Anyone else grow up eating this stuff or was it just me? Potato soup was actually one of the first recipes I ever learned to make and I used that classic recipe as the base for this new, improved, and much healthier version.

This healthy loaded baked potato soup still has everything that makes a potato soup good bacon, green onions, tender potatoes, and creamy goodness. But, it is made without cream or cheese and completely dairy-free. Dont be alarmed though, this soup is still thick, creamy, and delicious!

Whole30 Egg Roll Soup

Egg roll soup is a genius idea! It takes all the same fillings you get with a fried egg roll but ditches the wrapper.

Youll start by browning ground beef, then sauteing your veggies. Then throw in the spice, pour in the broth, and simmer.

Coconut aminos are a nice addition that gives this soup a deeper umami flavor.

I introduce you to the new soup recipe you cant live without, buffalo ranch chicken chowder.

Cashew cream is an excellent component that helps thicken the base. Pair that with ghee and the broth becomes super-rich.

All of which pairs sensationally with crispy bacon and chicken breast. However, the real twist to this recipe is a good dose of Franks Red Hot.

When a juicy burger is tempting you, whip up this soup instead. A bowl of this soup is like biting into the most flavorful burger youve ever had.

This mouthwatering bowl is brimming with savory ground beef, banana peppers, and diced tomatoes.

For a heartier version, I highly advise using beef broth rather than veggie or chicken.

This is like a gateway soup to going full-on Whole30.

All the ingredients combine to make a very fresh yet toothsome bowl thats chock-full of nourishment.

Lemon and rosemary keep the flavors bright. Then theres the chicken and egg component that fills you up with protein.

Of course, every good soup needs a veggie component. This one opts for a simple mix of potatoes, carrots, celery, and fresh greens.

While cheese may not be part of the program, nutritional yeast certainly is.

Is Potato Soup Healthy

It honestly depends on the ingredients!

If you are using non-processed real food ingredients, like in this paleo potato soup recipe, then yes!

Since this recipe is Whole30 compliant and Paleo, it is made without dairy, without gluten or grains, and without any processed sugars or flours.

It is also made with bone broth, which is great for the gut.

In my opinion, a potato soup can be healthy if all the ingredients are high quality real food ingredients.

How To Make Creamy Potato Soup

It all starts with the bacon ð After cooking your bacon until crisp in your stock pot, set it aside to drain and reserve 3 tablespoons of the fat. Cook your onions in the bacon fat until soft, then add the garlic. Your kitchen is smelling amazing already!

Next, toss in the peeled and cubed potatoes to coat. I like to do this because it adds even more flavor to the potatoes! Sprinkle the tapioca flour over the potatoes, and then add in the broth, coconut milk, salt, pepper, and nutritional yeast.

At this point, youll stir everything and bring it to a boil so the potatoes soften. It takes about 10-12 minutes depending on the size of your potatoes. Youre looking for them to be fork-tender.

Since I like creamy soup AND chunks of potatoes, I blended half of the soup with an immersion blender. You can also use a regular blender for this if you dont have an immersion blender

Add the blended half of the soup back to the pot, add 3/4 of the bacon back and let it simmer a few minutes. Then, season to preference with salt and pepper. Make sure to serve with lots of sliced green onions and the rest of the bacon!

How To Make Instant Pot Baked Potato Soup

Paleo Whole30 Loaded Baked Potato Soup

To make the baked potato soup, combine all ingredients in the Instant Pot and cooked on the manual setting.

Once the cycle is complete, manually release pressure or let it release naturally for 10-15 minutes.

Puree the soup with an Immersion Blender to desired consistency

Serve with your favorite baked potato toppings such as bacon crumbles, shredded cheese, green onions, sour cream, etc. For Whole30, skip the cheese and sour cream.

What Should I Serve With It

I love to serve it with a protein topped salad of mixed greens, radishes, sprouts and cucumber. I used smoked turkey, but you of course can use any leftover protein you have on hand, or even a handful of nuts or boiled eggs. You can certainly make it super easy and just serve with a platter of crunchy raw veggies or simply a mug of the hot soup all by itself if thats what youre craving.

What Is Loaded Cauliflower Baked Potato Soup

This soup contains both cauliflower and potatoes. The cauliflower lightens it up quite a bit and the potato starch adds creaminess. But the real goodness is in the toppings. Playing off a loaded baked potato, you will top this creamy, nourishing soup with bacon, green onions and dairy-free yogurt or Homemade Ranch Dressing. Served with a big salad of Spring greens and you have a fabulous lunch or light dinner.

How To Make This Recipe

  • In a medium heavy-bottomed saucepan over medium heat, fry bacon until crisp. Use a slotted spoon to remove bacon and drain on a paper-towel-lined plate. Pour off all but 1 tablespoon bacon grease. Add onion and cook over medium heat until softened and translucent, about 5 minutes. Add garlic and cook, stirring constantly, until fragrant, about 30-60 seconds.
  • Pour in chicken stock and add cubed potatoes. Bring to a boil and cook until potatoes are easily pierced with a fork, about 12 minutes.
  • Reduce heat and use a potholder to carefully tilt the saucepan to the side. Use a ladle to scoop out about 1-1 1/2 cups liquid add to blender. Add the cashews to a blender and blend on high speed until completely smooth, about 1 minute. Mash potatoes until desired consistency.
  • Pour cashew liquid and milk into saucepan and heat over low heat. Add salt and pepper taste and add more as desired. At this point, you can also add a little more chicken stock to reach the desired consistency.
  • Ladle the Whole30 Potato Soup into serving bowls then top with bacon pieces, plenty of chopped chives, and freshly cracked pepper.

    Winter is many things, especially in the Midwest. It can mean bitterly cold temperatures, loads of snow, and generally avoiding leaving the house unless it is absolutely essential. These less than ideal circumstances aside, there are several reasons why I actually adore the winter. Not surprisingly, one of these reasons is most definitely comfort food. And this Instant Pot Loaded Baked Potato Soup is top of my comfort food list. And! I can enjoy it without regrets.

    For all of us living in winter climates right now, there is hope. Not only are days getting longer, and we are blessed with a few days of warmth to keep us sane, but there are several ways you can enjoy what remains of winter.

    How To Make This Dairy

    Paleo Whole30 Loaded Baked Potato Soup

    To start, you cook your chopped up bacon in a soup pan until crispy. Put the bacon aside.

    Leave behind the bacon grease because this will help flavor your soup!

    Next, cook the onion and garlic. Add the cubed potatoes and cook for a few minutes.

    Then, add the crispy bacon pieces back into the soup, along with some bone broth. Cover and cook until the potato is fork tender.

    While the potato is cooking, make your creamy coconut cream/almond milk sauce. Start by heating some olive oil, and mixing in your coconut flour and tapioca flour. Then, add almond milk, coconut cream, and nutmeg.

    Mix the sauce until it thickens.

    Then, once the potatoes are fork tender, remove from heat and mix in the creamy coconut cream/almond milk sauce.

    Put 1/2 of the contents from the soup pan into a blender and pour into the remaining chunks of potato.

    NOTE: if you want your soup to be very smooth and have less chunks of potato, then add more of the contents in the soup pan.

    If you want your soup to be extra chunky, then add less.

    I was inspired by this Absolutely Ultimate Potato Soup recipe, and I adapted the recipe to my tastes and my Paleo and Whole30 preferences.
