are French fries, in which case he will devour them. Go figure. When it comes to making healthy no-bake snacks that my boys like, Ive been pretty lucky, because they seem to like everything Ive make. But I know a lot of parents struggle with finding healthy snack choices for their kids to eat, which is why I think its important to share the recipes that I KNOW are kid approved.

  • 1/4 cup raisins

Directions:

Line two baking sheet with parchment paper set aside. Combine chocolate chips, peanut butter and butter in large saucepan set over medium-low heat.

Cook, stirring constantly for 5 minutes or until melted and smooth. Remove from heat. Immediately stir in cereal until well coated. Stir in apricots, cranberries and raisins. Drop into 2-inch rounds onto prepared baking sheets. Use a greased spatula or the back of spoon to flatten slightly into cookie shapes.

Refrigerate for at least one hour or until set. Store layered, between sheets of waxed paper, in airtight container in the refrigerator.

These snacks are perfect for lunch boxes or to satisfy the after-school munchies. They can be separated out into individual snack-sized baggies or served in a large bowl to feed a crowd. These are my favorite snacks when friends come over after school. I can just set a big bowl out and let each kiddo take what they like.     This recipe could not be simpler, and basically just utilizes all of your pantry staples there are only THREE mandatory ingredients!!

    Quick Cooking Oats I prefer the quick cooking oats to the old fashioned rolled oats since these bars are no bake, the texture is a little easier to handle.

    Natural nut butter Use a good natural peanut butter or almond butter with no added sugar or salt.

    Maple syrup- This can easily also be honey or agave, whatever you have on hand.

    The rest of the ingredients are optional including salt, cinnamon , vanilla and whatever toppings you want to throw on top.

    • Peel bananas and slice them into several pieces.
    • Place 8 oz. chocolate chips in a microwave safe bowl and cook on high until melted for about 1 minute, stirring every 30 seconds until smooth.
    • Dip the banana slices in the chocolate roll them in other ingredients as desired:Colored sugars, cinnamon sugar, peanut butter, chopped nuts, coconut, ice cream sprinkles, crushed cookies

  • Cut bananas in half and stick a Popsicle stick into the banana
  • Freeze for about 10 minutes.
  • Coat the bananas with peanut butter or dip it in chocolate next dip into the crushed cereal mixture.

  • Spread peanut butter on one side of tortilla spread on jelly. Sprinkle raisins over jelly.

    These no bake bars can be kept at room temperature for 3-5 days in an airtight container . They will last in an airtight container in the fridge for up to 1 month. You can also freeze them for up to 6 months if youd like to make a larger batch. They can thaw overnight in the fridge, or in your purse if youll need to be out and about.

    Before you start I wanted to mention the easy way to melt chocolate chips or candy melts as many of the recipes require melted chocolate. Place the chocolate in a heat safe bowl and microwave them in 20 or 30 second intervals on half power, stirring in between.

    This melts the chocolate easily without a double boiler and makes many of these treats much easier and faster to make as a lot of these require melted chocolate or candy melts. If you are using regular chocolate, a spoonful of coconut oil melted into the chocolate in the microwave at the same time can also help give it a harder finish more like Magic Shell. I like to use about a teaspoon or so per 1/2 cup or so.

    Its a proven fact that we eat with our eyes first. Meaning, the more attractively foods are plated and the more colorful they are, the more likely we are to want them in our stomach. Even if someone detests asparagus, if it is served on a platter in adorable little bundles, wrapped with crispy bacon, the chances are much greater that it will be eaten. After the eyes have decided its time to nosh, a kid might be more inclined to eat something if its easy for little hands to hold.     Fun Healthy Snacks For Kids

    Its not impossible to whip up fun healthy snack for kids. Think fruit paired with dark chocolate or rolled oats mixed with chocolate chips. These recipes balance good-for-you ingredients with flavorful spices and, in some cases, a dose of guilty pleasure chocolate.

    1. Banana boats

    Slice banana in half lengthwise and top with almond butter, honey and shredded coconut.

    2. Nutella rice cakes with fresh fruit

    Spread Nutella on thin brown rice crackers and top with sliced strawberries.

    3. Chocolate-covered mandarin oranges

    Melt bittersweet chocolate in the microwave and dip each mandarin orange slice in the melted chocolate. Place on parchment paper and refrigerate until the chocolate is solid, about 10 minutes.

    4. Cookie dough bites

    Grind 1 cup cashews and 1/2 cup rolled oats in the food processor until a fine meal forms. Add 3 tablespoons agave syrup , 1 teaspoon vanilla extract and 1/2 teaspoon ground cinnamon. Process until dough comes together. Fold in 1/4 cup chocolate chips and shape into bite-sized truffles.
