The Difference Between Ragu And Bolognese

Ragu depending on where you are in the world is a meat-based sauce usually consisting of finely chopped vegetables, ground meat and cooked in a liquid such as wine, tomatoes or stock.

There are hundreds of different types of ragu all containing different meats or vegetables like our Venetian Duck Ragu and our Sausage Ragu which is super easy!

Bolognese on the other hand actually means something originating from Bologna, Emilia Romagna and their classic ragu alla bolognese has been a little lost in translation over the years.

Its very similar to this one although is often made with white wine and sometimes milk which is thought to tenderise the meat.

Its also traditionally served with tagliatelle pasta and never spaghetti which is why youll hear Italians say that Spaghetti Bolognese doesnt exist.

How Long To Bake Spaghetti

Since the pasta and the sauce are warm when I put this dish together, it usually takes about 25 minutes or so to bake in the oven. If you prep it ahead of time and refrigerate, itll take a bit longer. Remove it from the fridge about 30 minutes before baking and bake about 35 minutes or until hot in the centre.

Anything Special You Need To Know

*I used a blade roast for this, but you can mix it up. I use whatever looks good to me at the time. Chuck roast works, and short ribs are fantastic. I like to use something with some fat because fat = flavour. Read this for more info on choosing your beef.

*Use whatever pasta shape you like. I like long shapes like Tagliatelle, Linguine or even Pappardelle, but honestly, any shape works.

*Dont get scaredabout the cinnamon and nutmeg in the sauce! For years I tried to figure out what made the meat sauce so good in old-school Italian restaurants and Im telling you, this is it. Try it. Be brave. Youll see.

If you either dont have time or dont feel like making spaghetti sauce from scratch, youll want to pull out the old reliable jar spaghetti sauce for your dinner. Jar spaghetti sauce is very good. It has already been cooked and simmered with delicious ingredients. It is made in different varieties too! Some spaghetti sauces come in garlic flavor, some basil flavored. Quick And Hearty Ground Beef Ragu

1 tablespoon extra virgin olive oil
2 carrots, peeled and finely chopped
2 celery ribs, finely chopped
1/2 large sweet onion, finely chopped
1 shallot, minced
1/2 cup roasted red pepper, chopped
32 ounces beef broth

Steps:

  • In a large stockpot or dutch oven over medium heat, saute the carrots, celery, onion and shallot for 4-5 minutes until softened. Add the minced garlic and saute for one minute longer.
  • Turn heat to medium high. Move vegetables to side of pot and add ground beef in batches and brown. When all ground beef has been added to pot and browned, add Italian seasoning, crushed red pepper, salt, and black pepper. Thoroughly combine meat, vegetables and seasonings.
  • Add crushed tomatoes, tomato paste and roasted red peppers. Pour some of broth into cans to clean out remaining tomatoes into pot. Pour remaining broth into pot and thoroughly combine with all other ingredients. Add more black pepper or crushed red pepper if you like it hot and spicy.
  • Reduce heat to low and simmer until sauce has reduced to half or two thirds of original volume.
  • Serve over your favorite pasta and top with grated cheese if you like.

I wondered this myself when trying to figure out what to call this recipe other than Sauce. In my house we just know what Sauce is because there is no other sauce we care about.

Both sauces are made with meat but the difference between the difference is really in the ratio of meat to tomatoes and sometimes the meat used itself. Ragu can also be made with more vegetables than what I have used in this recipe. Many people like to add finely chopped celery, carrots and or mushrooms. I do not. If you would like to do this cut back on the meat a tiny bit and sweat the added vegetables till soft along with the onions and garlic.

Pasta: To get started youll want to boil up some salted water in a large pot.

Use your favorite packaged brand of spaghetti and cook it for one minute less than it says to in the instructions. While the pasta boils you can move on to the next step!

Note: If you are all out of spaghetti noodles then macaroni, rigatoni, ziti and other types of pasta would work just as well!

Spaghetti Sauce: Start making the sauce by cooking the ground beef in a large skillet until it has browned, breaking it up into smaller pieces as it cooks. Drain the fat when it has cooked through.

Pour your favorite brand of spaghetti sauce in with the meat and simmer on low for a few minutes while the pasta cooks and you move on to the next step.

Cheese: Now we can get down to the good stuff! Were going for a creamy, decadent dish so well need lots of dairy.

Were mixing together cream cheese, cottage cheese, and sour cream to create this insanely decadent filling.

Stir garlic, salt, and pepper in to this mixture and then give it a taste. Its divine.

Layer: Place half of the cooked spaghetti in a 9×13 baking dish, top with half of the cream cheese mixture and half of the sauce. Repeat the layers and sprinkle on some cheddar cheese.

Bake: Pop this in a hot oven and bake for 30 minutes.

Youll want to let this set for 5 minutes or so before serving.

    Real Talk: How Close Is This To Ragu

    Despite hours of simmering, I wasnt able to fully duplicate that long-cooked, slightly metallic tomato paste flavor you get with Ragu. Doubling or even tripling the tomato paste would get the sauce closer, if thats important to you. But then at a certain point, you should just buy Ragu, know what I mean?

    So, this is not a full-on copycat recipe. However, I did manage to create a thick, slightly sweet sauce with very little noticeable acidity that plays in the same category as a commercial pasta sauce. After fiddling and simmering and more fiddling and more simmering, I A/B tested the results of this sauce and the store bought Ragu.

    To my palette, the homemade sauce is fresher, slightly less viscous , and has a bit more texture than Ragu. My kids, aged 13 and 6, both declared that they preferred the homemade sauce. They praised the texture as better than Ragu and liked the sweetness of the sauce.

    I think that if you, your kids, or a family member prefer a mild, thick, store bought sauce, this is a great homemade alternative and possibly a way to start transitioning to more homemade options.

    How Do You Thicken Spaghetti Sauce

    The best way to add some bulk to a watery pasta sauce is to add about 1/8-1/4 cup of starchy pasta water. If youve already strained the pasta, you can mix together a bit of cornstarch and water to create a slurry and add it to the sauce instead.

    After traveling for most of the month of May and getting through the dreaded end of the month deadline at work, I am finally home and able to relax. The best part about being home is that I can get to the kitchen and begin cooking more. I really missed cooking last month and Im definitely sure Tai missed it even more than me!
