These arent like your standard potato salad recipes. Theyre, dare I say, BETTER!

    • Potatoes: To you cube your potatoes, peel them, slice the potato in half lengthwise, then slice each half lengthwise three more times. You will have eight long strips of potato. Line up the ends, then quickly chop widthwise from one end of the strip to the next. Easy peasy!
    • Ranch: Believe it or not, the original ranch seasoning was invented by a plumber! Check out Thrillists article on ranch for more fun facts, including the deets on how many varieties of ranch exist today.
    • Coating: It can be tricky to get a uniform covering of seasoning in any dish. Try this trick if you are struggling with the russets: pour your cubed potatoes into a large bag, sprinkle in the seasoning, close the bag, and shake until well coated!

That is really good news because I am always trying new dishes.

I used to cook two meals some nights and while I still have to do that occasionally, it is becoming fewer and far between.

What Kind Of Potatoes Are Best For Roasting

In this Ranch Roasted Potatoes recipe, we use red potatoes. They are great for roasting because they are thin-skinned, medium waxy and have a delicious earthy flavor. You can usually purchase them in bags at the grocery store, making them easy to shop for.

But, these arent the only potatoes that are great for roasting. Any of the following would be great substitutes in this recipe:

    • Yukon Gold potatoes – these are a great option because they arent too starchy or too waxy. Plus, they have an amazing creamy texture.
    • Fingerling potatoes – fingerling potatoes are nice and small. They are typically small enough that you may not even need to cut them.
    • Russet potatoes – these will need to be cut into 1-1 ½ cubes, but otherwise you can make the recipe exactly the same. We prefer to keep the skin on, even though Russet potatoes have a thicker skin.
