The Detectable Gluten Graph

Because a qualitative test cannot determine how much gluten is in a product, it may give a result indicating that gluten was found in foods that actually contain very little gluten. This includes some foods that would normally be considered gluten-free under FDA regulations.

Some gluten sensitive individuals strive to avoid all gluten even in extremely small quantities. If you fall into this category, the qualitative graph is one you should pay attention to, along with the 3 PPM graph. High percentages on these two graphs could be considered indications of consistently lower gluten content in the product.

On the other hand, if you feel you are okay with the possibility of having very small, trace amounts of gluten in a product, you should probably disregard the qualitative test graph, and instead focus on the 5, 10 and 20 PPM graphs. Remember that studies have shown that the majority of people with celiac disease experience no adverse effects from consuming foods containing less than 20 PPM of gluten.

Please keep in mind that the test results, along with any analysis, are provided for informational purposes only. Gluten testing is never 100% error free. As such, a small number of the test results presented may not be accurate. I strongly encourage you to make your dietary choices based on multiple criteria, and only after thorough research using multiple sources. Is It Truly Gluten Free? can certainly be one of those sources, but it should not be the only one.

What Is Psyllium Husk And What Is Its Role In Gluten Free Bread

This is probably the only unfamiliar ingredient in the list above but one that is absolutely crucial if you want to bake proper gluten free bread.

And before you ask: there is no substitute for psyllium husk.

Psyllium husk is available in two forms: as the rough husk or as a fine powder. This recipe uses the rough husk, which has the following appearance:

When its mixed with water, psyllium husk forms a gel and this is what acts as the gluten substitute, both in the dough and in the baked loaf.

Before baking, the psyllium gel helps to create a dough that can be kneaded and shaped . It also gives the dough enough elasticity so that it can trap the gas produced through the yeast action and expand during the bulk fermentation and the final proof.

In the final baked loaf, psyllium is responsible for the characteristic elasticity and flexibility of the bread, as well as its amazing chewy texture with an open crumb.

How To Make Gluten

Schar Gluten Free Bread

These rolls start with a combination of brown rice flour, sorghum flour, and potato starch to create an undetectably gluten-free taste and texture. Psyllium husk adds gluten-like structure and tenderness, while a smidge of baking powder adds fluffiness!

Next come the liquid ingredients! Yeast adds a classic artisan bread taste, while olive oil keeps the rolls perfectly soft.

After mixing the dough, it rests and rises for 45 short minutes. Just enough time to clean up, preheat the oven, and daydream about your finished rolls.

After rising, the rolls are shaped into adorable little domes and topped with additional oil for a savory, golden crust.

Once baked, the rolls cool for just a few minutes before theyre ready to enjoy! Slather them with butter or dunk them into soup. YUM.

We hope you LOVE these gluten-free dinner rolls! Theyre:Chewy

Why Youll Love This Gluten Free Bread Recipe

1.The soft, chewy interior. The words pillowy soft come to mind with every bite the bread has a gorgeous open crumb and just enough chew to it, like any proper bread should.

2.The crisp, caramelised crust. The crust cracks and crackles as you cut it, and its full of those amazing flavours that are brought about by the wonders of caramelisation.

3.The flavour. If you want to compare this gluten free bread to a loaf of regular bread, its on the whole wheat side of the flavour spectrum. Its taste is wholesome and more complex than that of your average loaf of white bread, thanks to the addition of buckwheat flour. At the same time, it doesnt have the overpowering, slightly acidic flavour of, for instance, rye bread. Its a nice everyday sort of loaf, and its amazing with some butter and jam, spread with hummus or as part of a toasted cheese sandwich.

4.In addition to gluten free, its also vegan. Thats right, theres no eggs and no dairy products in this recipe!

5.Easily adaptable depending on the ingredients you have on hand. Im fully aware that you might not have all the ingredients on hand, which is why Ive included a detailed list of substitutions at the end of this post and also within the recipe card.

6.Easy to make. I know that making your own gluten free bread might sound scary and impossible. But believe me when I say its really not. And the results oh my, they are so worth it.

A Breakthrough in GF Bread!
Like the other reviewer, I had tried Schars original breads and rolls and quite frankly they were a waste of money. Dry, crumbly and absolutely NOTHING like real bread. I recently got an email from Schar announcing a new, improved version. Reluctantly, I tried it . Much to my shock and delight, they were rightnot only is this a substantial improvement, this bread is truly a breakthrough in the world of gluten-free food. It tastes just like REAL BREAD. The sizes are larger than other gluten-free breads and more like regular bread. The texture is soft instead of dry and crumbly. There is no weird flavor. It tastes normal. You can eat it straight out of the package without toasting, heating, etc., just like normal bread. Do yourself a favor and get this new reformulated Artisan bread. You will not be disappointed. Both the white and multi-grain versions are equally wonderful.

They have made great improvement over the year. The first time I didnt like. The package said it was improved so I tried it again and it was much better but a small loaf. two sandwiches were needed instead of one. Now they are regular size and smell like other bread and tasted much better. I got it for a better price at Wal-mart then what is listed here. so if you tried it before and dint like it, try it again

Schar Gluten Free Multigrain Bread Recipe For The Oven

Schar makes a wonderful, Gluten Free Artisan Baker Multigrain Bread. However, it contains modified cellulose. I and many members avoid modified ingredients. My intention was to duplicate the bread as closely as possible without using modified, chemical, or artificial ingredients and thats exactly what I did.

While my favorite gluten free bread recipe weighs almost 1 pound, this higher in fiber and smaller loaf weighs in at 1 pound 2 ounces. Using only one-third cornstarch makes the loaf a little heavier, but definitely healthier.

Looking at the label for Schars Multigrain Bread, I would assume it contains more agave and honey than I used of just agave. However, It appears that the honey is an insignificant amount. So, I omitted it completely.

Things I like About This Bread:

  • No modified cellulose like Schars multigrain
  • Probably less agave and no honey compared to Schars multigrain
  • Because of its high amount of psyllium husk powder as well as some rice starch, the bread keeps fresh longer at room temperature and in the fridge
  • Rice starch is not the main ingredient
  • The dough doesnt get a bunch of holes on the top or tear as it rises. The top stays nice and smooth.

Schar Wholegrain Bread Ingredients:

Water, rice starch, sourdough , cornstarch, agave syrup, buckwheat flour, sunflower oil, soy protein, modified cellulose, psyllium seed husk , flax seeds, guar gum, apple fiber, yeast, millet flour, sunflower seeds, apple juice concentrate, sugar, quinoa flour, salt, honey.
