    How To Make No Bake Peanut Butter Cookies:

    These no bake peanut butter cookies come together so fast you will be amazed! In just a few minutes the cookies will be formed. The hardest part of this recipe will be waiting for them to cool!

  • Bring butter, sugar and milk to a boil: In a large saucepan over medium high heat add the butter, sugar, and milk and bring to a rapid boil. Whisk for one minute, then remove from the heat.
  • Stir in remaining ingredients: Now add in the vanilla, peanut butter, and oats until combined.
  • Form cookies: Line a baking sheet with parchment paper. Then, using a cookie scoop, drop on the parchment paper.
  • Cool: Lastly, allow to cool completely until hardened.
  • Pro Tip: Do not alter the one minute of whisking. Time starts when the butter, sugar, and milk mixture is fully boiling. Pull it off the heat as soon as the one minute is up and do not over-boil. Otherwise, the cookies may not set up properly.

  • Minute Oats! Regular Old Fashioned Oats will not yield great results, you need to use 1-minute oats in order to have a more tender and chewy cookie.
  • Add the vanilla AFTER boiling! You want that vanilla flavor, so dont cook it off during the boil, add it at the end!
  • Rolling Boil! You need a rolling boil for about 1 minute, not a simmer, dont start the timer until its bubbly in the center of the butter mixture!
  • Creamy OR Chunky! You can make this with chunky peanut butter too for extra peanut crunch!

    No Bake Peanut Butter Pie

    8 oz. cream cheese, room temp.1/2 C. sugar1 C. creamy peanut butter1 chocolate crust pie shell 1 tub cool whip1 jar hot fudge sauce

    Preparation:

    Using a hand mixer combine cream cheese, sugar and peanut butter, about 2 minutes. Fold in 3 cups of the whip cream, leave enough for the topping. Pour into the chocolate pie shell. Place the jar of hot fudge in the microwave for 40 seconds. Pour 1/2 the jar over the pie and smooth it out to the edges. Place this pie in the fridge for 1 hour or until hot fudge is set. Remove and top with remaining whip cream. Heat the fudge again, just about 30 seconds. Place 4 big spoonfuls of the hot fudge into a ziploc bag and the cut off the tip and drizzle over the top of the pie. Refrigerate again for an additional 2 hours before serving

    Try using smooth almond butter in place of the smooth peanut butter in this recipe, and youll have a recipe for no bake peanut butter bars without peanut butter! I really like Barney Butter brand almond butter.

    If you can find a smooth, no-stir cashew butter, you can even make cashew butter no bake bars. No stir nut butter is just the kind of nut butter that has little to no oil separated on top of the jar when first opened.

    I wouldnt recommend trying Sunbutter. Its simply too soft and drippy to set up.

    • You are looking for a raging boil. We arent talking a few bubbles. You want to see a really foamy and frothy boil before moving on to your next step.
    • Stir continuously. This isnt a recipe to walk away from.
    • Work quickly. Once the mixture has boiled and you are adding the other ingredients, move fast.

    STEP ONE: In a small saucepan, over medium-high heat, whisk together butter, sugar, and milk. Bring the mixture to a boil for about a minute and then remove from the heat.

    Its important to start the 60 seconds once youve reached a rolling boil, not when you see the first few bubbles. If you start counting too soon, your cookies may not set properly.

    If your cookies are too hard, you might have boiled your sugar mixture too long or at too high of a heat.

    STEP TWO: Whisk in the peanut butter and vanilla until well combined.

    STEP THREE: In a large bowl, stir together the quick-cooking oats and salt.

    STEP FOUR: Pour the peanut butter mixture over the oats and stir until combined.

    STEP FIVE: Line a baking sheet with wax paper or parchment paper. Drop mixture onto the wax paper using a medium cookie scoop.

    STEP SIX: Let the cookies cool on the counter and then store in the refrigerator once cookies are cool and dry.

    PRO TIP:

    Its very important you let them cool on the counter before putting them in the fridge or they will become gooey.

    How To Make Peanut Butter No Bakes

    Although this cookie recipe doesnt call for the oven, it does require that you use the stove for a bit. With that in mind, the no bake peanut butter cookies are still so simple and can be made in no time. Only a few ingredients are required, including:

    • sugar
    • peanut butter
    • quick cooking oats

    RAPID BOIL. To make them just begin by adding the sugar, butter and milk to a saucepan and melting on medium heat. Youll let that come to a rapid boil for one minute and then remove from the burner.

    STIR. From there, you will stir in your vanilla and peanut butter. Stir in the oats until the mixture begins to cool and all ingredients are combined well.

    SCOOP. Then, scoop the mixture in small amounts onto wax paper and let it cool to completely set. From there you just have to try hard not to eat a dozen in one sitting.

    BUT, SERIOUSLY dont say I didnt warn you These Peanut Butter No Bakes are addicting!!

We go through peanut butter at an absurdly fast rate because both Mel and I love to snack on it. I will say, however, that hes even more in love than I am. All the other dessert recipes he just ignores!

    He is so in love with peanut butter that he has his own mega-size jar in the pantry. Its super chunk and Ill know hes out when I see him grab the creamy jar. When that happens I have to make sure and quickly buy more or my baking stock will be depleted within days. Did you know that peanut butter is a versatile and affordable ingredient that can be added to meals and snacks for a nutritious boost? It has eight grams of protein, two grams of filling fiber, and 12 grams of unsaturated fat in each two tablespoon serving!

    How To Make The Easiest Rich Chocolate Ganache Topping

    If youve ever had a rich chocolate truffle and thought that it must have been hard to make, get ready for a happy surprise! Truffles are just thick chocolate ganache rolled into balls and chilled.

    You can do so many things with ganache, which is made simply like this:

    • Place chocolate disks, chips, or chopped chocolate in a heat-safe bowl or measuring cup.
    • Gently heat cream in the microwave or on the stovetop.
    • Pour the hot cream over the chocolate pieces, and let it sit for 2 minutes.
    • Stir the mixture until the chocolate is melted and the mixture is smooth.

    Theres only one difference between the poured chocolate ganache here, truffles, and the whipped chocolate ganache I love for frosting on a rich gluten free chocolate cake: the relative balance of chocolate to cream.

    Here, we use 8 ounces of chocolate pieces, and 4 fluid ounces of heavy whipping cream. If youd like a harder, more rigid chocolate layer, try reducing the cream to 3 1/2 fluid ounces.

    Why Do My No

    Gooey no-bake cookies are a result of not letting the mixture boil long enough. The sugar mixture needs to reach soft ball stage in order for the sugar to “set” as it cools. This is what keeps the cookies from being gooey.

    If you continue to have issues with runny cookies, try boiling the mixture a little longer.

    Can These Peanut Butter Balls Be Frozen

    Yes, I do it often. It usually starts with me putting them in there to chill faster when Im in the process of making them. Im very impatient. But then I get side-tracked and forget about them in there. I usually find them the next day and they are always fine. For long-term freezing, make sure to put them in an airtight container or zip-top bag after the chocolate has set.

    I sit around with a jar of Nutella and a spoon way more than I would care to admit. I mean, its a good thing Costco has such an amazing price on giant jars of Nutella because otherwise I may go bankrupt with my Nutella habit. Actually putting the Nutella in with something makes me feel better about how much I consume. Especially when it involves a whole grain like oatmeal. Its healthy, right? Well, maybe not with all that sugar and butter, but whatever, its better than eating it by the spoonful.

    Anyway, I was in one of those moods for dessert, but felt the guilt of the spoon, so I decided to make some peanut butter and Nutella no bake cookies. Oh heavens, its way too easy and way too delicious. I took my classic recipe for no bake cookies that Ive been using for years, and worked in Nutella.

    Be sure to use old fashioned roll oats in this recipe. I have found that they give a far better texture than instant oats which are a bit too small and powdery. And then theres steal cut rolled oats that are far too chewy for a no bake cookie.

    Can You Freeze No Bake Peanut Butter Bars

    Yes! These bars are best chilled, and they can be stored in the refrigerator or even in the freezer.

    These peanut butter bars dont actually freeze completely solid, so they can even be enjoyed right out of the freezer. For the best texture, though, let them sit on the counter for 10 minutes after you take them out of the freezer.

    Natural Unsalted Creamy Peanut Butter

    I recommend using well-stirred natural, unsalted creamy peanut butter in this no bake cookies recipe. However, you can swap that for:

    • Natural, unsalted creamy almond butter, cashew butter or sunflower seed butter
    • If using Jif-style, thick creamy peanut butter, I recommend leaving out at least ¼ cup to ½ cup rolled oats. When you fold your oats into your no bake cookie dough mixture, youll see how thick it gets as you go. If you can manage to add in that ¼ cup to ½ cup you left out, go for it, just beware that JIF-style peanut butter is much, much thicker than natural peanut butter, so its not as liquidy.

    If you prefer almond butter, try this recipe instead: 3 Ingredient Easy Oatmeal Cups with Almond Butter or Almond Butter Paleo No Bake Cookies.

    Combine the coconut oil, almond butter, honey, vanilla and chocolate chips in a microwave safe bowl. Microwave on high until melted, stirring every 30 seconds to prevent the chocolate from burning.

    Stir in the cocoa with a spoon and mix well until combined.

    Combine the salt and oatmeal in a separate bowl and then add to the almond butter mixture. Mix well. Add the remaining chocolate chips. Scoop out the cookies by rounded tablespoons and place on waxed paper. This also works well with a cookie dough scoop. Let harden for 2 hours in the refrigerator. Enjoy!
