Cheddar Chicken & Broccoli Rice | Simple Dinner Recipe from Knorr®

If you already have cooked chicken on hand , congratulations, making this cheesy chicken broccoli and rice casserole recipe is pretty much a dump, stir, and bake dream for you! If not, NO WORRIES just grab a skillet and brown about 1-lb. of cubed boneless skinless chicken breasts in approximately 2 tablespoons of olive on your stovetop.

Once youve got your chicken situation ironed out, you can proceed with the steps below.

1| Pop a 2-cup liquid measuring cup of water into the microwave and bring it to boiling. Then in a 9×13 ceramic baking dish, combine the Knorr Chicken Broccoli Rice, boiling water, and 1/4 cup of the Parmesan cheese. Stir in the thawed broccoli, cubed chicken, and diced onion. Cover tightly with aluminum foil.

2| Bake covered for 25 minutes. Carefully remove the aluminum foil , and sprinkle the casserole with the remaining Parmesan cheese. Top with the mozzarella cheese.

3| Bake for an additional 10 minutes or until the cheese is melted. If you want the mozzarella cheese to be a golden color , pop the casserole under the broiler on high for about 2 minutes or until bubbly and browned.

1 pound boneless, skinless chicken thighs, cut into chunks
2 tablespoons olive oil
1 medium onion, sliced into 1/2-inch thick pieces
1 clove garlic, finely chopped
¼ cup sliced carrots
3 medium zucchini and/or yellow squash, cut into thirds
5 green onions, sliced into 2-inch pieces
¼ cup cherry tomatoes
1 package Knorr® Rice Sides – Chicken flavor, prepared according to package directions


  • Preheat oven to 400 degrees F.
  • Season chicken, if desired, with salt and pepper. Heat oil in deep, large skillet over medium-high heat and brown chicken. Add onion and garlic and cook, stirring occasionally, until onion is almost tender, about 4 minutes. Stir in carrots, zucchini and green onion and cook, stirring occasionally, an additional 5 minutes.
  • Combine boiling water with Knorr® Rice Sides – Chicken flavor in 13 x 9-inch baking dish. Stir in vegetables and chicken. Cover tightly with aluminum foil.
  • Bake 30 minutes or until chicken is thoroughly cooked and rice is tender.

I love how easily this cheesy chicken, broccoli, & rice casserole recipe comes together because my husband hates when I have to dirty a dozen dishes just to make a meal. With this one, I dont even use a bowl! I just add all the ingredients to a 2-quart dish and mix it right up.

You could probably use a smaller dish, but I wouldnt recommend it as the mixing might get messy, plus the topping works great when it is spread out over more area.

The first time I made this recipe we used cereal broken into little bits for a crumb topping . This adds a little sweet punch to this savory dish. We have made it again using french onions instead and I think I prefer it with the onions, but you can use any simple crumb topping that suits your tastes, or none at all.

  • 3 chicken breasts, cooked & diced
  • 1 cup rice
  • 1 can cream of chicken
  • 1 cup cheddar cheese, shredded
  • 2 cups broccoli, diced
  • 1 ½ cups chicken broth
  • Extra cheddar cheese for topping


  • Heat oven to 375°F
  • In a casserole dish, combine rice, pepper, onion powder, cream of chicken, cheese, broccoli, and chicken stock, and diced chicken. Mix until everything is combined.
  • Cover with foil and bake for 50 minutes.
  • Take off cover and top with more cheese. Bake uncovered for another 5 minutes or until cheese is melted.

    This recipe has just a few simple steps. It is so easy, one of my kids could make it. Plus, using the Knorr® Side Dishes makes this dinner so fast!

  • Sauté the chicken in a little olive oil and season with salt and pepper.
  • Add in some garlic and cook for 30 seconds.
  • Stir in the Knorr® Chicken Broccoli Rice Side Dish and chicken stock and bring to a boil.
  • Add the broccoli and reduce to a simmer, cooking covered for 7 minutes.
  • Turn off the heat and let sit for 2 minutes.

    This recipe is so easy to make. Just cover with foil and bake! This is really nice to make before going to church or even put in a slow cooker before work. Yum!

    1 cup uncooked white rice
    1 can condensed cream of chicken soup
    1 cups water
    1 package dry onion soup mix
    4 skinless, boneless chicken breast halves


    • Preheat oven to 350 degrees F .
    • Spread rice in the bottom of a 9×13 inch baking dish. Rinse chicken and pat dry arrange chicken pieces on top of rice.
    • Mix soup and water together and pour over chicken and rice. Sprinkle dry onion soup mix on top. Cover and seal TIGHTLY with foil. Bake in the preheated oven for 1 to 1 1/2 hours. Enjoy!

    The original recipe was one Id had in my file for more than a few years. It was very tasty, but it included canned mushroom soup and Velveeta. Um. No thanks.

    Chicken Cheddar Broccoli Rice Skillet

    • Cooking Time

    • 1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
    • 1 medium onion, chopped
    • 1 cup regular rice or converted rice
    • 2 cups water
    • 1 tub Knorr® Homestyle Stock – Reduced Sodium Chicken
    • 4 cups small broccoli florets
    • 1 cup low fat cheddar cheese, divided
    • 1/2 cup lowfat sour cream
    • 1Melt 1 Tbsp. margarine in 12-inch nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is thoroughly cooked, about 6 minutes. Remove chicken from skillet and set aside.
    • 2Melt remaining 1 Tbsp. margarine in same skillet and cook onion, stirring frequently, until tender, about 3 minutes. Stir in rice and cook until coated, about 1 minute. Add water and Knorr® Homestyle Stock – Reduced Sodium Chicken. Bring to a boil over high heat. Reduce heat to low and cook covered, 15 minutes. Stir in broccoli, and cook, stirring occasionally, until broccoli is crisp-tender and rice is tender, about 5 minutes.
    • 3Stir in chicken, 1/2 cup cheese and sour cream. Sprinkle with remaining cheese, cover and let stand until cheese melts, about 2 minutes.
