    When raw, radishes have a bitter taste. However, when cooked, they taste very similar to potatoes and have a mild flavor like a turnip. When roasted, radishes take the flavor of whichever seasoning you add to it, so the flavor of the radishes will change completely. Add a hint of rosemary, thyme or other fresh herbs to completely transform your low carb potatoes.

    Cauliflower Potato And Feta Borek

    Ingredients

    • 350 g red-skinned or other all-purpose potatoes, peeled and cut into 2.5 cm pieces
    • 2½ tablespoons extra virgin olive oil
    • 400 g cauliflower, trimmed and cut into 1 cm pieces
    • 2 garlic cloves, finely chopped
    • ½ teaspoon ground allspice

    Directions

    Cook the potato in boiling, salted water for 8 minutes or until tender. Drain well.

    Meanwhile, heat the oil in a saucepan over medium heat, add the cauliflower and garlic, then cover the pan and cook, stirring occasionally, for 15 minutes or until the cauliflower is very tender. If it threatens to stick, add 12 tablespoons of water. Remove from the heat, add the potato then, using a potato masher, mash together to form a coarse purée. Cool slightly.

    Stir the allspice, feta and herbs into the cauliflower mixture, then season to taste and stir in the egg.

    Preheat the oven to 180°C and line a large baking tray with parchment paper.

    Lay the filo sheets on the bench and cover with a damp dish towel to prevent drying out. Place 1 sheet of pastry on a board and brush it lightly all over with melted butter. Place another sheet on top and brush with butter repeat with another sheet so you have a stack of three layers. Cut the pastry into quarters.

    Stir the egg yolk in a bowl with 1 tablespoon water. Brush over the top of each borek, then sprinkle lightly with nigella seeds. Bake for 2025 minutes or until golden and crisp.

    In recent years, sweet potatoes have been popularized as a healthier alternative to traditional white potatoes. Restaurants offer sweet potato fries and baked sweet potato dishes for health-conscious eaters. Does that mean sweet potatoes are lower in carbs?

    The answer is no. In fact, the macronutrient breakdown and the carbs between two potato rivals are very similar.
