Its a very tough discussion, as you can argue that surely the early Greeks barbecued their meat too. What do you think when and where did it start?

You can use any kind you want! I live right down the street from Salt Lick BBQ in Driftwood, TX, and Im obsessed with their Spicy BBQ Sauce.

Something to keep in mind: a lot of store-bought BBQ sauces have a lot of added sugar. Frankly, its what makes it taste so good and sugar is vital for getting that thick caramelization. You can make your own homemade bbq sauce if you prefer.

What Makes Chicken Thighs So Delicious
Dark flesh makes up the bulk of a chicken thigh. When compared to other chicken parts, dark meat is often the leanest option. Compared to chicken breasts, chicken thighs are generally more moist and tasty. One of my favorite pieces of meat is Chicken thighs for roasting chicken. It is quite similar to chicken breasts that you can construct and generate more dishes by tenderizing the thighs using specific rubs or marinades for a variety of flavors and dinners.
While comparing chicken thighs to chicken breasts, chicken breasts are made up of predominantly white flesh which is a little harder and might dry out quicker when cooking if overdone. Chicken thighs have a rich, increased flavor to them since they have a larger fat content compared to chicken breasts. This is why it tastes juicier and more tender when cooked. Chicken thighs are identical to chicken breasts but preserve the tasty and delicacy of the dark flesh.
What Cut Of Chicken Is Best For Bbq Chicken In The Oven
Well, in theory, you can baste BBQ sauce over any cut of chicken. There are four cuts of chicken that you would have seen being used for baking or grilling:
- Chicken Legs
- Boneless Thighs
- Boneless breast
The thigh and leg cuts are what are called ‘Dark Meat’ cuts of the bird. These four cuts can be also split as ‘Bone-in’ or ‘Bone-less’.
The chicken breast is obviously a boneless cut and you get boneless thigh pieces too.
What works best for baking or grilling recipes, especially with a sauce on it, are a mix of Bone-in cuts like thigh and legs. There are two reasons why bone-in cuts are best for this –
- The bone imparts a flavour to the meat. Also, because they take longer to get cooked, it gives enough time to infuse the flavours from the sauce or spice to the meat.
- Bone-less meats cook very fast and run the risk of getting overcooked by the time the sauce caramelized.
So with bone-in pieces, first, you get the most flavour, and second, it cooks at the same time as the sauce caramelizes. Delivers the best flavour this way.

Key Steps For Bbq Chicken In The Oven
- Line your baking sheet with foil. BBQ chicken is messy and sticky prepping the pan with foil makes for way easier cleanup.
- Season the chicken directly and starting roasting it first. Another advantage of cooking the chicken solo for a bit? You can generously and directly season it. I think salt and a little garlic powder are all you need, but you could use your favorite spice mixture or rub too.
- Meanwhile, reduce the sauce. Right after you get the chicken in the oven, pour a bottle of your favorite BBQ sauce into a saucepan and bring to a simmer. The sauce will take about 25 minutes to reduce by half and should sync up nicely with the cooking time of the chicken.
- Crank up the heat to finish. Rather than turn on the broiler and risk burning the sauce in the final minutes, coat the chicken with the reduced sauce and turn up the ovens temperature. This makes for chicken that is sticky and burnished all over.
