These easy to make, keto shake bake pork chops are savory, crisp, and absolutely delicious.

They are low carb & gluten-free, breaded and baked pork chops that you will love just as much if not more than the traditional ones.

If you grew up in the ’70s, then you have probably made or have been served shake & bake style chicken or pork chops.

It was all the rage when I was younger, as people were trying to avoid frying because of the fat involved.

So it is ironic that years ago, when I started eating a low carb high-fat diet that I tried to recreate a shake & bake style version with more fat, but still the ease and simplicity of baking.

I was surprised that my family prefers the taste of my low carb gluten-free version of shake bake pork chops to the old-school traditional kind!

My hubby thinks these have a lot more flavor than the store-bought kind.

I have made different low carb versions of shake and bake breading in the past using different spices and different nut or seed flours that also taste amazing.

Still, this new version is the easiest to make and has the most accessible ingredients to acquire.

I get so many DMs and messages about the recipes and see your posts online, so first I want to start by saying THANK YOU!! Yall are really the best! Today I am bringing you guys a healthy, keto friendly spin on my favorite southern dish. Its one that I bribe my aunt to make for me every time Im in North Carolina. The dish that if my mother asks what I want for dinner, I will always yelp out. Im talking about the fried pork chop!

I mean really. Look at the juiciness and all that crunchification! Whew!

The process to make these breadcrumbs is easy: simply put the pork rinds in the food processor and grind until you get your desired texture. The fun part here is that you can use any flavor of pork rinds to create different flavor combinations, but pay attention to the ingredients. Some flavors, such as barbeque, have sugar in the rub and make it non-keto compliant. Hint: You can always add your own flavorings to create your own blend, like I did in this recipe. One of the things that adds to the crunch and flavor of this recipe is parmesan cheese. In my case, I used GoVeggie Vegan Parm for my porkchop as I am living as close to the dairy free life as possible, but using grated parmesan gives you a salty, savory boost of flavor and crunchiness in the final product that is totally drool worthy!

  • Once you take it out of the oven, cover with foil and allow to rest for 10 minutes.

    Why Should I Brine My Pork Chops

    Pork chops are notorious for ending up dry and bland. Brining in a saltwater bath for at least 15 minutes will allow moisture to be drawn into the meat making it more juicy and flavorful.

    I like to brine my pork chops for at least a couple of hours to see some breakdown of muscle tissues and even more moisture, but a quick soak should do the trick as long as you promise not to overcook the pork as well. Trust me, this makes a difference and requires no special equipment or skill.

    This recipe uses a few aromatics in addition to the salt and water, but feel free to only use salt and water if you need or desire.

    The simplicity of this dish makes it a no-brainer when it comes to prepping a weeknight meal, but the gourmet-level results are exquisite to serve as an elegant dinner for an at-home date night or for company.

    Succulent as-is, so theres no need for sauce, but I do enjoy a dip of sweet and sour sauce, crockpot applesauce, or honey barbeque when I want something with some punch. Even ketchup tastes great with these pork chops, so grab what you like and dig in!

    What Cut Of Pork Chop Works Best For This Recipe

    My preference is a boneless, center cut, loin chop for this recipe. I usually purchase a pork loin and cut my own so I can control the thickness of them.

    I also leave the fat on the pork chop for the best flavor, but you can trim it off, if you prefer.

    Thick cut, bone-in pork chops are my absolute favorite, but not when used for a Shake ‘N Bake style pork chop. I really recommend sticking with a boneless pork chop for this recipe.

    What Temperature Should Pork Chops Be Baked At

    Baking pork chops is easy, but to make sure they are properly done, youll need to cook pork chops for at least 7 minutes per 1/2-inch side, in a 400-F oven until the internal temperature reaches 145F.

    This is to ensure that the pork is fully cooked throughout and safe for consumption.

    Shake And Bake Pork Chops With Mayo:

    Keto Pork Chops with Mayo Sauce | Yummy Keto Cooking | Ketomeals

    Some people LOVE coating the chops in mayo before adhering the coating. I totally get it, there is a parmesan breadcrumb chicken that uses mayo too that is very popular. While this recipe does not call for or need mayo, if you do use it you will get a nice THICK coating. Cook it at 400 degrees for 30-35 minutes or until you reach 145-155 degrees.

    How To Make Shake ‘n Bake Style Pork Chops In The Ninja Foodi

    This is such a fast recipe, that you want to start preheating the Ninja Foodi with the basket in for 10 minutes. I use broil for preheating so I get the basket really hot. This helps with getting a good crust on the outside of the pork chops.

    If you want to make 4 pork chops at one time, you will need to add a layer to the basket. I use a canning rack to do this and it works great!

    The canning rack that fits perfectly in the basket is the Turbokey 7.9″ with 2″ legs.

    It is important to preheat the rack as well and I recently put a nut and bolt through the middle to create an easy way to remove the rack.

    While the Ninja Foodi is preheating on broil, mix up your breading and spices by combining them in a large bag or container.

    Make sure you mix it up well and break up any clumps of seasoning.

    I let my pork chops sit out for about 15-30 minutes to bring them to room temperature and then simply salt and pepper both sides. Seasoning in layers is the key to great flavor, but you don’t need much. I used maybe ¼ tsp of fine grind sea salt and black pepper for 2 pork chops.

    Beat 2 eggs in a shallow container for dipping the pork chops in. I use the coating trays from Pampered Chef, but any container will work as long as you can fit at least 1 pork chop in it.

    Dip the pork chops in the egg mixture to coat both sides and put 1-2 pork chops in the breading mixture and shake to coat. Repeat with the other 2 pork chops.

    It used to be that the USDA recommended that you cook pork to an internal temp of 165/74, but that is no longer the case.

    When you cook pork chops to an internal temperature of 165, they are usually pretty dry. Overcooking is the #1 reason your pork is tough and dry, so please don’t do it!

    The new recommendation is to cook whole cuts of pork to an internal temperature of 145/63 AND let it rest for 3 minutes.

    I realize it’s hard to change habits, and if it’s been ingrained in you that pork must be cooked to 160, please try the new recommended temperature. The difference is unbelievable and you can say goodbye to dry, chewy pork forever!

    The first thing is to dreg your cutlet in flour, then right into an egg wash, then drop it into a plastic zip bag full of your seasoned crumbs. Shake, shake, shake, like rock and roll never died.

    Now take the breaded cutlets out and lay them into a lightly oiled cast iron pan and set that over the hottest part of the pellet grill.

    Turn the cutlet after a few minutes.

    How To Make Homemade Shake And Bake Pork Chops

    How To Make Keto Smothered Pork Chops | Keto Pork Chop Recipe

    Preheat oven to 400°F.

    Add the almond flour, parmesan cheese, pork rinds, smoked paprika, onion powder and salt to the bowl of a food processor.

    Mix until finely ground and well combined. Pour them into a sealable large food storage bag and set aside.

    In another mixing bowl, add in the egg. Dip each pork chop into the egg, allowing the excess egg to drip off.

    Then drop it into the bag, seal it up and shake to coat all sides of the pork chop.

    Remove and set on a baking sheet lined with parchment paper, and lightly sprayed with olive oil non-stick spray.

    Repeat the process until all the pork chops have been breaded. Lightly spray the tops of the pork chops with the olive oil non-stick spray.

    Bake for 15 minutes. Remove from the oven, increase the temperature to 450°F and spray the pork chops again. Continue baking another 10 minutes or until the pork chops reach an internal temperature on a meat thermometer for at least 145°-150°F.

    Allow the pork chops to rest for 10 minutes before cutting into them.
