New York Chocolate Brownie Cheesecake
Im not the target audience for Hollywoods take on New York cheesecake. I live a few blocks from Juniors, the chainlet that inspired Hollywood to create this recipe after he visited during his City Bakes series. So I can walk 15 minutes to grab a slice or I can spend the better part of a day baking this brownie-cheesecake mashup. It starts with a sponge base , adds a layer of chocolate brownie batter , then swirls in cheesecake batter . After an hour baking and four more in the fridge, it turned out well, even with my mistakes . The cheesecake was a lactic smack in the tastebuds and the brownie was rich as ganache, but they played surprisingly well together. Maybe it was thanks to the sponge, which remained doggedly fluffy beneath the wet layers. If you can while away a day in the kitchen , bake this up just plan to share. Juniors serves its cheesecake in mountainous slices, but I cant imagine having more than a thin piece of this super-intense rendition. Nick Mancall-Bitel, editor
Note: A 9-inch springform pan does not fit in a 9-inch baking dish for the water bath, so get a bigger pan or bend a 9-inch tinfoil pan, as I did.

On The Great British Bake Off this week, it was the ten remaining contestants’ chance to shine as they created unbelievable, gravity-defying and jaw-dropping bread creations.
Bread sculptures – of the 3D variety – were the showstopper challenge, with Paul Hollywood and Mary Berry suitably enthused with the creations as they admitted they would “never” have been brave enough to attempt some of them.
Sadly, another contestant disappointed and exited the competition – but, don’t worry, there is plenty of baking-related excellence still to come, with dessert week taking place on Wednesday night next week.
The BBC One show has enthralled Coventry and Warwickshire, and below is your chance to have a go at some of the recipes from the contest…

Scones The Great British Bake Off Technical Challenge Recipe

This is the extremely short version of the recipe that the bakers had to follow in the second Technical Challenge in the Season 1 of the Great British Bake Off.
- 500g strong white flour, plus a little extra for rolling out
- 80g softened butter, plus a little extra to grease the baking tray
- 80g caster sugar
- 1 free-range egg, beaten with a little salt

I know were late to the party, but my husband and I have recently fallen in love with Mary, Paul, Sue, Mel, and all of the contestants on The Great British Bake Off. Were watching on Netflix where, apparently, the seasons are in no particular order which makes it even harder to avoid spoilers.
Rioter Christy Childers started of Great British Bake Off cookbooks from contestants in 2015 and its amazing to see just how many more cookbooks have been published from the GBBO hoards in just three years. Mary Berry is especially prolific.

Paul And Merry Were Impressed With The Bread Sculptures On Last Night’s Great British Bake Off
Ingredients: a package of yeast, two cups of water, three tablespoons of sugar, two teaspoons of salt, a quarter of a cup of oil, seven cups of flour and food colouring
– Mix the water and sugar, making sure that the latter dissolves.
– Add the yeast into the sugared water, before allowing it to stand in a warm place for around five minutes.
– Add the salt, and the oil. Stir well.
– Then, add the flour – a little at a time – until it forms a soft ball which is easy to manouevre. If it is sticky, add more flour.
– Knead and shape, using your imagination to create some creative art: snakes, baskets, bicycles, lion faces etc.
– The more you knead the bread, the better it will rise. Stick the parts together to complete the art work, using water on your finger to act as a glue substance.
– Let the dough rise for ten minutes to half an hour.
– The pieces, of course, will grow in the oven as you bake it at around 350 degrees for 20 to 45 minutes, depending on how large your sculpture is.

Paul Hollywood’s Pork Pies With Quail’s Eggs
Series 2, technical challenge
Just perfect for a picnic or a party, these little pies have a secret centre. As with all pies it’s important to take care when assembling, to be sure that the pastry is well sealed so all the tasty juices can’t escape during baking.
boiling water 100mlleaf gelatine 1 x 7g sheet
You will need: 1 x 15cm and 1 x 20cm round cutter a 6-hole muffin tray.
Preheat the oven to 190C/gas mark 5. Sift the flours into a mixing bowl. Add the butter and rub into the flour with the tips of your fingers until the mixture looks like fine crumbs. Make a well in the centre.
Put the lard in a pan and heat until it melts remove from the heat. Add the salt to the boiling water and stir to dissolve, then add to the lard and stir to combine. Pour the hot lard mixture into the well in the flour. Using a wooden spoon gradually mix the flour into the liquid. Keep mixing until a dough has formed.
When the dough is cool enough to handle, tip it onto a lightly floured surface and work together quickly into a ball. If the dough is still a bit lumpy, leave it to cool slightly and then work it for 1 to 2 minutes longer, though it’s vital to use the pastry while it is still warm and pliable because once it cools the fats begin to harden and the pastry is likely to crack.
To make the filling, finely chop the onion, pork, bacon and parsley. Mix together and add some salt and pepper.
Leave to cool overnight or in the fridge for a couple of hours before serving.

I was a latecomer to “The Great British Bake-Off” . I started watching the show in late 2016, after Series 7 premiered on PBS. Id just left a decade-long marriage and GBBO was a balm.
I downloaded the PBS app and watched season after season, mostly on sleepless nights. I hadnt baked much beforeaside from the occasional brownies from a boxand the show was a real education, the Technical Challenges especially. In it, baker-contestants must rely on their expertise and intuition to follow a recipe for a baked good they may have never heard of or seen. The instructions are often as vague as, simply, Bake.
I started to find myself in the kitchen, often at 3 a.m., trying to replicate what the bakers attempted in the tent. The technical bakes provided me with a solid foundation in kitchen chemistry and baking technique, and only encouraged me to learn more.
Since 2016, Ive become an exceptional home baker and am still a devoted GBBO fan. The Technical Challenges have gotten wackierMaids of Honor and rainbow colored bagels ? No thank you! But, Im always studying, and I continue to gather pointers from the show.

Paul Hollywood’s Camembert And Quince Flatbread
Series 3, signature challenge
Incredibly quick to cook in a heavy pan on top of the stove. Paul suggests eating these with a fresh green salad.
Makes 16strong white bread flour 500gtable salt 10gfast-action dried yeast 1 x 7g sachetlukewarm water 320mlquince jelly 150gvegetable oil
Place the flour, salt and yeast in a large free-standing electric mixer with a dough hook attachment. Start the machine running on low speed while you gradually pour in three-quarters of the water. Leave to mix for a minute, then add the rest of the water. Turn the mixer speed up to medium-high and leave to mix for about 7 minutes to make a shiny, smooth dough.
Alternatively, mix together the dry ingredients in a large mixing bowl, then gradually work in three-quarters of the water with your hand. Give the dough a good mix for a couple of minutes, then knead on a lightly floured worktop for about 10 minutes until the dough is shiny and smooth.
Tear or cut the cheese into small pieces, and break up the quince jelly. Add to the dough and gently incorporate by hand, mixing the cheese and jelly evenly into the dough. Place the dough in an oiled bowl and turn to coat with oil, then cover with clingfilm and leave to rise at room temperature for 1 hour until doubled in size.

Some More Insights To The Challenge
Expectation this time is to make a full batch of scones, all of them should be even and flawless. The total time for the challenge is 1 hour. This time the narrator mentions that only Pauls precisely measured ingredients are listed, nothing else and both Paul and Mary mention all the details that the bakers should know themselves. Oven temperature and the baking time also have not been specified so basically the entire process is up to the bakers!

Choux Requires A Strong Arm
In the words of Kimberley Wilson, Series 4 finalist: really not very complicated people are scared of it much more than they need to be cause its actually very simple. Choux pastry doesnt use a chemical raising agent to rise instead it relies on air and moisture in the dough to rise. Theres a stage after youve added the flour in, then you really need to dry the mixture off a bit with plenty of heat and give it a sound beating before you add the eggs, added contestant Glenn Cosby. Ive made choux a million times, andI always remember to use a strong arm when Im whipping up a batch.
*The first two seasons of GBBO aren’t available in the U.S., and I haven’t been able to watch them.
What Are The Technical Challenges
thegreatbritishbakeoff.co.uk describes the technical challenges in The Great British Bake Off as follows:
This challenge separates the wheat from the chaff. Take one basic recipe, with the same ingredients and instructions, and ask our bakers to produce the finished product sound easy? Well, any variation on the finished product will be a result of their own technical knowledge and experience or lack of. Bakers are laid bare in this task and this is where the pressures really on in the Bake Off.
What they dont mention here is that the recipes in the technical challenges are actually much shorter than normal and contain very few details about the whole process. So the bakers are often left to their own assumptions and guesses about what the end result even should look like.
Which makes it really fun!
