Tips For The Best Homemade Baked Mac And Cheese
- Use block cheese and shred, do not buy the pre-shredded cheese. The pre-shredded cheese is great for so many things but not macaroni and cheese. Its coated and wont melt properly. You need to shred it yourself for the best result.
- Cook your pasta to slightly less than al dente, about one minute shy is perfect. The reason is that this is baked mac and cheese so the pasta will continue to cook in the homemade cheese sauce in the oven. You dont want soggy macaroni.
- I used elbow pasta but really, any tubular past will work.
- This mac and cheese recipe starts with a roux. The roux is super important to getting the creamiest cheese sauce of your life. Here is what you need to look for:
- The roux is whisked together until bubbly and golden.
- Whisk in cold milk not warm to prevent the flour from clumping.
- Cook the roux until you see bubbles on the surface and then continue cooking for an additional 2 minutes before adding the cheese.

Everyones favorite classic mac and cheese! Super simple, super easy and super quick. Youll never want the boxed stuff ever again!
Greetings from Chicago!
We did it. We finally moved to the Midwest after 20 years of living in California.
It almost feels a bit surreal as we cope with the 22 degree weather. I mean, it was 65 degrees when we left LA!
But honestly, it feels like home. Except home is filled with 17 unopened boxes filled with my kitchen stuff.
So I need to unpack as fast as possible so I can never leave my Chicago house and instead, nest inside with my new electric blanket and the coziest homemade mac and cheese ever.
This is your classic mac and cheese there are no surprises here and theres no fuss at all. Its simple, its quick, and its completely made from scratch.
Its perfectly cheesy without being too gummy, and the crunchy tops are just to die for before you get into that creamy heaven underneath.
You can of course choose to bake these in individual ramekins to avoid any kind of sharing or you can dump the entire mixture into a 2-qt baking dish.
Either works. Its just that sharing can be a bit difficult on this one.
About This Easy Baked Macaroni And Cheese:
This baked macaroni and cheese is made like Grandma used to make it, the old fashioned, baked in a casserole dish style. If youre looking for a creamy, non-baked recipe, youll probably love this copycat Panera mac and cheese or Instant Pot macaroni and cheese.
I just love this baked macaroni and cheese, though. Its a little bit chewier, with lots of great cheddar cheese flavor, and I especially love the way the top crisps up in the oven.
Plus its so easy! You just boil pasta, mix with grated cheese, a couple tablespoons of flour, and seasonings, put it in a casserole dish, and pour the milk over it. Thats it! No messing with white sauces or tricky steps. No getting four pots and pans dirty!
You can prep this macaroni and cheese ahead of time and keep it in the fridge overnight. Its ready to bake when you want it!
Baked mac and cheese is a total crowd pleaser. This is a great recipe for busy weeknight meals but also for entertaining. Perfect for potlucks!
Enjoy one of our familys favorite meals! I grew up eating this macaroni and cheese and it was always a special day when my mom prepared it. Now I love serving it to my family and I especially love how easy it is to prepare. Im sure you will too!

Whats The Difference Between Manwich And Sloppy Joes
Technically Manwich is a pre-made sauce thats used to make sloppy joes. Im not sure exactly whats in it, and have never tried it myself, so I cant say that my recipe tastes similar or not. Manwich is marketed as a easy way to make sloppy joes but in reality, homemade sloppy joes are JUST as easy to make!
What It Tastes Like

Its really a jacked up version of the classic Mac and Cheese. No normal Mac and Cheese sauce will have the same flavour that this one has which is boosted with shrimp juices AND the golden bits left in the pan after we sear them.
But what I really enjoy about this Garlic Shrimp Mac and Cheese are the contrasting textures. I use 500g / 1 lb of peeled medium / small shrimp in this, so theres a generous amount dispersed all throughout the dish. So just imagine, with every bite, you get a little savoury crunch from the Parmesan breadcrumb topping, silky cheese sauce with boosted shrimp umami, perfectly cooked macaroni AND the soft, succulent shrimp.
Every bite is just outrageously good.

Why Bake Macaroni And Cheese
Doesnt that just add another step? Yes, it does, but a baked macaroni and cheese offers so much more texture than the stovetop versions. Who can resist that cheesy creamy underneath a crisp, toasted topping made with Panko breadcrumbs and melted butter? I used pre-seasoned Panko for extra flavor, but you can add parmesan and garlic powder to plain breadcrumbs or Panko.

How To Keep Mac And Cheese Creamy
Im sharing a handful of tips to help keep your baked mac and cheese creamy, smooth and saucy.
- First, no eggs. Unlike the Southern-style mac and cheese, this creamy version does not include eggs. The eggs help to set the casserole, giving it a firm, dry texture. Since thats not what were going for here, youll need to leave out the eggs.
- Next, lots of sauce. Were not skimping on cheese, milk or cream in this dish. Well make plenty of cheese sauce to coat the noodles. It looks like a lot of sauce, but you need that amount in order to keep the dish creamy in the oven.
- Velveeta cheese. Thats right, I said it. Blasphemy?! Maybe! But trust me here: Velveeta melts smoothly into the sauce giving the mac and cheese a rich, creamy texture that you just cant quite replicate with other types of cheese.
- Baking Time. This casserole goes in the oven at a low temperature for just 15 minutes. This short baking time is important because its just long enough to melt the cheese on top and get the noodles hot inside, but its not so long that it dries out the pasta and sauce. If you like a crispier crust on top, you can pop it under the broiler for a few minutes at the end.

Can I Refrigerate Before Baking
Yes, you can refrigerate macaroni and cheese before you bake it. This make-ahead mac and cheese is a great option for meal prep. Do all the cooking whenever you have the time and bake it right before youre ready to eat.
To refrigerate before baking, you will complete all the steps up to putting the mixture in the pan. Cover the dish with foil and refrigerate for up to two days. When youre ready to bake it, pull the mac out of the fridge while the oven is preheating and top with breadcrumbs and Parmesan.
You will need to bake the macaroni and cheese casserole a little longer since itll be cold. Bake for about 30-40 minutes until heated through.

Cheese Sauce Tips & Tricks
- After adding your liquid to the roux, keep whisking and cooking over medium heat until its thickened. Youre going for the consistency of a thin gravy. It should coat the back of your spoon.
- Use blocks of cheese and grate them yourself. Pre-shredded cheese has added starches which doesnt make for the creamiest cheese sauce.
- Remove your pan from the heat before you add the cheese. Cooking the cheese in the sauce can make for a grainy sauce.
Combine: When the cheese sauce is ready, stir in your cooked macaroni and mix well to coat the pasta in all that glorious cheese!
Go ahead and give your mac and cheese a little taste. Season with extra salt and pepper, if you think it needs it.
Layer: This macaroni and cheese casserole isnt called Million Dollar Mac for no reason were going to really take it over the top now!
Pour melted butter into the bottom of a 2 quart baking dish and then spoon half of the macaroni and cheese mixture into the dish.
Next spread the sour cream over the top of the macaroni and then sprinkle on the Havarti and gruyere cheeses!
Spoon the remainder of the macaroni and cheese over the top.
This method creates the ultimate cheesy layer in the center. Its absolutely divine!
Finally, youll make the tasty Panko topping in the next step. Dont skip it!
Topping: Since this is a baked mac and cheese, were going to top things off with a little Panko for some crunch.
