EIGHTH STEP: Scoop chilled cookie dough with a medium cookie scoop and space dough 1 ½ apart on prepared cookie sheets.
NINTH STEP: Press dough down just slightly on the top. The cookies will not spread or change shape too much during cooking, but pressing them down a bit will help them cook evenly and form a nice shape.
TENTH STEP: Bake for about 10 minutes until cookies are set in the center.
ELEVENTH STEP: Cool for 2-3 minutes on a cookie sheet and then remove to a cooling rack to cool.

- Dutch process cocoa powder. Dark cocoa powder is another key to the rich, irresistible flavor .

- Old Fashioned rolled oats. Use Old Fashioned whole oats for the best texture, not quick cooking oats.

- Milk and vanilla: The milk makes just the right liquid to solid ratio, which is important here.

Before you start making this chocolate no bake recipe, place the oatmeal, peanut butter, and vanilla all in a medium-sized bowl.
You dont have to mix it or stir it- just put it all in the bowl and set aside.
This simple trick will save you time and make the cookie-making process simpler.

Get out a couple hot pads and oven mitts. The pan will be HOT when you move it over to the counter. If you have a couple hot pads already sitting there next to the waxed paper, you will avoid burning your counter top.

Then in a 2.5 3 quart saucepan combine sugar, butter, cocoa powder and milk.
Set saucepan over medium heat and begin whisking. Cook and whisk frequently until it reaches a boil, then once it reaches a full boil stop stirring and let it boil for 1 minute.
Remove the mixture from heat then immediately add in vanilla, peanut butter and oatmeal. And stir to blend well.
Drop mixture onto prepared parchment dropping 2 Tbsp at a time .
Let cookies set then enjoy! If you want to speed up setting transfer to refrigerator. Store the cookies at room temp in an airtight container.

Yes. I prefer a mix of both quick oats and old fashioned rolled oats in this recipe for chocolate oatmeal cookies. The rolled oats provide additional texture, but if you prefer, you could use only quick oats.
