Stuffed Bell Peppers with ground Turkey and Feta/Keto

Start by prepping your peppers. Cut them in half, remove the seeds and set aside.

In a large skillet, brown the ground turkey with the onion and garlic. Once brown, remove from the heat and add in the rice, tomato sauce and spices.

Add the prepped peppers to a 9 x 13 baking pan. If your peppers are wobbly or not sitting properly, you can cut a strip off the base so they sit evenly. Add about 1/2 cup of the turkey mixture into each pepper, top with an additional tablespoon of tomato sauce and sprinkle with cheese.

Pour 1 cup of water in the bottom of the baking pan to help steam the peppers , cover with foil and bake for 35 minutes.

I decided to serve the peppers with a side salad to really up the veggie count of this meal! Feel free to keep your salad super simple with a base of greens, sliced fresh veggies and a delicious dressing. Ive been craving my Ground Turkey Sweet Potato Stuffed Peppers lately. Where Im in Brazil, it isnt very easy to find the type of sweet potato we have in North America. I decided for obvious reasons to mix things up and change my original recipe. This time, my stuffed peppers dont have sweet potato, but instead, they have green beans and carrots, which were just veggies I have in my fridge.

I have to confess, these changes arent bad at all. Actually, it tastes really good and its faster to make! Green beans and carrots take less time to cook than the sweet potatoes. This time I also replaced the feta cheese for the parmesan because I think green beans go better with this cheese than with feta. Of course, if you want to make this recipe paleo friendly, you just need to omit the cheese. Dont worry! These stuffed peppers will be flavorful even without the cheese.

This recipe is very easy to make. You just need to sauté the onions, garlic, and carrots for about 10 minutes and then add the ground turkey. Cook the meat until it is no longer pink and add the homemade tomato sauce, and green beans. Then, the mixture will be ready to stuff in the peppers. Finally, you will bake them for 30 minutes and dinner will be done. Easy and peasy!

Making Ahead And How To Store

Our ground turkey stuffed peppers recipe can be made ahead, in stages or fully.

If making in stages in advance, prep the ground turkey and rice filling first. Make the tomato sauce separately. Both can be kept frozen or in the refrigerator for up to two days.

The peppers can be assembled and half cooked the day before. Finish cooking them in the oven right before serving for best results.

You can also make the whole recipe in advance and freeze it. Stuffed peppers with ground turkey will keep in the freezer for 6 months. They will keep in the fridge in a pot for up to 5 days.

Stuffed Peppers With Turkey And Vegetables

  • 4 green bell peppers, tops removed, seeded
  • 1 pound ground turkey
  • ½ red bell pepper, chopped
  • ½ yellow bell pepper, chopped
  • 1 cup fresh spinach
  • 1 can diced tomatoes, drained
  • 1 tablespoon tomato paste
  • salt and pepper to taste

    Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.

    In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.

This was extra yummy. I always boil my peppers before stuffing them. It only takes about 10-15 minutes. In a word amazing! The mixture is rich and has a wonderful texture. Fresh vegetables and fresh herbs add a wonderful home grown garden taste and the ground turkey is light but still filling.

One of the great things about this recipe is that they make wonderful leftovers for lunches later in the week. They taste as good cold as they do warm! Their cup like shape makes them easy to transport even as a bagged lunch. And if you want just pop them in a microwave for a minute or two to serve them warm.

These ground turkey stuffed peppers are great served with a simple side salad, or try them with my recipe for Southern coleslaw. Lots of texture and crunch to offset the softness of the pepper stuffing.

How To Make This Casserole

Lets get started! Turn your oven on to preheat and spray a large baking dish with non-stick spray.

In a large skillet, brown the ground turkey and onions with a little salt and pepper, breaking up the large chunks of meat so it browns evenly. It will take about ten minutes or so.

Meanwhile, cut a couple of bell peppers into one inch chunks, more or less. No fancy knife work here, just cut them up into bite-sized pieces, discarding the seeds and stems.

Measure out a half-cup of uncooked rice and open the can of crushed tomatoes. When the meat and onions are ready, put them into the prepared baking dish along with the rice, tomatoes, oregano, and garlic powder.

Stir well and cover the dish tightly with foil.

Note: Its important to cover the dish because you want to trap the steam inside so that the rice cooks. Its just like steaming rice on the stovetop in a covered saucepan.

After an hour and fifteen minutes, remove the foil and stir the casserole. Carefully put the foil back on and bake for another fifteen minutes or until the rice is tender. Sometimes it takes a bit longer.

Remove the dish from the oven, uncover it, and sprinkle on the shredded cheese. Put it back in the oven for five minutes or so, or until the cheese melts. Let the casserole set for 10 minutes or so to settle before serving. Garnish it with fresh parsley.

Stuffed Bell Peppers are my jam! You may have tried my Sante Fe Turkey stuffed Peppers, Chicken Taco Chili Stuffed Peppers, and of course the popular Stuffed Pepper Soup!

This turkey stuffed bell pepper recipe is an oldie, and one that Ive always loved. They kind of remind me of a reinvented burrito only stuffed in a pepper instead. For me, having one half with a salad on the side as my lunch is filling enough. For my husband Tommy on the other hand, he certainly enjoyed two. And my youngest daughter, Madison is 6, so peppers arent exactly her thing at the moment.To make this more kid friendly I simply left some filling on the side to top with cheese and eat by itself and she loved it. Sh also likes it in a small tortilla with cheese like a mini burrito. Make extra so you can have leftovers for lunch!

How To Make These Keto Stuffed Peppers

Preheat the oven to 350F and line a medium sheet pan with parchment paper.

Slice the peppers on half lengthways through the stem and remove the seeds. Lay the pepper halves on the prepared pan, cut side up. Season with salt, pepper, and drizzle 1 tablespoon of oil. Rub with your clean hands to season the peppers all over.

Roast in the preheated oven for 10-12 minutes.

Meanwhile, in a small food processor or a chopper place the onion, carrot, and garlic. Pulse a few times to chop the veggies into small pieces.

Preheat the remaining tablespoon of oil in a medium pan. Add the chopped veggies and sautee for 3-4 minutes over medium heat.

Stir in the ground turkey, smoked paprika, and cook until the meat is no longer pink around 5-6 minutes.

Add the cauliflower rice, olives, crushed tomatoes and stir well to combine. Cook for 5 minutes, then season to your taste.

Fill the pepper slices with the turkey mixture and sprinkle with mozzarella cheese.

Bake for 10-15 minutes, or until cheese is melted.

Garnish with minced cilantro and serve while hot.
