How To Make Roasted Asparagus

  • Whisk together the marinade. In a small bowl, combine the olive oil, fresh lemon juice, garlic, salt and pepper.
  • Toss the asparagus in the marinade. You can do this right on the sheet pan because it will save you from having to wash another dish. Then spread out the asparagus stalks into a single layer. Take advantage of all the space you have on the pan, so you dont overcrowd the vegetables.
  • Combine the breadcrumbs and Parmesan cheese in a small bowl. Top the asparagus with this panko-cheese mixture. In the end you dont need garnishes, because this toasted coating will do the job.
  • Roast the asparagus until it turns bright green. This will take about 8 minutes. Make sure not to cook it too long. You want it to retain some of its snap.
  • Season with flaky sea salt before serving.
  • How To Store It

Leftover asparagus can be stored in an airtight container in the fridge for up to 4 days.

During the week, I enjoy them chilled from the fridge for lunch or slightly rewarmed when it comes dinner time.

I do not recommend freezing the roasted asparagus. Upon reheating, the spears become waterlogged and mushy.

Tips For The Best Roasted Asparagus

    • Dont overcook it! Err on the side of undercooked rather than overcooked when it comes to asparagus. You want it to be crisp and not mushy. When you leave it in the oven too long, it loses its signature snap.
    • Use the freshest asparagus possible. With any recipe that doesnt have many ingredients, there is nowhere for a vegetable thats in less than stellar condition to hide. Dont buy your asparagus too far in advance of when youre going to cook and eat it, or it will compromise the flavor.
    • Dont overcrowd the pan. If you are planning to roast more than the pound specified in the recipe, you will need to use a second sheet pan. Its important to give the asparagus some space, so the stalks roast and caramelize a bit instead of just steaming each other.

As the asparagus freezes, small ice crystals puncture the cell walls resulting in a somewhat mushy texture. This makes frozen asparagus ideal for adding to casseroles, sauces, quiche, and soups, but not so much for stand-alone adoration.

    How To Trim Asparagus

    Crispy Parmesan Roasted Asparagus

When youre ready to make your Parmesan Baked Asparagus, its time to really trim the ends. The ends of asparagus are chewy and woody, so they need to be trimmed before roasting.

If youhold a piece of asparagus and bend it, the asparagus will naturally snap wherethe tough end begins. Instead of snappingthe woody ends off of every piece of asparagus, I do this to only one piece, thenline the asparagus up on a cutting board and chop off all the ends at this samepoint. So, with just one snap and onelong slice, all the asparagus are trimmed!
