A good pork chop doesnt require much in the way of seasoning so Ive kept things super simple in this recipe. It doesnt get much easier than this!

Baked Pork Chops are incredible simple to make. You will have better results if you purchase pork chops that have been cut about 1-inch thick. This will help prevent your meat from drying out. Theres nothing worse than a dry pork chop! Any thinner than 1 inch and you will most likely end up with dry, flavorless meat.

  • Beef stockâ we use it to deglaze the pan so that any of the delicious bits stuck on after searing the pork will be a part of the sauce.

    We prefer a dry rub + breadcrumb seasoning instead of a sauce or marinade for these chops because this is what gives your oven baked pork chops a crispy outside after baking.

    Remove the pork chops from the brine and pat the pork chops dry with a paper towel.

    Sprinkle half the mixture over the pork chops, flip and pour the remaining mixture over the other side of the pork chops. Be sure to pat the dry rub into the pork chops.

    This recipe uses 3/4 thick boneless chops, if your chops are thicker or thinner, the time will need to be adjusted.

    The brine keeps these tender and adds flavor. If you skip the brine you will need to add salt to the rub.

    Do not overcook! Use a meat thermometer to ensure the pork reaches the right temperature without overcooking.

    Pork should reach 145°F, just like pork tenderloin, its ok if the chops are a little bit pink in the middle.

    Tip: Choose pork chops uniform in size and thickness so they all cook at the same rate.

    How To Cook Pork Chops In The Oven

    • Make pork chop marinade. Find the pork chop marinade recipe here and marinate for up to 12 hours. Take the chops out of the fridge 30 minutes before cooking.
    • Sear. Preheat a cast iron grill pan over medium-high heat. Melt butter, then add pork chops in a single layer. Sear, without moving, until browned with grill marks. Flip and sear the other side.

    FYI: The outside may look done at this point, but at just a couple minutes per side, they are not. The oven in the next step will finish cooking the pork chops.

    • Roast. Transfer the pan to the oven and bake until the pork chops are done .
    • Rest. Remove pork chops from the oven and transfer to a plate. Rest for 3-5 minutes.

    What I love most about this recipe is that it requires simple ingredients, yet its so flavourful. You need:

    • Good quality butter if possible organic or grass-fed or ghee
    • Garlic fresh is always best!
    • Fresh thyme again, I highly suggest fresh thyme
    • Salt and ground black pepper
    • Pork chops I recommend purchasing pork that has no antibiotics or added hormones. ButcherBox has some great pork options as they source their pork from cage-free farms. If you are picking pork chops up at the stores, try to pick an evenly thick cut so you dont end up with overcooked tips.

This is why I like to start the chops on the stovetop, where they get a good sear, and then transfer them to the oven to finish cooking. The gentle heat of the oven helps us control the rate of cooking a little better and also prevents the outside from getting tough and dry before the middle has finished cooking.

    You can also make this whole process of cooking pork chops easier by using just one pan. Heat up the skillet in the oven while you get the rest of the meal prepped, then transfer it carefully! to a stovetop burner to sear the pork chops. Once the chops are golden on the underside, you flip them and transfer the skillet back to the oven. The residual heat from the skillet will sear the other side of the pork chops while the heat of the oven cooks them through.
