Easy Fruit Cake Recipe

Sometimes old fashioned means time intensive. That isnt always true but many times I will agree that many times it is, that is why I appreciate these instructions. I would say the prep is about 15 minutes and then you can just pop it into the oven. Want to make this as gifts? You can double or triple it to share with friends too for sure.

How To Make Fruit Cake

Just like baking any other type of sweet bread you want to whisk wet ingredients together in one bowl, and dry in another. Then incorporate the two and add the fruit and nuts at the end. You just want to fold those in so they dont break all apart.

  • You will use a 9×5 loaf pan for this. Spray inside with non stick spray lightly and shake some flour in while patting it around. It will slide out nicely when done if you do this. Preheat oven to 300 degrees F.
  • In a bowl whisk sugar, eggs, vanilla together and then add softened butter and whisk until smooth.
  • Use another bowl whisk to together dry ingredients. Then slowly incorporate this into your butter, wet, mixture.
  • Gently fold in marinated fruit and pecans so they are incorporated nicely. Then pour batter into your pan and bake for 1 hour to 1 hour 10 minutes or until toothpick comes out clean.
  • Cool in pan on wire rack for 15 minutes, then loosen slides with a knife and slide out. Set that on your cooling rack to completely cool. Slice and serve.

Grandma Leone’s Fruit Cake

Don’t get this cake confused with the traditional fruit cake. It is so much more. This recipe has been handed down for 3 generations and I now want to share it with all of you. Don’t get nervous with all the ingredients. Everything gets hand-mixed in 1 great big bowl.

1 ½ tablespoons baking powder
1 tablespoon baking soda
1 ½ cups canola oil
4 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F . Grease two 8×8-inch baking pans.
  • Bring water and raisins to a boil in a saucepan cook until raisins are plump, about 2 minutes. Drain and cool raisins reserve raisin water.
  • Mix 3 cups flour, cinnamon, baking powder, baking soda, and salt together in a bowl. Place pecans and 2 tablespoons flour in a resealable plastic bag close and shake bag until pecans are coated. Pour pecans into a colander and shake off excess flour.
  • Whisk sugar, oil, eggs, and cooled raisin water together in a bowl fold in candied fruit. Stir flour mixture, 1/2 cup at a time, into sugar mixture until fully incorporated fold in raisins and pecans. Fill the prepared pans a little over half full.
  • Bake in the preheated oven for 40 minutes. Lower temperature to 325 degrees F bake until a knife inserted in the center of the cake comes out clean, about 1 more hour.

Best Fruit Cake Recipe

If you do choose to make famous fruitcake muffins instead they would need to bake about 20 minutes or so. Use a toothpick inserted and take out right away once it isnt wet in the middle. If a few crumbs are attached when you pull it out they are perfect. Take them out of the pan and let cool on a cooling rack when you take them out.

How do you store leftover fruitcake?

We will share the steps below but you need to make sure it is wrapped twice in freezer safe aluminum foil and/or freezer bags to avoid drying out. Wrapped properly it will last a year in the freezer, or 2 months in the fridge. Keep in mind that the first few days it should be left on the countertop to stay moist.

The Story Of Our Famous Fruitcake

Grandma

Our recipe dates to 1917 and has been a beloved tradition ever since. The handmade goodness was first introduced to the public in St. Louis, Missouri by two German immigrant brothers. The Lantz brothers owned and operated a bakery where they discovered a family fruitcake recipe in their grandmothers cookbook. The recipe took off, and the Lantz brothers soon found themselves searching for a bigger facility to produce their grandmothers recipe. In 1964, their search took them to Beatrice, Nebraska, and the current facility, nestled in Americas heartland.

The Nebraska bakery changed names and ownership several times before becoming nationally known as Beatrice Bakery Co in 2002. Despite the changes, the original fruitcake recipe remained the same.

We have been featured on QVC, Food Networks UNWRAPPED Holiday Favorites episode, A& E Biographys The House that Santa Built, on ABCs THE VIEWs Holiday Candies, Cookies and Cakes segment and received editorial recognition in Midwest Living magazine. After several corporate owners they announced their plans in November 2001 to close Grandmas Bake Shoppe. A group of local investors wanted to keep the bakery open and keep jobs in the local community, so they formed a new corporation and bought Grandmas Bake Shoppe. And, on April 22, 2002, the bakery became known as Beatrice Bakery Company.

Rick Meyer, President, said Grandmas Fruitcake continues to be the catalyst for the companys success.

Since I came to this position two years ago, we have grown approximately 30%,” Meyer said. “Weve been on some national media outlets and now theyre starting to rerun those and people are catching on to our other specialty desserts and liqueur cakes.

We ship from coast-to-coast and internationally. Our product is in Dillards, Macys, QVC and a ton of grocery stores throughout the country.”

Meyer grew up in Tilden, Neb. and after working in the corporate world for several years came to the Beatrice Bakery Company.

All of our products are handmade by a small group of very dedicated employees, said Meyer. They understand that they are a part of the team and their behavior affects the company. My door is always open to anyone here. As we continue to grow, we are hoping to offer more jobs at a competitive salary here in Beatrice.”

Meyer added he hopes to find new ways to support communities in the area.

Beatrice Bakery Company is famous for Grandmas Fruitcake, which dates back to 1917 when it was started by two German immigrants.

The Lantz Brothers operated a bakery in St. Louis, Mo. They were looking for ideas to keep their workers busy during the summer months when they found a recipe their father had tucked away. It was their grandmothers secret recipe for fruitcake.

In the late 1950s, the Lantz brothers searched for a bakery that could continue the tradition of baking their fruitcakes. They soon found it in Wilke Baking Company of Beatrice.

Carl Wilke, the owner of Wilke Baking Company, had in 1924 completed the building of a new sophisticated bakery at 201 S. Fifth St., which offered a variety of wheat and rye breads, buns, sweet rolls, and doughnuts.
