Dont Overcrowd The Pan
Brussels sprouts need some breathing room on the pan, or theyll produce so much steam that they never crisp up. Its better to use two pans, arranged on separate racks near the middle of the oven, than to cram too many sprouts on one pan. See my note in the recipe for more details.
Tip: Here is my favorite large, rimmed baking sheet .
How To Make Brussels Sprouts At 350
- Bring the temperature in the oven up to 350 degrees.

- Salt and pepper, to taste, should be sprinkled uniformly over the entire surface in a few liberal pinches.
- Then proceed to move around the Brussels and turn each of them over so that the sliced side is facing down.
- Bake the Brussels sprouts for 30-35 minutes, or until the bottoms are browned and they have a faintly charred and crunchy exterior.

The Secret Ingredient For The Best Brussels Sprouts
The key to success with roasted or baked Brussels sprouts is salt. Salt makes the roasted caramelized flavors pop!
Salt the sprouts generously as they are going into the oven, more than you might normally salt vegetables. Once out of the oven, taste, and salt again if need be.
The recipe calls for a pound of Brussels sprouts. We’ll usually make a little more, just so we have more to snack on. We can eat them like popcorn!
Tips For Making Roasted Brussel Sprouts
Some people say to roast vegetables, the oven needs to be scorching hot. Thats true, to a point. High heat is what caramelizes the sugars in the veggies, but if the heat is too high, the olive oil will burn. Also, before you turn on the oven, move one of your oven racks to the center position. Thats the best place for baking/roasting anything in the oven.
Overcrowding veggies on the pan causes them to steam cook, and thats not what youre looking for with this recipe. If you need to use two sheet pans, go for it.
I realize that you may not have the time to do this step, and its okay if you dont. Ill just say that placing the flat sides against the pan traps the heat inside the sprouts, allowing the insides to become soft while the high heat caramelizes the outsides.
This, my friends, is roasted brussels sprouts heaven.
I think the key to why my recipe got so successful was due to the fact that the brussel sprouts were roasted first, THEN tossed in the vinegar and honey after, thus veggies were still crispy, but had a wonderful glaze all over, too!

Should I Boil Before I Roast
Boiled Brussels sprouts have a slightly sweet flavor, but dont enjoy roasted Brussels sprouts as much. Boiling Brussels sprouts makes them more digestible, and gives them a nice flavor. Boiled Brussels sprouts are also more tender than their roasted counterpart. However, you should boil your Brussels sprouts for only a few minutes to avoid cooking them beyond their desired texture. Boiled Brussels sprouts should be crispy and crunchy, but not too soft. This is because the longer they boil, the more they absorb water and become softer. Once youve boiled them for a few minutes, you can then finish them with a bit of salt and olive oil.
How To Tell If Brussels Sprouts Are Bad
To know how to tell if Brussels sprouts are bad, rotten, or spoiled, you can generally use your 5 senses and come to an accurate conclusion.
If they look bad and have developed mold, they have likely gone bad. If they smell strange and have an undesirable odor, then theyre probably bad. If they seem slimy to the touch or are soft, its likely theyve gone bad. Or if they just plain taste off, then theyre bad.
If you suspect that your Brussels sprouts have gone bad, do not take a risk, but rather throw them away instead.

Toss In A Bowl Not On The Pan
Do not make the mistake of trying to toss the brussels sprouts in the salt, pepper, and olive oil directly on the sheet pan, instead of in a mixing bowl. You really cant toss them as effectively and evenly on the sheet pan. It does dirty a mixing bowl, but the oil disperses much more evenly, which makes a big difference for browning. Its also a lot eaiser than trying to do it on the sheet pan.
Baked Brussels Sprouts Ingredients
To prepare Brussels sprouts in the oven, the following are the ingredients you will need:
- Fresh Brussels sprouts: When it comes to freshly harvested Brussels sprouts, the usual rule is that the sweeter they are, the smaller they are. The bigger they are, the more cabbage-like their flavor will be.
- Olive oil: or the oil you choose to use in the kitchen.
- Sea salt and freshly-cracked black pepper: We are going to season our food with a generous amount of freshly cracked black pepper as well as sea salt. However, please check the list that follows for some suggestions on extra flavors and sauces that you may also add.

Use Smart Oven Placement To Finish
If the brussels sprouts are not golden enough on the bottom to your liking, then put the sheet tray back into the oven, setting it on the bottom floor of the oven. This is assuming you have a gas oven. If you have an electric coil on the bottom of your oven thats in the way, then adjust the rack so that it sits right above the coil, and put the tray on that. Continue baking for 2-3 minutes, checking for brownness on the bottom. The intense close heat should brown them sufficiently within a couple minutes.

Is Liking Brussel Sprouts Genetic
However, it is possible that certain genes may influence a persons likability of Brussel sprouts. For example, a study published in the journal BMC Genetics found that a persons ability to taste a bitter compound called 6-n-propylthiouracil may be influenced by genetic factors. Those who are more sensitive to the bitter taste of PROP are less likely to enjoy foods that contain this compound, such as Brussels sprouts. Therefore, it is possible that a persons liking of Brussels sprouts may be partially determined by their genetics.
