To get the perfect fork mark/ crisscross pattern try using skewers instead of a fork. I used my trusty wooden skewers, snapped a few in half, lined four up and pressed down. It took more time but I got the picture-perfect cookies of my dreams. A fork works well too of course, try to use one with long tines. For a clean release pull the fork away instead of lifting up, or it youre using the skewers try twisting them.

Peanut Butter Cookie Recipe Ingredients

The full recipe is at the bottom of the post, but heres a quick overview!

  • Butter. I like to use salted butter, but unsalted is fine too
  • Granulated sugar and brown sugar. Use both to get the right texture!
  • Peanut butter. Jif is best in my opinion. Use crunchy pb if you must, but get that natural peanut butter out of here! We need the extra sugar and oil in regular pb.
  • Egg. Acts as a binder to hold our cookies together
  • Vanillaand salt. For flavor
  • All purpose flour. Spooned and leveled
  • A combo of baking sodabaking powder gives us the perfect level of spread and crispy edges.

These vegan peanut butter cookies contain no complicated ingredients and are super easy to make with just a few simple steps.

What youll need :

  • Peanut butter crunchy or creamy
  • Sugar coconut or organic pure cane
  • Flour light spelt, all-purpose, almond flour, gluten free flour blend or chickpea flour
  • Almond milk water is ok too
  • Baking soda baking powder works as well
  • Vanilla can be optional
  • Mineral salt only use if peanut butter is unsalted
  • Preheat the oven to 350 degrees F. Line 2 cookie sheets with silicone mat, parchment paper or leave ungreased.
  • In a large bowl, add the peanut butter and sugar and mix until creamy. Stir in the almond milk and vanilla.
  • Next, add the flour and baking soda, and mix to combine. The dough will start to stiffen and be tough to stir, use your hands to finish mixing it together.
  • Using a trigger scooper, scoop out the dough and roll into balls, about 1 1/4 inch.
  • Place the balls of dough about 2 1/2 inches apart on a baking sheet. Using the back of a fork, flatten in a crisscross pattern. Optionally, sprinkle with sugar or coarse salt.
  • Bake, on the center rack, for 10 13 minutes .
  • Let cool a few minutes, transfer cookies to wire rack and repeat with remaining dough. Makes about 20 24 cookies.

But why freeze baked cookies when you can have freshly-baked peanut butter heaven anytime by freezing dough balls?

All you have to do is roll out the dough balls as if you were going to bake. Roll them in sugar and store in a ziplock.

You can even bake straight from frozen, no need to thaw first. You might need to add 1-2 minutes to the bake time. Watch them!

How To Make No Bake Peanut Butter Balls

  • Begin by lining a baking tray with either a silicone mat, parchment paper or wax paper. Then, in a large bowl, add your powdered sugar, peanut butter, and butter.
  • Cream the peanut butter mixture together before adding the crushed up graham crackers to the mixture. Mix this together until smooth.
  • Once smooth, shape the peanut butter mixture into 1 inch diameter balls. Place the balls on the lined baking sheet and allow it to cool for about 30 minutes in the fridge.
  • Add the semi-sweet chocolate chips to a large microwave safe bowl, and the white chocolate to another. Then, add vegetable shortening to both bowls. Heat bowls in the microwave for 1 minute. If the chocolate isnt melted all the way, keep heating for 20-30 second increments until fully melted. Stir the chocolate and shortening together until smooth.
  • When the peanut butter balls have cooled, take them out of the fridge. Dip each peanut butter ball into the chocolate and place it back on the baking sheet.

    A frequent question when baking with peanut butter is which type to use. Most recipes will advise you to use conventional peanut butter. Well, I have made this recipe with both natural and conventional peanut butter, and I only noticed a slight difference.

    The cookies made with natural peanut butter had a bit of a grainier, sandier texture than the cookies made with conventional peanut butter. They also crumbled a bit more. I think this is because conventional peanut butters contain added sugar and oils to make them shelf stable. This in turn adds a bit more fat/sugar and therefore moisture to the cookies, helps them hold together, and gives them a soft texture.

    The results, however, were not so different that I would clearly recommend one kind over the other. Both produced delicious, soft peanut butter cookies. So all of this is to say that you should use whichever kind is your favorite!
