Can You Make Egg Free Cupcakes Without Aquafaba

The starch and protein in aquafaba make it an ideal egg substitute for making egg free cupcakes. I haven’t tested this eggless cupcake recipe without it, but did play around with different amounts and found that using less made the texture crumbly. Using ground flax as an egg substitute made them a gummier texture.

How To Store Snickerdoodle Cookies

Store any leftover cookies in an airtight container at room temperature for up to six days on the counter.

These gluten-free snickerdoodles can also be frozen raw as dough or as fully cooked cookies.

  • To store as raw dough: Place the prepared snickerdoodle dough on a sheet of wax paper and form into a long roll. Wrap in the wax paper, twisted at the ends to seal it, and place the log in a freezer-safe bag or container. Freeze for up to three months.
  • Baking frozen raw dough: They may need to bake a little longer than they would if using fresh dough, so keep an eye on them in the oven.

Tip: You can also freeze the raw dough in evenly sized balls so that you can just take out as many as you would want at a time to roll in the cinnamon sugar and bake at your leisure.

  • To store as baked cookies: Place any leftover baked cookies in a freezer-safe container or bag in the freezer for up to six months. I like to place small pieces of parchment paper in between in case you want to easily detach them one at a time.
  • Reheating frozen baked cookies: You can reheat in the oven at 275f degrees for 10-15 minutes for the best result.

Use The Right Egg Substitute

If you have an egg allergy or follow a plant-based diet, Bellamy recommends one type of egg substitute, which she says can replace both egg whites and yolks in a recipe. âFor vegan baking, we use the Ener-G egg replacer. We like it because it is a blend of potato starch and tapioca starch that mimics what eggs do in recipes to bind baked ingredients together, but itâs completely egg-free.â

  • Prepare the Dry Ingredients: To a large mixing bowl, add sifted flour . Next, add the baking soda, and mix to incorporate.
  • Make the Cookie Dough: Add the date paste to the bowl with the dry ingredients, and mix everything together using a spatula or large spoon until your cookie dough forms. Fold in your chocolate chips .
  • Bake the Cookies: Scoop out a heaping tablespoon of cookie dough and drop onto the lined baking sheet. Press down wit the back of the spoon or your hand to form a round, flat cookie. Bake these cookies for 10-12 minutes until golden on the edges and optionally sprinkle flakey sea salt on top of each cookie while theyre still warm.

Swap Your Round Cake Pans For Sheet Trays

Ever leave the round batter-filled pan in the oven a little too long and have dry, overly-browned edges around your cake? Same. Bellamy has one simple solution: Ditch the round cake pan once and for all. âBake your cakes in a sheet tray rather than a round cake pan for even and moist layers,â she says. Baking in sheet pans helps the batter bake more evenly . Then, you can use a stainless steel cutting ring to cut out your desired shape. Goodbye, dry, crumbly edges.

These Flourless Muffins Are Totally Customizable

One of my favorite aspects of this flourless pumpkin muffin recipe other than that theyre Paleo and refined sugar-free is that they can be customized with your favorite spices and add-ins without compromising the integrity of the muffin itself. Here are some of my favorites:

    • Nuts and seeds, like pecans or walnuts in addition to the pumpkin seeds
    • A drizzle of honey or maple syrup and a sprinkle of cinnamon before serving

If you cant decide on adding anything extra, just make half of a batch with the add-ins and half without, like I did with dark chocolate chips. YUM! They were so good in every which way. Trust me, you wont regret it!

Is There Chocolate In This Cake Batter

    Gluten-Free Baked Goods

Like our chocolate crazy cake, this cake is made chocolate-flavored with cocoa powder, not with melted chocolate in the batter. It calls for dairy-free chocolate chips to be mixed into the smooth batter, but they’re optional.

When I’m serving this chocolate cake without frosting, I like to melt 1 ounce of chopped chocolate in the boiling water that’s mixed with the cocoa powder. It helps to add some more chocolate flavor and richness to the cake itself.

The frosting itself also calls for dairy-free chopped chocolate that’s mixed with hot coconut cream to create a dairy-free chocolate ganache. If you’re dairy-free, you need to be sure your chocolate is also dairy-free.

What Inspired You To Become A Baker Why The Focus On Gluten

The idea for a gluten-free, allergen friendly bakery was born from my desire to create traditional baked goods for my son Aiden. He lives with over 20 food allergies, including wheat. Aiden also abstains from gluten, including barley and rye. He is very restricted in the things he can eat. His food allergies often limit his participation in social events. The focus was, is, and will remain gluten free for a few different reasons. First, because this is a home bakery, my son Aiden cannot be exposed to traditional flour.

Second, as the business has grown, I discovered many new customers came to us because they were looking for gluten free baked goods. They wanted delicious treats that had a light texture, which can be hard to find. The Allergy Table baked goods have become a staple for many of our repeat customers who tell us how pleased they. They are overjoyed finding a bakery that offers everything they were looking for in a gluten free product.

Was the cake perfectly golden at thirty minutes, or was it thirty-two? Ugh, I can’t remember. Spare yourself the headache of remembering every small tweak you made to a recipe and the inner dialogue of turmoil as you struggle to recreate your steps a year later and keep a pen and paper handy while you bake. âUse a thermometer and timer to take notes of what works for you this year so that you can continue to perfect your recipes for next year,â Bellamy says.

Healthy Fats For Baking: Get Slim By Eating Fat

6 BEST GLUTEN-FREE FLOURS â£â£ for all your baking recipes!

Now that weve got the sweetness and the structure aspects of baking covered, its time to tackle the fats.

Fats provide moisture and tender texture to baked goods. They give rich mouth feel to soufflés, the silky finesse to mousse and golden, flaky goodness to pie crust. But what they do in your body is even more important than what they do in the kitchen.

The fats you eat influence inflammation and metabolism. They affect how cells communicate with each other. They even affect how your genes express themselves! And when they are used at the wrong temperatures they can cause oxidative damage that can mutate cells and encourage cancer.

But using the right fats, in their appropriate temperature range, is one of the best things you can do for your health. Healthy fats can help reduce inflammation, boost brainpower, discourage wrinkles and even flip your bodys fat-storage switch off. And these are the kind of fats we rely on at Healing Gourmet.

Stock your pantry with these heat stable, REAL fats for delicious baked goods with benefits:

The fats to AVOID in your baking include hydrogenated oils/trans fats as well as fats that are high in omega-6 including: vegetable oil, corn oil, canola oil, peanut oil, grapeseed oil, and soybean oil. .

Beans: A Secret Ingredient For Springy Moist Cakes

Yellow cupcakes made with cannellini beans and a chocolate cake made with chickpeas?

You read that right. Beans are one of the secret ingredients youll find in many of our dessert recipes here at Healing Gourmet. Used properly, they provide light, springy structure, moisture and tenderness to baked goods. One word of caution: Baked goods made with beans can have a slight beany flavor for up to 12 hours after baking. This flavor will dissipate, so be patient. Its worth the wait.

When using canned beans, opt for Eden Organic. In addition to being grown without the use of pesticides, Eden also packs their beans in BPA-free cans.

Along with canned beans, bean flours are another good option to have on hand. Bobs Red Mill is a great brand, found at most food retailers across the U.S.

Because bean flours are dense, try adding bean flour for up to 25% of your gluten free flour mix. Here are the most popular bean flours and how to use them:

    • Garbanzo Bean Flour: Use 7/8 cup to replace 1 cup of wheat flour in baked goods.
    • Black Bean Flour: Use as part of your baking mix for chocolate cakes and brownies.
    • White Bean Flour or Fava Bean Flour: Mild in taste, white bean flour or fava bean flour are suitable for use in most recipes calling for white flour. Substitute 1/4 of the white flour for bean flour.

Get creative with canned beans, bean flour and nut flours in your baking.

Can You Share A Story Of A Customer Whos Been Greatly Impacted By Your Business

I feel blessed with the privilege to impact concerned mothers more than anyone else. I know the struggle that allergy moms face with their children. Its no surprise when a fellow Allergy Mom hugs me with tears in her eyes, thanking me for creating The Allergy Table bakery.

As a former school teacher and an allergy mom myself , I understand the struggle moms face better than just about anyone. I love hearing stories about a child who enjoyed their first safe birthday cake or cupcake. I adore hearing from adults who have been missing out on bagels & cookies because of food restrictions, and now they can enjoy them like they once did. It justifies all that The Allergy Table does as an allergen friendly bakery, and encourages us to do more.

Healthy Flours For Healthy Baking: Better For Blood Sugar& Gluten Free Too

Recipe resource for quick easy paleo and gluten free breads, desserts ...

The first step in making healthier baked goods is to take a close look at the flour you use. Many bakers now choose whole grain flours over refined white flours. However, whole grain flours are still very high in carbohydrates and score high on the glycemic index.

And when it comes to your health, thats a really bad thing. High glycemic foods cause your blood sugar to spike, raising insulin levels. Your blood sugar is directly linked to nearly every chronic disease including diabetes, cancer, heart disease, metabolic syndrome, obesity, macular degeneration, PCOS and many more.

And because insulin is the fat-storage hormone, eating high glycemic foods promote weight gain too.

If you want to avoid that muffin top then stay away from grain based flours.

And heres another reason to avoid traditional flours: Most are made from wheat and contain gluten an allergenic protein that causes health issues for many people.
