Gerard has another pho recipe on her website titled, Quick kale mushroom pho. In this recipe, she does use beef bone broth and fish sauce.

This recipe was posted on January 3, 2018.

While this older recipe is more similar to how pho should be made, its still not quite right . However, there was no uproar over it and there were no accusations of cultural appropriation .

Gerards 2018 pho recipe is a prime example of why sensitivity to the current political climate matters when it comes to your brand and business.

In the wake of COVID, there has been a 150% increase in hate crimes against Asian Americans. Eighty-four-year-old Vicha Ratanapakdee was violently shoved to the ground while walking in San Francisco. He died from his injuries. Another video showed a 91-year-old man being pushed into cars. Former President Trump referring to COVID as the China virus clearly had an impact in how Asians have been treated recently.

Asians are already feeling vulnerable in this political climate. Theyre feeling attacked, threatened, and dismissed. So when you take a food that is so embedded in a culture, change it, and call it your own without giving proper credit, it can feel like youre callously stealing part of their identity away from them.

We Need To Celebrate The Origins And The Creativity That Food Allows

There will always be a higher level of scrutiny when food blogs, chefs, and cooks showcase recipes from other cultures, especially if that person is white. . The cultures history, the recipes origins, and current political climate need to be considered when youre presenting the dish and recipe for the world to see. And if you dont initially take those factors into consideration, you need to acknowledge them when youre being called out by your fans.

Food and culture are synonymous. While food should be shared between and within cultures, the topic of food is a political issue as much as it is a cultural one. Its a precarious moment in time right now, and political sensitivity plays a huge role in how your brand is perceived.

In the case of Tieghan Gerards recipe, I feel she did that or at least attempted to. And, although its not pho, her recipe still sounds pretty good and probably worth trying at home.

Recipe is as follows 1/4 cup olive oil 1 lb ground turkey or chicken 1 medium yellow onion chopped 1/4 cup fresh parsley chopped 1 tablespoon dried basil 1 tablespoon dried oregano 2 teaspoon smoked paprika 1 teaspoon fennel seeds 1/2 cup Parmesan cheese Red pepper flakes 6 medium carrots 4 celery stalks 4 cloves garlic 8 cups chicken broth 6 cups baby spinach 10 oz fresh cheese tortellini Juice of two lemons 2 large eggs In a large Dutch oven combine the olive oil, ground meat, onion, parsley, basil oregano, paprika, fennel seeds, 1/4 cup of Parmesan cheese and a pinch of red pepper flakes, salt and pepper. Cool until meat is browned and onion is translucent-about 8 minutes. Add the carrots, celery, and garlic. Cook for 5 minutes. Add broth and bring to a simmer. Cook for 10-15 minutes. Stir in the spinach, tortellini and lemon juice. Cook for 5 minutes more until tortellini is Al dente. In a small bowl whisk together the eggs and the remaining 1/4 cup Parmesan. Slowly drizzle the egg mixture into the broth, stirring constantly and gently to form strands of cooked egg for about 30 seconds. Top with extra shaved Parmesan and fresh parsley or basil leaves.

This week I came across a chicken pho recipe online from HalfBakedHarvest that really bothered me. It bothered me so much I felt compelled to write something detailing the inaccuracies in her recipe and to provide some suggestions on how to pay homage to cultural recipes the right way.

For those of you who arent familiar with the blog, HalfBakedHarvest is known for its accessible, weeknight recipes and beautiful photography. The person behind the blog is Tieghan Gerard.

I first came across this recipe when a friend of mine sent me her Instagram post depicting the dish. When I looked at the image, I could already see inaccuracies in the styling of the dish. Food styling, from my perspective, is used to make the dish look appetizing but also to tell a story about the dish. Therefore, the ingredients used in food styling should be in the dish. My main issue here is with the shallots. Raw shallots are never used in pho. I was discussing this with my parents and they said, We have eaten pho our whole lives, and there is no way you would include shallots in pho.

There are also a lot of variations of pho depending on the region of Vietnam. For example, Vietnamese people in the north like a broth that is a bit salty while people in the south like a sweeter broth. Northern Vietnamese also prefer using chicken and keeping the add ons simple while Southern Vietnamese prefer beef and using additions like hoisin sauce, sriracha, and sliced chilis.

And for once they both go together!! No random out of nowhere talk today because the recipe and the story go hand in hand. Cool!

OKok, so you may hear me talk about my brother Brendan and his girlfriend Lyndsie from time to time. Well, those two are the inspiration, and honestly the reason this recipe came to be. The two of them just returned from a month plus trip to Thailand. They were supposed to be shopping for home goods and such for Lyndsies sister Amber. Amber is an interior designer in LA with a shoppe in Calabasas. While I suppose they did manage to squeeze in some of that, I really think they just drank Mai Tais, ate delicious food, rode elephants, and hung out by the poolwhen in Thailand, right?

While they were searching for all their goods, they also came across new recipes. This Chicken Khao Soi Soup is Lyndsies favorite and she demanded I make it right away. OK, thats a slight exaggeration, but she said it is her all time favorite, and the moment I looked up the recipe I knew she was on to something that I had to make. I also knew just how to put my own little spin on the recipe.

Anyway, the point is that they helped me to create this soup, and without their adventures I would never have been able to experience the deliciousness that is Chicken Khao Soi. I also wouldnt have been able to share it with you guys!!
