Before I move on to the method for making the beans, a quick word on the pork. Traditionally, the cut used is salt pork, which is the salted and cured slab of thick fat that runs along a pig’s back. It adds a deep, pure pork flavor to the beans, but you do need to watch out for two things. First, if you use a piece of salt pork that’s solid fat, with no stripe of muscle at all, you may want to cut the quantity slightly . If you don’t, you can end up with some seriously greasy beans…good if you’re a lumberjack, but not great otherwise.

Second, some salt pork comes with plenty of salt still clinging to it. If yours does, you’ll want to wash the excess off, lest your beans end up oversalted.

If you can’t find salt pork, you can, of course, substitute slab or thick-cut bacon. Since bacon comes from the belly, the cut has a higher ratio of lean muscle to fat than salt pork does. You can stay at a half pound per pound of beans, or you can go wild and bump it up to three-quarters of a pound if you want them extra bacon-y. That’s not such a bad thing, since the bacon adds a smoky flavor that’s probably not too far off from the taste of the beans back when the Pilgrims cooked them in the flickering embers of a dying wood fire.

    If you were to disregard basic fire safety and cook the beans start to finish in the oven overnight, all you’d do is combine all the ingredients in a Dutch oven, cover it, and bake it for hours upon hours upon hours. Toward the end, if they got too dry, you’d need to add a splash or two of boiling water, but otherwise, that’s about it. Just remember: I’m not officially recommending this, so if you burn your house down, don’t come looking for me.

    The safer route is one that allows you to monitor the cooking process throughout.

    I dont think most people mind to eat baked beans that are room temperature. We seem to do a lot of that in the Southbut if you want to keep yours really hot, bake them until boiling or really, really bubbling then transfer the whole pan into an insulated tote.

    I have used this Temp-Tations brand insulated tote for decades and food is still hot or cold inside it for 8 hours or longer.

    Ive never found anything that compares.

    Your beans dont have any ingredients that make it risky to leave them out unrefrigerated, so if you want to bake them and then serve them a couple of hours later at room temperature thats also fine.

    Start with canned baked beans again, I highly recommend Bushs Vegetarian Baked Beans as theyre a little lower in sugar than other varieties. Open the cans then drain off almost all of the liquid that sits on top of each can. This will ensure your baked beans dont turn out soupy.

    Add the beans to a large mixing bowl with dicedkielbasa, crushed pineapple,mincedonion, brown sugar, steak sauce, and mustard the stir well to combine.

    Scoop the mixture into a nonstick sprayed 9×13 baking dish, or two smaller baking dishes, then line the top with bacon.     Break out a big cast-iron skillet. Place 3 strips of bacon in it and plop it over medium heat on the stove. Cook the bacon until crisp, flipping as necessary, and then remove the strips to hang out on a few paper towels and drain off some of the fat from the pan, leaving about 1 tablespoon.

    Now, you want to have some diced onion yellow, vidalia, whatever you have on hand is fineready in the wings, along with 2-3 cloves of minced garlic. If you’re really getting into it, chop up some bell pepper too. Add the onion to your bacon drippings in the pan and saute until translucent and fragrant next, add in your garlic as well as a few sprigs of fresh thyme and saute for another minute or so.

    Once everything is softened and smelling great, pour in both cans of baked beans. Finally, stir in 2 tablespoons of light or dark brown sugar, 2 tablespoons of ketchup, 1 tablespoon of yellow mustard, 1 teaspoon of soy sauce, 1 teaspoon Worcestershire sauce, and ¼ teaspoon cracked black pepper.
