Follow the step-by-step process to make the crust and the cheesecake from scratch.

Step One: Preheat the oven to 350.

Step Two: Combine the crust ingredients in a food processor and process until well combined.

The gluten-free mixture will resemble sand as far as texture goes. This is how you know it’s combined well.

Pour into the springform pan and press down firmly using your fingers or the back of a spoon.

Expert Tip: If you don’t have a springform pan you can make this in a deep-dish pie plate.

Step Three: Bake the keto cheesecake crust for 10 minutes until slightly golden browned.

Step Four: Meanwhile, process the cream cheese in the food processor until smooth. Add the sour cream, eggs, vanilla, and sweetener. Process until well combined, and scrape down the sides as needed.

Expert Tip: You can also use a large mixing bowl and a hand mixer.

Step Five: After the almond flour crust has been partially baked, add the filling to the crust.

Step Six: Bake the keto cheesecake for 50-60 minutes or until the center no longer jiggles. It will rise and then fall. This is normal. Let cool to room temperature.

Make the Peanut Butter Bars:

In a mixing bowl, combine the peanut butter, melted butter, almond flour, sugar-free confectioners sweetener and sea salt. Stir well until completely combined. A thick dough will form.

Line a 9 x 5 loaf pan or 8 x 8 cake pan with parchment paper Note: if you use a loaf pan, the bars will be very thick, which I think is fun, but a square cake pan makes bars that are more thinnerslash more reasonably portioned.

Transfer the peanut butter mixture to the parchment-lined pan, and spread into an even layer.

Make the Chocolate Layer:

Microwave the chocolate and butter in a microwave-safe bowl for 20 second intervals, stirring well between intervals, until melted, about 40 to 60 seconds.

Pour the chocolate mixture over the peanut butter layer and freeze for 2 hours, or until the bars are set up.

When youre ready to serve, remove the bars from the pan and transfer them to a cutting board. Use a sharp knife to slice desired sized bars. Enjoy!

    The great news is that because these bars have nothing in them that spoils easily, they can be made well in advance.

    I recommend storing them in the fridge in a covered container, so that they dont get overly soft. They do stay firm at room temperature for a few hours, if you dont live in a hot climate. The chocolate topping could get mighty soft and melty in the summer!

    They can last up to 3 weeks, if properly stored and refrigerated. To freeze, I would wrap up the bars tightly in plastic wrap, to avoid freezer burn. They can be frozen for several months.

    This recipe has several steps, but its still very easy to make! This recipe is perfect for beginner cooks or a family meal prep day! The majority of the work takes place in a food processor or a very strong blender.

    Keto no bake cookie dough peanut butter cheesecake bars is my new summer favorite low carb no bake dessert. Gluten free, sugar free keto cookie dough topped with peanut butter cheesecake and dark chocolate!

    This gluten free and sugar free dessert is rich and wonderful treat to enjoy with coffee or tea. Children love it too, so this is one of my new favorite low carb family desserts. The best part, except the yummy taste is the time to prepare it. You can make it in 10 minutes!

    This recipe is based on 2 of my older super delicious recipes. Keto cookie dough and my favorite peanut butter cheesecake bars. So, I combined some components of these two favorite recipes and created this no bake low carb dessert.

    It’s totally true that the best things are made when you need to solve a problem. I had a problem few days ago. It was super hot outside, air condition in our house is still not in function and I was craving a dessert. It was not the time to bake, because to heat the house with the oven, wasn’t the option. So, I was thinking for few seconds, and created this recipe! And, it was so good!!!
