Its a staple for soul food Sundays, summer cookouts, , and always a featured item at a soul food Thanksgiving or on a Black folks Christmas dinner menu.

Even though I love macaroni and cheese, I dont always want to make it the traditional way.

Southern baked macaroni and cheese, also called soul food mac and cheese, is the ultimate in comfort food. Creamy, rich, ooey-gooey, super cheesy, with those crispy browned cheese edges…no one can resist perfectly baked mac and cheese.

This recipe has been a long time coming.

A staple in soul food and southern cooking, this mac and cheese goes back generations and is saved for special occasions. Which is why it’s here today, on Juneteenth.

For those who don’t know, Juneteenth is a holiday celebrated by Black Americans for the official dying bell of slavery when the Civil War ended, Lincoln signed the Emancipation Proclamation in 1863, and the last slaves in Galveston, Texas were told they were free in 1865. Sometimes a reader or two has had an issue with how much pasta this recipe needs. This recipe is written by volume and sometimes people think that since a cup is 8 ounces that they can simply use 12-16 ounces of pasta or go by the weight of the dry pasta written on the box.

Youll end up with problems if you do this. Please follow the volume instructions and measure your pasta dry in a measuring cup meant for dry items . Small pastas like ditalini or little wagon wheels can go up to about 2 cups and be fine in the recipe, and large ones like bow tie or cellentani can as well. If you will stick to elbow pasta until you get the hang of things youll be better off.

Ive made this recipe with every pasta shape on the market and if you will measure in cups, your recipe will be just right.

    Im going to walk you through how I make mac and cheese in my own kitchen. If you want to watch me do it, theres a quick recipe video above that shows each step.

    Step 1, Warm milk in a saucepan or in the microwave. Warm milk helps to make the whole sauce making process go a bit quicker and according to Julia Child, warm milk prevents a lumpy cheese sauce.

    Step 2, Make a roux with butter and flour. Basically a roux is a cooked paste made with butter and flour. When milk is added later in the recipe, its this butter-flour paste that helps the cheese sauce to thicken.

    Step 3, Whisk in the milk and thicken the sauce. When the roux is a golden color and smells nutty , I whisk in the warm milk. As the milk heats up with the roux, it thickens and turns silky smooth.

    Step 4, Adds spices and the cheese. When the milk is a silky thickened sauce, I whisk in a few spices and the shredded cheese. When the cheese has melted into the sauce, I always taste and check for seasoning. Its likely that some salt needs to be added.

    Step 5, Stir in slightly undercooked pasta, add to a baking dish, and bake. As I mentioned above, I undercook my pasta by 2 minutes, drain, and then rinse it of excess starches.   • While the cook setting changes from sauté to slow cook, allow the ingredients to simmer for about 3 minutes until the mixture thickens slightly.
  • Stir in the cheeses .
  • Close the Instant Pot with the lid and let slow cook for 5-10 minutes until the cheeses are blended.
  • Open the lid to add the cooked pasta and the heavy cream to the inner pot, stirring the mixture to blend evenly.
  • Transfer the pasta mixture into an 8-inch cast iron skillet or baking pan.
  • Top with the remaining shredded cheese.
  • Bake in the Instant Pot Omni Plus oven at 350 degrees F for 20 minutes or until golden and bubbly. Or bake in the conventional oven for 25 minutes or until mac and cheese is golden and bubbly.
