  • I prefer using a blend of shredded cheddar and mozzarella in my creamy stovetop mac and cheese, but youre welcome to use any cheese you have on hand.
  • To add more flavor to this mac n cheese, I like to add 2 teaspoons of garlic powder and a dash of paprika or ground nutmeg.
  • Looking for a more distinct cheesy taste? Use ¼ cup of shredded Parmesan or cheddar jack cheese, ¾ cup of shredded mozzarella, and 1 cup of shredded sharp cheddar.
  • Note that you can use any milk youd like in this homemade mac and cheese recipe. If you use a non-dairy milk, double check that its unsweetened and unflavored first.

Put sauce pan back on burner. Heat until boiling, stirring all the time. Add 8 oz of cheddar cheese until melted.

How To Make Ahead And Freeze

Creamy Baked Mac and Cheese

You can freeze this unbaked casserole and then bake it later, but the mac and cheese isnt quite as creamy as it would be if you baked it straight away. I, however, dont mind exchanging a little creaminess for knowing I have a freezer meal waiting.

To freeze, make the recipe up to the point where you combine the sauce and the noodles, but dont bake it. Instead, let the mac and cheese cool in the pan on the counter.

Cover with a layer of aluminum foil. Then plastic wrap. Then freeze. It will keep for one month in the freezer.

Bake from frozen for one hour. Top with breadcrumb topping and place under the boiler for 15 minutes, or until the crumbs are golden.

Making Mac And Cheese Ahead Of Time

  • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
  • Before baking, let dish sit on counter for 30 minutes.
  • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

How To Avoid Grainy Cheese Sauce:

  • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
  • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
  • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
  • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
  • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

For me, the best mac and cheese starts with a béchamel sauce made with a basic roux. The roux in this easy recipe is made with butter and flour. This is the base of most cheese sauces unless you use processed cheese like Velveeta.

  • Prep: Preheat the oven and grease a 3 qt. baking dish with non-stick cooking spray or melted butter.
  • Mix topping: In a small bowl, mix the topping ingredients.
  • Cook pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until almost al dente . Drain, transfer the pasta to a large bowl and toss it with a little bit of olive oil .
  • Make a Roux: In a large saucepan over medium high heat, melt the butter. Sprinkle in the flour and whisk to combine. Continue to cook, stirring for about a minute. Whisking constantly, slowly pour in the milk and the half and half until combined and smooth.
  • Season Béchamelsauce : Season the creamy béchamel white sauce and simmer until the white sauce thickens. Add the shredded cheese, in small increments, one at a time only adding additional cheese after each cheese addition has melted and incorporated.
  • Mix macaroni and cheese sauce: Pour the cheese sauce over the cooked macaroni and toss well.
  • Bake: Spoon the macaroni and cheese into a baking dish and top it with the Panko mixture. Bake for 20 minutes. If the topping is not golden enough, you can place the baking dish under a broiler and broil for 2-3 minutes.

    After combing through some magazines, I finally remembered a recipe card I had that my grandmother gave me, what seems like a million years ago.

    It is the Velveeta Macaroni and Cheese she served me at her house. It is basic, traditional and very old-school.

    I know that some people dont like using Velveeta, and thats perfectly fine.

    I have plenty of macaroni and cheese recipes on the site that do NOT call for Velveeta.

    But this is the old school recipe using Velveeta. Obviously its going to have it in it.

    It fits perfectly with the letter V and I am happy. So were my kids.

    We are a house of Velveeta Macaroni and Cheese lovers.

    This was the first time I made it for my step daughters, and my own children remembered eating it several times when they were much younger.

    Yes, my tastes have stepped off a little from this simple recipe.

    Dear Jewel: I wish you had contacted me sooner, because thats a long time to be having your cheese sauce curdling. But I hope the following advice will ensure smooth sailing, or should I say smooth saucing, the next time you make it.

    To review, cheese sauce is simply white sauce, also called béchamel, that has been flavoured with cheese.

    To make the white sauce, you start by making roux, a mixture made by cooking in a saucepan a combination of flour and butter or other fat. You cook the roux a short while to get the raw flour taste out of it. For a white sauce, you do not let the roux darken, as you would for a brown sauce or gravy.

    Warm milk is slowly incorporated into the roux, creating a smooth mixture. If you add the milk too quickly, use cold milk or simply dont whisk fast enough, you could get lumps in your sauce as bits of roux will cook and turn into small balls before theyve had a chance to be smoothly blended into the milk.

    Once youve added the milk and gently simmered and thickened the white sauce, its time to add the cheese.

    How and when you add the cheese is critical to making a smooth sauce.

    Do not add the cheese to the sauce while is still sitting over the heat, as that can cause the cheese to overcook, start to separate and turn your sauce into an oily-surfaced, curdled-looking mess.

    Packaged macaroni and cheese are available in frozen form or as boxed ingredients for simplified preparation. Boston Market, Michelina’s, Kraft Foods, Cracker Barrel, and Stouffer’s are some of the more recognizable brands of prepared and frozen macaroni and cheese available in the United States. “Macaroni and cheese loaf”, a deli meat which contains both macaroni and processed cheese bits, can be found in some stores.
