Because there isnt any gluten in almond flour, it will rise differently, needs different amount of liquids and more binding agents like eggs.
So, when baking with almond flour, it is best to follow the recipe as written! Unfortunately, there is no magic ratio for substitutions in wheat flour recipes. It is case by case situation.

- Almond Flour I recommend using Bobs Red Mill Almond Flour because it is blanched and has a super fine ground. Perfect for cookies! I wouldnt recommend substituting a different flour as these are developed for almond flour specifically.
- organic butter, ghee or vegan butter I used ghee, butany of these options work, just make sure your butter is soft and if you want the cookies to be vegan, be sure to use vegan butter.
- maple syrup maple syrup adds moisture and gives these cookies the perfect amount of sweetness. I assume honey would work as a sub, but I havent tried it. If youre looking for a low sugar or keto option, you can try using a no sugar option like monk fruit maple or erythritol, but I havent tested these options.
- vanilla extract
- jam I used store-bought raspberry jam and orange marmalade, but any type of jam will work for this recipe, even homemade fig jam or chia jam.
Can You Bake With Almond Milk
You may be wondering if you can bake with almond milk, as an all-almond recipe or maybe you cant have dairy milk. In short, yes, you can bake with almond milk, the only problem is the lower fat content compared to full fat dairy milk.
Its more of a 2% milk, and the taste will be more watery than dairy milk. This means it may be easier to digest for some folks, and may not trigger some allergic reactions in others. You can use it 1:1 in place of regular milk.
If you want a creamier, smoother milk then go for cashew or soy milk.

Baking The Pound Cake
Preheat the oven to 350°F . Line a 9 x 5-inch loaf pan with parchment paper and lightly oil with coconut oil.
Pour the pound cake batter in the loaf pan, smooth top with the back of a spoon or spatula.
Bake in the center rack of your oven until the top is golden brown and a pick inserted in the center of the pound cake comes out clean and dry. It takes between 45-55 minutes.

These fluffy gluten free waffles are magic. They are all things a waffle should be: lightly sweet, tender and fluffy on the inside, and crispy on the outside.
