Brining may sounds like a difficult or tedious step, but its soooo crucial with a thick cut pork chops. And bonus brining pork chops is actually crazy simple.

The process of brining creates a chemical reaction that happens between the structure of the meat and the salt. It helps to tenderize the lean pork, which is exactly what we want. The longer you can brine your pork chops, the better, but give it at least 30 minutes.

  • Wet Brine Fill a large bowl with warm water and stir in 1 tablespoon of kosher salt for every cup of water. Submerge your pork chops in the water and if youre doing a quick brine, let them sit at room temperature for at least 30 minutes. For longer brining, cover the bowl with plastic wrap and place in the fridge for up to 24 hours.
  • Dry Brine Place the pork chops on a plate or cutting board and pat dry with paper towels. Sprinkle kosher salt all over the pork chops and cover loosely with plastic wrap. Let sit out on counter until room temperature, at least 30 to 45 minutes.
  • Pat Dry After wet or dry brining the pork, make sure to pat dry with paper towels. No need to rinse with water, the pork will not be overly salty when baked.

  • Thick pork chops are best for grilling because they wont dry out easily. Choose pork chops that are at least 1-inch thick for best results.
  • Bone-in or Boneless Pork Chops? Bone-in pork chops are best for making juicy grilled pork chops, because the bone helps to prevent the pork chops from drying out. You can also use thick boneless pork chops.
  • Whether you decide to use the pork chop marinade in this recipe or my simple dry rub, I recommend marinating your pork chops for the best flavor. After putting the pork chops in the marinade or coating them with the rub, marinate them in the refrigerator for at least 1 hour and up to 8 hours.
  • How long to grill pork chops First sear pork chops over medium-high heat for 2 to 3 minutes per side. This will create nice grill marks and also helps to seal in the juices. Weve already shared our method for cooking the juiciest skillet pork chops. Many of you loved that recipe so much that you asked us to share how we cook pork chops in the oven. We are happy to help! Here it is, our no-fail method for the best baked pork chops. Lets do this!

As you read through the recipe, keep in mind that you can customize the seasonings for these chops. We love the lemon and herb combination shared in the recipe below, but you can use your favorite spices instead.

Whether you use our flavor combination or not, for the best baked pork chops, keep these simple tips in mind:

Dont cook chops straight from the refrigerator. Thirty minutes before you plan to cook, take the pork chops out of the fridge.

The time out of the fridge lets you bring the meat up to room temperature, which helps the pork cook more evenly throughout. Use this trick for other cuts of meat like pork tenderloin or steak.

Season the pork chops with salt 30 minutes before cooking. This way, the salt has a chance to improve the flavor and texture of the meat.

Pork chops are pretty lean, so seasoning with salt before cooking is essential for making the most flavorful chops.

You can think of this step as a more straightforward way to brine the pork .

Preheat the oven to 375 degrees Fahrenheit, so the oven is hot before you slide in the chops.

After 5 minutes, all the juices inside the chops will have distributed around the meat.

How To Make Breaded Pork Chops

To get the breading to stick to the chops, they will be quickly dredged in flour and then dipped in egg. The flour egg mixture really helps the bread crumbs stick!

  • Dab the pork chops with a paper towel to absorb the extra moisture.
  • Dredge in flour and then dip in egg.
  • Add a pork chop to the bread crumb mixture and gently press the crumbs so they stick.
  • Can You Cook Pork Chops From Frozen

You can, but I dont recommend it. Cooking meat direct from frozen will result in an overcooked outside while the inside is still not cooked through.

If you have frozen pork chops, thaw them first in cold water before proceeding with the baked pork chop recipe. Besides, since you are marinating the meat anyway, you can let the chops thaw in the marinade in the fridge overnight if you have the time.
