Instead of butter, I use coconut oil or palm shortening in this recipe.

I reduced the amount of coconut oil and palm shortening, compared to the amount of butter I originally used.

Butter isn’t 100% fat , but coconut oil and palm shortening are pretty close to 100% fat. If I used the same amount, the finished cookies would be greasy.

The honey was used to prevent the sugar from over-crystalizing while you simmer the sugar mixture. Instead of using honey, I carefully time the mixture and simmer it a little bit less.
