Honestly it does not get any easier than these, right?

And with all of the holiday baking we do this time of year it is a great way to free up the oven. People always think of no bake treats during the summer because it is too hot to turn the oven on, but I also appreciate them during the craziness of the holidays.

I think the hardest part is waiting the two hours or so for them to harden so you can slice and devour them.

How freaking incredible do these babies look? Doesn’t everyone just love some cookie dough, especially the kind that you can eat with out getting sick!

We are all guilty of sneaking some of that raw cookie dough when baking, now you can eat guilt-free and raw egg-free.

It is truly amazing that I never got sick eating all of that raw dough throughout the years…

These contain simple ingredients that you might already have in the house. That is really important to me because I don’t want to create recipes with all sorts of funky ingredients that you will never make again.

The truth is that if you are truly committed to removing or even reducing the amount of sugar in your diet then you will most likely use the almond flour and monk fruitagain for other recipes.

I know I use both of them all the time!

Why Wont My No Bake Cookies Set

As I went down the rabbit hole of available recipes for no bake oatmeal cookies, I noticed something. Whatever the ingredients or method, some commenters swore that the recipe simply didnt work as written.

This isnt a recipe where you can use an objective measure to determine readiness, like a specific temperature on a candy thermometer, so it can be hard to guarantee success.

When you are making anything that is no-bake, you need at least a portion of the recipe to be solid at room temperature. If you cook the sugar mixture all the way to 240°F, the softball stage, so it will be solid at room temperature, the mixture turns crumbly when you add the oats.

And its very easy to overcook the sugar using that method. But if you under-cook the sugar, the cookies wont set up.

The cookies in other recipes may not set up because there are just so many variables with in an otherwise simple recipe. There may be differences in air temperature and humidity, whether youre using an electric or gas stove, how evenly it heats, and whether youre using a heavy-bottom saucepan or not.

How To Make No Bake Cookies Without Oats

If youre avoiding oats, even gluten free oats, you can replace them in this recipe. Ive made them successfully with 4 cups puffed gluten free rice cereal in place of the quick-cooking oats.

It does have a different texture, but the recipe works. The photo above is of the crisp rice cereal no bake fudge cookies.

Theyre like a super easy version of Little Debbie Star Crunch, without with the cookie center. Let the cooked sugar and chocolate mixture cool for a few minutes, before adding it to the cereal tossed with cocoa powder to avoid a stale taste.

The cereal may still taste a bit stale, since the sugar mixture must be warm enough to be a liquid, but its not very noticeable. Ive also tried using coconut flakes in place of oats, but the cookies dont hold their shape at all.

If youd like to try making no bake oatmeal coconut cookies, you can replace about 50 grams of the quick-cooking oats with coconut chips . Just crush the larger coconut chips a bit in your hand first.

I use purity protocol oats all the time in my gluten free baking. But Ive also successfully come up with substitutions for oats in gluten free baking of all sorts, if you are avoiding oats.

Hence, this is a great recipe to take with you on the road or when you know there will be a microwave or a campfire.I would think that this would be a great recipe for a barbecue or campfire as a result.

This recipe does not include eggs in it.Eggs are what are used in baked cookies to help keep the cookies together.Also missing from this recipe is flour really of any kind.

Why This Recipe Is A Dessert Favorite

  • These keto bake cookies are loaded with healthy fats, but no real sugar. The result is a glorious, fudgy, completely satisfying treat.
  • Paleo cookies are amazing, but they do need special treatment since theres no refined sugar in them to help keep them solid. They need to be stored in the refrigerator, or theyll get gooey and melty.

  • Keep it gluten free. I used certified gluten free oats, which are naturally gluten free. If you use other brands or makes of it, this is often not the case.
  • Swap out the peanut butter. If you have a peanut allergy or dont like the taste of peanut butter, you can use almond butter, sunflower seed butter, or tahini.
  • Add protein. Add a scoop of your favorite protein powder to make these cookies even more satisfying .

Storing And Freezing Instructions

  • To store: Leftover no bake cookies should be stored in the refrigerator, covered. They will keep well for up to two weeks.
  • To freeze: Either wrap cookies individually in parchment paper and place in a ziplock bag, or place them all together in one ziplock bag . They will keep well frozen for up to 6 months.

    If youre partial to making these cookies with some peanut butter, you can make them that way. Just add about 1/4 cup smooth, no-stir peanut butter to the recipe when you add the chopped chocolate.

    Here’s what we’re cooking with! I love that these are ingredients I always have in my kitchen, so I don’t need a special trip to the grocery store to make a really yummy treat.

    • Oats – I prefer quick cooking oats for texture, but old fashioned whole oats work as well. Oats are an important ingredient because they bind the cookies together as they set!

    When I tried making the recipe with 1 1/2 cups of granulated sugar , instead of the traditional 2 cups . The cookies did set up, but they were a bit softer at room temperature.

    A few minutes in the refrigerator, though, and they were fine. If youre looking for quick and easy, chocolatey, chewy no bake fudge cookies that never fail you, go for the full 2 cups of sugar.

    Ive also tried cutting the granulated sugar in half and adding 8 ounces of chopped unsweetened chocolate. The cookies set up beautifully and tasted good, but they would be better with 4 ounces unsweetened and 4 ounces semi-sweet chocolate.

For stevia, Id recommend adding a little bit of stevia at a time until the cookies taste sweet enough to suit your liking.
