Have I mentioned yet how easy these cookies are? Besides using super basic ingredients, the method couldnt be simpler. Whisk the butter, sugar, milk, and cocoa powder together in a medium pot until the butter melts. Once boiling in the center, start a timer. Let it simmer for 1 minute. After that, immediately remove from heat and stir in the peanut butter and vanilla extract. Once combined, stir in the oats.

Grab your timer again and let the mixture cool for 4-5 minutes. This gives the oats some time to absorb the liquid, which makes scooping and shaping much easier. If you used a super thin natural-style peanut butter, let it sit for about 10 minutes.

Line a couple baking sheets with parchment paper or silicone baking mats. Drop 1 Tablespoon sized mounds about 2 inches apart on the baking sheets. Feel free to slightly flatten down the cookies with the back of a spoon. Let the cookies set in the refrigerator for about 30-60 minutes. Thats it, were done.

    While my mixture is cooking, I like to measure out the oats and set them aside, so theyre ready when needed.

    Once the mixture is melted and well blended, turn up the heat and bring to a boil for 90 seconds.

    My peanut butter no bake cookies are a snap to make! All you need for these easy cookies is a saucepan!

    This recipe will make 30 cookies, so it is perfect for gift baskets or for a get-together!

  • Heat pan. Heat a medium saucepan with ½ cup of butter, 2 cups of sugar, and ½ cup of milk over medium-high to high . Stir frequently to prevent burning!
  • Boil. Once the butter is melted and the syrup has reached a full rolling boil, cook at a boil for 1 full minute and then remove from heat.
