Its truly so easy to make your own version and Im so excited to share exactly how. All it takes is a bag, breadcrumbs, a handful of pantry seasonings, and chicken. Clean up is just as easy shake, bake, and you never have to dirty a bowl.

Making it yourself comes with the benefit of serious versatility. I can use any protein, from pork and fish, to different cuts of poultry. It can be the entrée, simply served with a few sides, or I can use my shake and bake chicken as a crispy protein in sandwiches, wraps, or pastas.   • You can prepare the breading mixture in advance, but I do not recommend breading the chicken until just before baking.
  • Leftover oven fried chicken will keep in the refrigerator in an airtight container for 3-4 days, or in the freezer for 2-3 months. This chicken is best when served immediately, however, since it does not stay as crispy once its chilled.

    The instructions on the original Shake N Bake box suggest using the seasoning mix with various cuts of chicken.

    So, try it with thighs, legs, wings, breasts, or a combination of them all. You can even use pork chops, too!

    Just keep in mind that the cooking time will vary depending on the cut of the meat and whether theyre bone-in or boneless.

    Getting The Breading To Stick To The Chicken

    Most breaded chicken recipes call for beaten eggs, which act like glue for the breadcrumbs to stick to.

    This isnt the case for shake and bake chicken.

    So, to ensure the breading sticks to the chicken, pat them dry with clean paper towels after you rinse them. The drier the surface, the more the breading will stick.

    Another alternative is to lightly coat the chicken with canola oil. Not only will it make the breading adhere properly, but itll also make the chicken skin extra crispy.

    How To Store And Freeze Ranch Chicken Thighs

    These chicken thighs will keep in the fridge for 3 to 4 days if covered. You can reheat them, wrapped in foil, in the oven, or use them cold, shred them and put them in a salad with ranch dressing. You can freeze cooked chicken for 3 to 4 months. Defrost in the refrigerator and reheat in a low oven so as to not dry them out.

    • Remove the skin before breading the chicken. Bone-in meat stays extra juicy and flavorful in the oven, but I find that the recipe works best if you pull off the skin before adding the bread crumb coating. Ive tested it both ways , but the breading adheres to the meat best when the skin is removed.
    • I prefer the chicken thighs and drumsticks because they cook faster than the chicken breasts, so the coating doesnt burn and the meat stays nice and juicy. If you would rather use bone-in chicken breast, youll need to increase the baking time slightly.
    • The oil in the breading is a key to this extra crispy oven fried chicken recipe since the fat helps the breading turn brown and crunchy in the oven. Dont skip the oil, or the end result wont be nearly as good.
    • Tent the chicken loosely with foil if it starts to get too brown before the meat is cooked through. I check it after the first 20 minutes and add the foil cover, if necessary.

    This is a slightly different version of a recipe I already have posted, the difference being instead of dredging the breasts in melted butter, I decided to dredge it the Hidden Valley Ranch Dressing first, before dredging it in the bread crumb mixture.Believe it or not these 6 pieces of chicken are from 2 chicken breasts, that I cut into 3 pieces each because of their size. This Double dipped Ranch Chicken tasted very good, and no salt was needed because of the spices I used, and the seasoning in the dry Ranch mix. The flavor is very good, and the chicken was very tasty & delicious.

    Tips For Crispy Baked Chicken

    The cornflake crust will naturally crisp up in the oven as it bakes. The chicken will release juices as it cooks, which means that the top of the chicken will be crispier than the bottom of the chicken which is sitting directly on the pan. To get bacon ranch chicken with a crispy bottom, you can bake it on a rack thats been coated in cooking spray. This will ensure crispy chicken all around! That being said, if you dont have a rack or dont want to use one, the baked ranch chicken is still absolutely delicious when baked directly on the pan.
