With these chips, its all about the quality of the tortillas so if possible, buy locally made corn tortillas. Im fortunate to live in an area with a large Latin American population, so my chances of scoring amazing authentic tortillas are very high. When I do, I always buy extra, storing them in the freezer in packs of six. That way I can remove what I need and leave them to quickly thaw on my counter.

Trader Joes makes a decent corn tortilla if thats more convenient for you. Homemade chips are also an excellent way to use up slightly stale tortillas.

All you need are some tortillas, cooking spray and a little sea salt or kosher salt. And a baking sheet and oven, of course. Start by cutting each tortilla into 8 equal wedges. I usually cut 3-4 tortillas at a time with a sharp knife or a pizza cutter.

Then youll just spread them out evenly in a single layer on a lightly greased baking sheet and spray them with cooking spray before sprinkling with a pinch of kosher or sea salt.

Bake at 400°F for about 10-12 minutes, rotating the pan halfway through. Cooking time might vary, so keep an eye on them. The chips should be crisp and starting to turn light brown when done.

Let them rest on the cookie sheet for about 5 minutes before serving.

    Preheat the oven to 350ºF. Work in batches, according to how many pieces of tortilla can fit on your baking sheet in a single layer, without overlapping. For me, thats about six small corn tortillas.

    Place the cut pieces in a large bowl and drizzle with 1/2 Tbsp oil. Gently toss the tortilla pieces in oil until theyre evenly coated. I say gently because raw tortillas can rip if theyre man-handled, so just be a little careful. 🙂
